Sinterklaas is weer in het land!

Sinterklaas is weer in het land en dus vieren de speculaaskruiden hoogtij in de keuken. Gisteren een bakdag gehad met als resultaat gevulde speculaas, speculaasbrokken met amandelen, kruidnootjes én om eens wat anders te maken choco-kruidnootjes.

In de winkel zijn er heel veel verschillende smaken kruidnootjes tegenwoordig. Die met chocolade omhulde kennen we al langer, maar die vind onze dochter niet lekker. Vreemd want ze houdt toch van chocolade. 

Ik dacht dan probeer we eens wat anders en heb er cacao én chocoladenibs aan toegevoegd. Hiermee voorkom je dat het te zoet wordt, terwijl je toch de chocoladesmaak hebt. Nog een beetje sinaasappelrasp om het wat op te pimpen en zo heb je eens wat anders. Iedereen, ook dochterlief vond ze lekker, dus die zijn zo weg.
De kunst is om ze precies zo te bakken dat ze niet keihard en ook niet zacht zijn van binnen, kruidnootjes horen knapperig. Bak ze!

Choco-sinaasappel-kruidnoten
(ongeveer 100+ stuks)
(recept PRINTEN
220 g (Zeeuwse) bloem
7 g bakpoeder
3 g cacaopoeder
125 g bruine basterdsuiker
2 tl sinaasappelrasp
4 tl speculaaskruiden
3 el cacaonibs (dit zijn rauwe chocoladestukjes)
snuf zout
120 g boter in blokjes
3-5 el melk

Meng alle ingrediënten behalve de melk in een kom doorelkaar. Wrijf met je vingers de boter door de ingrediënten tot er kruimels ontstaan. Voeg dan, een eetlepel per keer, wat melk toe. Kneed het erdoor en voeg genoeg melk toe om het een soepel een kneedbaar deeg te maken, maar maak het vooral niet te nat. Kneed niet té lang, anders krijg je geen brosse kruidnoten.

Verpak goed in plastic en leg het deeg min. 30 minuten in de koelkast.

Verwarm de oven voor op 170ºC.

Haal het deeg uit de koelkast. Soms kan er wat vocht zichtbaar zijn, doordat suiker vocht aantrekt en door de sinaasappelrasp in het deeg. Dep dat gewoon wel, het kan verder geen kwaad.
Bekleed een bakplaat met bakpapier en draai kleine balletjes van ongeveer hetzelfde formaat van het deeg, gebruik eventueel een klein beetje bloem bij het draaien. Leg de balletjes op het bakpapier op een paar centimeter afstand van elkaar.

Bak de kruidnootjes ongeveer 18-20 minuten, dit verschilt per oven.
Pak eventueel een nootje van de plaat, breek hem door en kijk of de binnenkant al gaar is. Als ze gaar zijn kan je dat zien als niet donkerder of voelt klef in het midden. Omdat deze nootjes zo donker zijn, kan je niet op het uiterlijk van de nootjes afgaan.
Leg ze op een rooster om volledig af te koelen, ze worden knapperiger als ze koud zijn.

Maak de rest van de balletjes terwijl de eerste plaat bakt en herhaal. Als je meerdere platen tegelijk in je oven kan doen kan dat natuurlijk ook.

Last Abigial Dodge recipe for the ABC

Can you believe how fast this year went by?! When I joined the Avid Bakers Challenge in January the end seemed far of, but this month will be the last time we bake as a group from "The weekend Baker" by Abigail Dodge. I joined because I had the book on the shelve for some time, but had hardly baked from it. For some reason it just didn't appeal to me. And I'm glad I've start baking from it, baking things I normally wouldn't pick myself and getting used to the book at the same time. There are lovely recipes in the book and I sure will keep baking from it now!

This month ("Cookie season") there are Ginger Crackles to be baked. I already baked them last month, because I needed part of them for my pumpkin tart base. I used golden syrup instead of the light molasses, and baked them  longer than in the recipe, but didn't have to change anything else. The dough was easy to make, the cookies easy to shape and came out just right. I got 48 cookies out of the dough (instead of 3 dozen) and they really are delicious. Crispy outside and ever so slightly chewy when you come to the core of the cookie.
Our boy was horrified when he saw me taking even more cookies out of the jar to make the base for the pumpkin tart (which he couldn't eat because of the cream cheese), he just loved these cookies very much and kept asking if I could make them again. So a winner!

Happy New Year

Here in the Netherlands we traditionally bake and eat "Oliebollen" and Apple fritters at the end of the year. And even if it's really my husbands' job to deep fry all those treats (cause I hate it), I had to do it this year. The frying man was ill for a few days, then had to go back to work again. So I took courage and fried both oliebollen with raisins,apple and currants and plain ones one day, standing under the carport in a freezing wind and lots of rain. The second day I made the apple fritters ánd these wonderful Italian balls, that are more like cookies, while it was dry and the sun was out!

So I leave you with these wonderful little italian lemon balls to enjoy and wish you all a save and joyful switch into 2012!

Castagnole alla romana
(makes about 30 small fried lemon balls)
(PRINT recipe)
100 g butter, unsalted
400 g AP flour
50 g fine caster sugar
4 large eggs
4 TBsp rum
pinch of salt
grated zest of 1 large lemon
sunflower oil for frying
icing sugar for serving

Melt the butter in a small sauce pan, pour into a large mixing bowl and let it cool. Add the flour, sugar, eggs, rum, salt and zest and stir it together until well mixed. Let rest for 5 minutes.

Shape into chestnut sized balls. Roll between your hands with some flour and place them on plate dusted with flour.
Fry in the hot oil (180ºC) until golden. They puff up a little. Drain on kitchen paper and dust with icing sugar before serving. They are good luke warm, but also cold.

Prettige jaarwisseling

En we zijn alweer aan het eind van dit jaar gekomen. Terugblikken? Nah, we kijken maar vooruit en hopen dat het dit jaar goed blijft gaan en op sommige gebieden beter zal gaan. Dit jaar hebben we weer zelf oliebollen gebakken, vorig jaar viel dat in het water doordat ik me niet kon bewegen met een zere rug. Dit jaar heb ik zowaar zelf alles gebakken, omdat de bollenbakker hier eerst ziek en toen niet meer vrij was. In twee sessies, één dag onder de carport met harde wind en stromende regen werden de oliebollen naturel én de bollen met rozijnen, krenten en appelstukjes gebakken. De tweede dag, met stralende zon, heb ik de appelbeignets/flappen gebakken én deze kleine citroenbolletjes uit de regio Lazio. Ze zijn fris en te eten als koekjes.
En hiermee wens ik iedereen een hele fijne jaarwisseling en een fantastisch jaar toe vol gezondheid, liefde en begrip!

Castagnole alla romana
(ongeveer 30 kleine citroenballetjes)
(recept PRINTEN)
100 g boter, ongezouten
400 g bloem
50 g fijne kristalsuiker
4 eieren
4 el rum
snuf zout
geraspte schil van 1 grote citroen

zonnebloemolie (voor het frituren)
poedersuiker (voor serveren)

Smelt de boter in een klein pannetje, giet het in een mengkom en laat het even afkoelen.
Voeg dan bloem, suiker, eieren, rum, zout en rasp toe en roer het door tot het goed gemengd is. Laat het 5 minuten staan.


Rol er kleine bolletjes van ter grootte van een walnoot/kastanje. Bebloem hiervoor je handen en leg de balletjes op een bord met bloem, zodat het niet blijft plakken.

Bak de balletjes in hete olie (180ºC) tot ze goudbruin zijn. Ze worden iets groter, maar niet veel. Laat ze goed uitlekken op keukenpapier en bestuif ze met poedersuiker voor het serveren. Ze zijn lekker als ze nog lauwwarm zijn, maar ook prima koud.

Autumn brownies

engels.amer vlag High time to have a pumpkin recipe here. Can't do autumn without pumpkin. It's not as popular here in the Netherlands as in let us say in the States. We don't have Thanksgiving here, so no pumpkin pies. I still have to make my first pumpkin pie, I will someday, but not this time. This time it's brownie-time.

Pumpkin doesn't really have much taste of it's own I think, it really needs some kind of spicing up in dishes in which they are the main ingredient, like soups or that pumpkin pie I was talking about. But when you use pumpkin in bread or in these brownies, I don't think it's about the pumpkin flavor -if any-, but more about making it moist and soft. And that works really well in a brownie that should be moist and dense. We liked the addition of the apricots a lot, but if you don't have dried apricots, you can just use the jam on its own too.

Chocolate-Pumpkin Brownies
(24 small squares)

Chocolate-pumpkin brownies with apricot surprise (p.175)

140 g dark chocolate
115 g unsalted butter
300 g sugar
3 eggs
150-180 g unsweetened pumpkin puree
140 g AP flour
½ tsp salt
1 tsp ground ginger
150 g chopped peacans
125 g apricot jam
7 dried (ready-to-eat) apricots, chopped


Preheat the oven to 350°F/180°C. Grease a 9ʺ x 13ʺ baking pan.

Melt butter and chocolate in a pan over low heat. Remove when almost melted and stir in the sugar.
Beat in the egg and the pumpkin. When smooth add flour, salt and ginger. Stir in the pecans.

Scrape half the batter in the prepared baking pan and place in the freezer for half an hour. ismix the chopped apricots with the jam and spread them over the (freezing cold) batter, leaving 1/2-inch around the edge. Spread the rest of the batter on top and bake for 50 inutes until a skewer comes out clean.
Cool completely on a rack before cutting.

Vlag nl klein Herfst Brownies

Het is hoog tijd dat er een recept met pompoen langs komt hier. Herfst zonder pompoen dat kan natuurlijk niet. Het is hier niet zo populair als in bijvoorbeeldd Amerika. We vieren hier natuurlijk ook geen Thanksgiving waar de pompoentaart toch echt bij hoort. Ik heb zelfs nog nooit een pompoentaart gemaakt, dat moet er toch ook nog eens van komen. Maar deze keer zijn het brownies.

Eigenlijk heeft pompoen niet veel smaak van zichzelf, in gerechten waar het het hoofdingrediënt is, moet je de smaak vaak wat oppeppen met pittige toevoegingen. Maar als je pompoen in brood of bijvoorbeeld deze brownies verwerkt, gaat het me niet zo zeer om de smaak die de pompoen -voor zover die er al is-, maar om het zacht en sappig te maken. En dat is natuurlijk perfect als het om brownies gaat die een beetje klef horen te zijn. Wij vonden hier de toevoeging van de abrikozenstukjes erg geslaagd, maar als je ze niet hebt kan je ook alleen de jam gebruiken.


Chocolade-pompoen brownies

(24 kleine vierkantjes)
Chocolade pompoen brownies
(recept PRINTEN)

140 g pure chocolade
115 g ongezouten boter
300 g suiker
3 eieren
150-180 g pompoenpuree (ongezoet)
140 g bloem
½ tl zout
1 tsp gemberpoeder
150 g pecannoten, gehakt
125 g abrikozenjam
7 gedroogde abrikozen, gehakt

Verwarm de oven voor op 180°C. Vet een bakblik in van ongeveer 23 x 33 cm.

Smelt de boter en chocolade in een pan op laag vuur. Haal de pan eraf als het bijna gesmolten is en roer de suiker erdoor. Klop het ei en de pompoenpuree erdoor tot het glad is.
Voeg dan de bloem, zout en gemberpoeder erdoor. Tot slot de pecannoten.

Spreid de helft van het beslag uit in het bakblik en zet dit een half uur in de vriezer. Meng de abrikozenjam met de gehakte abrikozen en strijk dit over de koude laag beslag, laat de buitenrand vrij. Verdeel de rest van het beslag erover en strijk de bovenkant glad.
Bak de brownies ongeveer 50 minuten en laat ze volledig afkoelen voor je ze gaat snijden.

Cookie-monster

The theme of this month's Click! was too good to let it pass by. It has to do with baking (and you know I can't resist that)... all about Cookies. I shot so many pictures of cookies these last years, it took a long time to find the right one.


My all-time favorite must be this one:

As a picture it's not very good, I shot it with my very first, very cheap, very limited digital camera in 2005. The lighting is all wrong and it's much too white, but it was such a funny moment. I was trying to get a good shot of the cookies, when our little boy popped up from underneath the other side of the table with his hands stretched saying: "quick mom, or they'll all be gone!" (well he said it in dutch obviously!). Cheeky little cookie-monster!

But for the event I choose another photo that is just totally out of season, but never mind. I wanted to creat a "let it snow"-scene, but they kept falling down and breaking. Still this one gives sort of the idea :D.

I shot it last december to post about them, but then I baked so many things, I just didn't have the time. So they're on hold... for next december. A sneak preview so to speak. When I was young I was a girl scout for (just) 1 year... I guess I've been there long enough to still be prepared.
If I remember in december I made them, I'll post the recipe, if I still know where it is (lots of "íf"s here). For the time being you have to be satisfied with the picture alone.

and... even more Christmas cookies

Every year our kids bake Christmas cookies and decorate them. It's an annual event that they really look forward to. Especially the decorating part! We don't frown upon foodcolorings or amounts of sugar this time of year, they can just go ahead. They asked me to put some of the results here on my blog and here they are: We spend one whole afternoon decorating, every year I wonder how many cookies we are making in the first place, they seem endless. But they assured me that we had as many last year.
This year I used the recipe of Basic Sugar Cookies by Martha Stewart and that worked really well. For the icing I just used icing sugar -lots of it-, food colorings (powdered saffron for the yellow) and all the sprinkles we could find. We also have more cookies cutters each year, all packed away for next year! Happy holidays!

More Christmas cookies

On the International blogs I saw lots of people baking cookies selected from the recipe-collection from gourmet.com. There were a lot of cookies that sounded very nice. I picked the recipe from my birthyear 1964 and that was the Fig cookies recipe. Nothing too difficult and as I love figs, I tried out these. Made just a few minor changes, like pressing them flat, because the first bake they just stayed in their 'finger'-shape and they were good but more 'chewy'. I thought the flattened cookies were more crunchy and quite addictive.

There are a lot more great cookies recipes on the gourmetsite, but for more inspiration check out the collection of christmas cookies at Susan's blog "Food Blogga" where for the second year on a row, lots of cookies are entered. Round up is to be seen in Part 1 and Part 2. If I'm quick I can enter these cookies too.

Fig Cookies
(± 45 cookies)
(PRINT recipe)
230 g (1 cup) butter
50 g (1/4 cup) sugar
100 g (1 cup) ground pecans
1 tsp vanilla extract
280 g (2 cups) AP flour
± 230 g (1 cup) ground dried figs
pinch of salt
50 g icing sugar

Preheat the oven to 300ºF (150ºC).

Cream the butter and sugar until fluffy. Stir in the ground pecans and vanilla. Stir in the flour, icing sugar, salt and ground figs. Form into small finger shapes and flatten them (for crispy cookies) or leave them alone (for more chewy cookies). Place on baking parchment and bake in a preheated oven for about 30-40 minutes. They shouldn''t brown.

Nog meer Kerstkoekjes

Het is echt baktijd in deze maand (heerlijk!). Op Internationale blogs worden er veel koekjes gebakken van de recepten-collectie van gourmet.com. 60 recepten in totaal door de haren heen, echt een goed tip om wat inspiratie op te doen als je een koekjesrecept zoekt. Ik heb het recept gekozen van mijn geboortejaar 1964, nl. vijgen koekjes. Met een paar kleine veranderingen, zoals ze plat te drukken om krokantere koekjes te krijgen bijvoorbeeld, waren het echt verslavend lekkere koekjes. En voor nog meer kerstkoekjes- inspiratie kun je ook eens kijken op het blog van Susan "Food Blogga" die voor de tweede keer het "christmas cookie' event organiseert. Er zijn al heel wat inzendingen om bij te watertanden, zie hier Part 1 en Part 2. Als ik op schiet kan ik deze ook nog insturen....

Vijgen Koekjes
(± 45 stuks)
(recept PRINTEN)
230 g boter
50 g suiker
100 g gemalen pecannoten
1 tl vanille extract
280 g bloem (als je hebt gebruik dan 140 g zeeuwse bloem en 140 g gewone bloem)
± 230 g gemalen gedroogde vijgen
snuf zout
50 g poedersuiker

Verwarm de oven voor op 150ºC.

Roer de boter en de suiker luchtig. Roer de poedersuiker, zout, meel en gemalen vijgen erdoor. Vorm kleine rolletjes (vinger dikte) en druk ze plat (als je de koekjes krokant wilt) of laat ze zo (als je liever een wat zachter koekje hebt). Leg ze op bakpapier op een bakplaat en bak ze ongeveer 30-40 minuten in een voorverwarmde oven. Ze moeten niet niet bruin worden.

Christmas cookies

Well there are lots of cookies that qualify as a Christmas cookie, but if it has some mincemeat in them, they must be Chrismassy! Of course I have a truckload of mincemeat in my cupboard with all
my experimenting, so it has to be used. Yesterday afternoon I made some lovely mincepies again. I wrap them up and give them away here and there with our best wishes for the holidays. I used my favorite choice of mincemeat in these from organic.foodee.com in combination with wonderful orange flavored pastry. I always am astound how easy it is and what a lookers they are!

Then I decided to make some cookies with the mincemeat too. I found a recipe
here, but (as usual) I adapted a little here and there to make it a little less sweet. They are soft cookies, personally I like my cookies crunchy, but once in while soft is good too. And these were.. soft and good that is.

Mincemeat cookies
(± 35 soft cookies)
(PRINT recipe)
55 g butter, softened
100 g dark brown sugar
2 eggs
200 g mincemeat
210 g AP flour
1 1/2 tsp baking soda
3/4 tsp ground cinnamon
1/2 tsp nutmeg (freshly grated)
pinch of salt
170 g small dark bitter chocolate chips
50 g almond shavings

Preheat the oven to 350ºF (170ºC)

Cover 3 baking sheets with baking parchment.
Cream the butter and brown sugar in a bowl, stir in the eggs and mincemeat.

In another bowl mix flour, baking soda, spices and salt and add it to the butter/sugar mixture. Mix them together until just combined. Stir in the chips and the almond shavings and using a cookie scoop (25 ml) place the mixture on the baking parchment about 2" apart.

Bake for 20 minutes until firm, let them cool on wire racks. Stack them in a cookie jar and place some pieces of grease proof paper in between to prevent sticking,

Kerstkoekjes

Er zijn natuurlijk heel wat feestelijke koekjes die je als kerstkoekje kan presenteren, maar een koekje met mincemeat valt zeker in die categorie. Ik heb natuurlijk een
flinke voorraad mincemeat in de kast staan, en ik zal er dus ook wat mee moeten gaan doen. Gistermiddag heb ik weer een aantal heerlijke mincepies gemaakt. Ik pak ze mooi en en geef ze met de beste wensen aan diverse mensen. Ik gebruikt hier mijn favoriete mincemeat naar het recept van organic.foodee.com in combinatie met korstdeeg met sinaasappelrasp, ik ben iedere keer weer verbaasd dat het zo eenvoudig is en zo'n feestelijk resultaat geeft!

Daarna besloot ik nog wat koekjes met mincemeat te maken. Ik vond een
recept, maar heb wel een paar kleine veranderingen aangebracht, omdat het anders écht veel te zoet zou zijn. Het zijn zachte koekjes, persoonlijk heb ik over het algemeen liever krokante koekjes, maar zo af en toe valt een zacht ook prima in de smaak... en dat was deze keer zeker ook zo.

Mincemeat koekjes
(± 35 zachte koekjes)

(recept PRINTEN)
55 g zachte boter
100 g bruine basterdsuiker
2 eieren
200 g mincemeat
210 g bloem
1 1/2 tl baking soda
3/4 tl kaneel
1/2 tl nootmuskaat (vers geraspt)
snuf zout
170 g kleine pure chocoladedruppels (of gehakte pure chocolade)
50 g amandelschaafsel

Verwarm de oven voor op 170ºC en bedek 3 bakplaten met bakpapier.

Roer de boter romig met de suiker.

Meng daarna de eieren en de mincemeat erdoor. Voeg dan de bloem, baking soda, specerijen en zout tow en roer het erdoor.
Vouw de chocolade en het amandelschaafsel erdoor.

Schep met een ijslepel (van 25 ml) of m.b.v. 2 eetlepels het mengsel in hoopjes op het bakpapier. Plaats ze ruim5 cm uit elkaar. Bak de koekjes tot ze stevig zijn, ongeveer 20 minuten en laat ze op roosters afkoelen.

Ongelovigen

De kogel is door de kerk, het geheim verraden, de romantiek verdwenen. Hier in huis wonen alleen nog ongelovigen. Sinterklaas is doorzien, door de mand gevallen. Onze jongste is 8 1/2, dus het werd misschien wel tijd. De reactie was heel relaxed, "Ik dacht al vaker, hoe kan dat eigenlijk??" en nog belangrijker: "Maar hoe gaat het nou op pakjesavond, gaat dat nog wel gewoon door?? Ja?! o, gelukkig!". En verder maakte het hem niets uit!

Hoewel ik eerst opgelucht was dat hij het wist en er geen trauma's aan over zou houden... vind ik het nu maar saai eigenlijk. Het hele toneelspel is verpest, het net doen alsof voelt nogal dom, net als een schitterende goocheltruc die uitgelegd wordt op TV door een eng-gemaskerde man. Ontnuchtering: o zit dat zo! Geen verwondering meer, weg verbazing, magie verdwenen. Enige wat ons nog op de been houdt met wat Sinterklaas-sentiment is Dieuwertje Blok met het Sinterklaasjournaal, ik kijk er met twee kinderen naar en kunnen nog even doen alsof het écht is en wanneer het nou eindelijk zal lukken al de pieten te tellen. Moet absoluut blijven Dieuwertje met het Sinterklaasjournaal!!!

Andere jaren was ik al druk aan het 5-december bakken met
Speculaasjes, speculaasbrokken, marsepeinkoek en gevulde speculaas.
Dit jaar... eigenlijk geen zin, alleen een
gevulde speculaastaart gebakken met een recept van een ander blog. Al weer een paar jaar geleden had ik "Deense kruidnoten" gemaakt, met o.a. kardamom, die erg lekker waren. Ook makkelijk, je maakt een deegje, je laat de kinderen het rolwerk doen (zij ook weer lol), bakken en klaar. Dus vooruit nog net inspiratie voor wat kruidnootjes. Toen ik een poosje geleden deze cake maakte met chinees vijf-kruiden poeder, kreeg ik het idee dat dat ook wel lekker zou smaken in een kruidnootje. Weer eens even wat anders en zo heb ik kruidnootjes gemaakt met andere specerijen dan normaal. Er stond een doos met gekochte en deze 'kruidnootjes anders' op tafel, een paar uur later zater er alleen nog maar gekochte in, de rest was er zorgvuldig uit gegeten. Toch een teken van succes dacht ik zo.

'Kruidnootje anders'
(recept PRINTEN)
100 g zeeuwse bloem (heb je dat niet neem dan gewone bloem)
150 g bloem
½ tl bakpoeder
100 g bruine basterdsuiker
2 ½ tl chinees 5-kruiden poeder
½ tl kardamom
½ tl kaneel
½ tl gemalen anijszaad
¼ tl nootmuskaat
¾ tl pimentpoeder

snuf zout
120 g boter, koud in blokjes
2-4 el koud sinaasappelsap

Meng alle droge ingrediënten in een kom en wrijf de boter er door heen tot het kruimelig is (kan ook met de k-garde in de standmixer op de hoogste stand. Voeg dan zoveel sinaasappelsap toe tot het deeg net samenkomt. Druk het tot een bol of schijf, wikkel het in huishoudfolie en leg het een uur in de koelkast.

Neem een paar hulppieten en laat die kleine knikkers draaien. Voor het gemak, snijd ik vooraf het deeg in kleine blokjes. Leg ze op bakpapier op een bakplaat en bak ze op 160ºC ongeveer 30 minuten. Laat afkoelen op een rooster en strooien maar.....

Non-believers

The truth is out, the secret discovered, the magic is gone. We now have only non-believers left here in our house. Our own dutch Sinterklaas turned out to be a fraud in the end, all lies and make believe. Our youngest is 8 1/2 years old now, so it was supposed to happen at some point in time. Was it traumatic? No, he said: "Well I was wondering sometimes how these things could really happen" and most important : "so what is going to happen with "The night of Sinterklaas" will there be presents to unwrap???? No change there? Ok than it's fine by me".

At first there was a relieve that it didn't give any problems, no future psycho-analyses to be planned for him, but now... I think it's just boring. The whole make-believe thing is dead now, pretending just seems silly, like a great magic trick that some weird, ugly masked bozo reveils on TV. Lost are magic, astonishment and awe. The only thing that keeps us on the edge of this Sinterklaas-nostalgia is the Sinterklaas-News bulletin that's on TV every night (from the day he arrives in the Netherlands until the 5th of december) with anchorwoman Dieuwertje Blok. And I know you don't understand a word of what's said in that link, but believe me it's very realistic. So I watch it with both kids and pretend as much as possible, wondering when the "home-piet' will ever succeed in counting all the pieten (his helpers) Sinterklaas has.

In other years I was already busy baking Sinterklaas-related stuff like Speculaasjes, speculaasbrokken, marsepeinkoek and gevulde speculaas. This year.. No feeling like it really, just made an almond paste stuffed spiced pie (or something like that). Some years back I made "Deense kruidnoten" with kardamom, that were really good. And easy too, make a dough, let the kids do the rolling and just bake. So alright, I just have some fun in making these this year. When I made this tealoaf recently with chinese 5-spice powder, I had a hunch that this spice could work really well in the 'kruidnoten' for Sinterklaas. A bit different for a change. I had a box with (normal) shop-bought 'kruidnoten' and these spiced ones with a twist. A few hours (or was is shorter?) later there were only shop-bought ones left, the rest was painstakenly removed. I guess the proof is in the eating!

'Kruidnootjes' with a twist (PRINT recipe)
100 g pastry flour (or use AP flour)
150 g AP-flour
½ tsp baking powder
100 g brown sugar
2 ½ tsp chinese 5-spice powder
½ tsp kardamom
½ tsp ground cinnamon
½ tsp ground anice seeds
¼ tsp freshly ground nutmeg
¾ tsp all-spice powder
pinch of salt
120 g cold butter, cubed
2-4 TBsp cold orange juice

Place the dry ingredients in a large bowl. Rub in the butter until crumbly. Add as much orange juice as needed to bring it (just) together in a dough. Shape into a ball, wrap in clingfilm and place in the fridge for an hour.
Hire some "pieten" (or kids) to form the dough into marble-sized balls, while you preheat the oven to 320ºF. Place them on a baking sheet with baking parchment and bake for about 30 minutes. Let them cool on a wire rack and now you can eat them or throw them around like a real 'Piet' would.....
