M & M

Ik koop ze eigenlijk nooit: M&M's. Niet omdat ik ze niet lekker vind, neehee, maar omdat ik er niet van af kan blijven. Die met pinda's erin met name. Hoe groot de zak ook is, hoe ver ik het schaaltje ook weg zet, ik ben in staat er honderd keer per avond voor op te staan om er wat uit te pakken, zelfs op straffe van misselijk worden. En dus doe ik mezelf het niet meer aan en koop ik ze gewoon niet meer.

Ik maakte een poosje terug deze cake én ik maakte hem nog een keer en nog een keer. Ik vind hem echt zóó lekker. Met chinese vijf-kruiden poeder en mango. Ik kan er eigenlijk niet van af blijven. Ik gaf er maar één weg, om het mezelf makkelijk te maken. Niemand hier in huis eigenlijk kan er van af blijven. Zo ligt er een cake en zo is hij weer weg.
Zou het in de letters van de naam zitten; M en M cake?

Mango & Macadamia cake
(recept PRINTEN)
1 mango waarvan 60 g in blokjes, 70 g deels geprakt en mooie plakjes voor de bovenkant van de koek.
40 g macadamianoten, geroosterd en grof gehakt
2 kleine eieren
40 g plantaardige olie
80 g boter, gesmolten
125 g bloem
1 tl baking soda (of zuiveringszout)
½ tl gemalen kruidnagel
½ tl chinees 5-kruiden poeder (bijv. te vinden bij de Toko)
een snuf zout
150 g suiker

100 g abrikozenjam
4 el water

Verwarm de oven voor op 180°C. Vet een cakevorm licht in en doe er eventueel een stukje bakpapier in, om het lossen straks te vergemakkelijken.
Roer de eieren, olie en boter door elkaar in een beslagkom, tot ze goed gemixed zijn.

Zeef het meel, bakpoeder, specerijen, zout. En voeg dit met de suiker, mango en noten bij het ei/olie/boter beslag en roer tot het gemengd is (niet overmixen). Giet het in de voorbereide cakevorm en bak het in het midden van de oven in ongeveer 50-60 minuten gaar. De cake voelt nu stevig aan.

Doe de abrikozenjam en het water in een pannetje en breng het al roerend aan de kook. Haal de cake uit de vorm en plaats hem op een rooster, strijk de abrikozenjam op de cake terwijl hij nog warm is. Laat de koek helemaal afkoelen en plaats dakpansgewijs de dunne plakjes mango op de koek. Je kunt eventueel de mango ook bestrijken met de abrikozenjam. Eet smakelijk.

M & M

I don't buy them anymore: M&M's. Not because I don't like them Oh no, but I can't stop eating them. Those with the peanut in them. However big the bag is, however far I place the bowl, I'm capable of getting on my feet 100 times an evening to get a few, even with the knowlegde that I might (and probably will) get nausea. So to make life a bit easier on myself I just don't buy them anymore.

A while back I made this loaf and I made it a second time... and once more... I really love this one. Spiced with 5 spice, with nuts and mango. I gave one as a present, to prevent me from eating it. Well to prevent anyone of eating it really. One slice and you really need a second one and... Could it be in the name: M & M loaf?

Mango & Macadamia nut loaf
(makes 1 loaf)
(PRINT recipe)
1 large mango (divided in 60 g cubed, 70 g partly mashed and the rest in slices for the topping)
40 g macadamia nuts, toasted and coarsly chopped
2 small eggs
40 g vegetable oil
80 g butter, melted
125 g AP flour
1 tsp baking soda
½ tsp ground cloves
½ tsp Chinese five spice powder
large pinch of salt
150 g sugar

100 g apricot jam
4 TBsp water

Preheat the oven to 360°F.
Lightly grease a loaf tin and place a piece of baking parchment in it to lift it out easier later on.
Mix the eggs, butter and oil in a large bowl with a wooden spoon, until well combined.

Sift the flour, baking powder, spices and salt and add with the sugar, mango and nuts to the wet ingredients and mix until combined (don’t overmix). Pour it into the loaf tin and bake for 50-60 minutes until done. The loaf will feel firm to the touch.

Prepare the glaze by heating the apricot jam and the water in a small sauce, let it boil and brush onto the loaf while still warm. Let it cool completely and decorate with the slices mango in a wave like pattern or any other way that suits you. You could brush the mango with the apricot glaze as well, but it ‘s not necessary. Enjoy!

O Lien wat henkenbaar dat eerste stukje, ik heb wel weer van mijn zwager macadamia's gehad en had er helemaal geen trek in. Nu weet ik weer eens wat anders om ze te gebruiken. Bedankt voor het recept. Groetjes Wil V

Well, I'm torn here Lien. If I make it, I'll eat of it which would be ok. It's that, yes I think I'll eat it, all of it and obviously that's too much! goodness . . .
maybe it is in the name, M&M just require eating don't they!!
