Vierkant

Gewoon een lekker simpel koekje deze keer. Het is wel 'uitroldeeg', maar omdat je er vierkantjes van maakt, zit je niet met restjes die je dan weer moet uitrollen ...etc.. Nee gewoon snel en lekker voor een heleboel bezoek.
Amandelvierkantjes
(ongeveer 60 koekjes)
350 g boter of margarine
300 g witte basterdsuiker
1 ei
1/2 dl melk
snufje zout
geraspte schil van 1 citroen
1/2 tl amandelextract
450 g bloem
100 g gemalen amandelen
ei (voor bestrijken van de koekjes)
± 60 amandelen

Verwarm de oven voor op 180ºC.

Meng de boter en de suiker en roer het zacht. Klop het ei erdoor met de melk, amandelextract, citroenrasp en zout. Kneed nu een glad deeg door de bloem en het amandelmeel toe te voegen. Kneed zo kort als nodig is, niet overkneden.
Verpak het in plasticfolie en laat het min. 1 uur opstijven in de koelkast.

Rol het deeg uit tot ongeveer 3 mm dikte en snijd het in vierkantjes van ongeveer 4 x 4 cm.
Klop het ei los in een bakje en bestrijk hiermee de koekjes. Leg in het midden van elk koekje een amandel en bestrijk nogmaals met ei. Leg de koekjes met ongeveer 4 cm tussenruimte naast elkaar op een bakplaat met bakpapier.

Bak de koekjes in de voorverwarmde oven tot ze goudbruin zijn, ongeveer 15-20 minuten. Neem de bakplaat uit de oven en haal ze na een paar minuten van de plaat om ze te laten afkoelen op een rooster.

Squares

Just a simple cookie this time. Kids that come out of school, a pot of tea is ready and a lot of these cookies. Just great. You have to roll out the dough, but because you cut it in squares, there is just one time rolling. A lot of cookies, you can always devide the recipe in half, but they'll be gone in no time.
Almondsquares
(yield ± 60 cookies)
3 sticks butter or margarine
2 cups packed soft white sugar
1 egg
3 TBSP milk
a pinch of salt
grated zest of 1 lemon
1/2 tsp almond extract
3 1/8 cup all-purpose flour
1 cup + 3 TBSP ground almonds
1 egg (for glazing)
± 60 almonds

Beat the butter and sugar together until well mixed. Add the milk, egg, salt, lemonzest and almond extract and stir this in until smooth. Knead or stir in the flour and ground almonds just until incorporated and making a soft dough. Wrap in plastic foil and refrigerate for at least an hour.

Preheat the oven to 360ºF. Place baking parchment on a baking tray.

Roll out the dough and cut in squares (about 1 1/2"). Place thecookies on the baking tray about 1 1/2" apart. Lightly beat the egg and brush each cookie with it. Place a almond in the center of the cookies and brush for a second time with the egg.

Bake the cookies until golden, about 15-20 minutes. Remove the bakingsheet from the oven and let the cookies cool on a wire rack after a few minutes. Enjoy!

Mm, they look wonderful Lien! I am going to make some of these for the zomerfeest at school - they seem really easy with the cutting into squares!

Ik kan niet recht snijden ben ik na vele pogingen achter gekomen... maar, ik vond wel nog een vierkante cookie cutter (in een plastic tas...nieuw gekocht en niet gemist tot echtgenoot hem vond nét voordat ie het tasje weg wilde gooien...is toch erg!)

Dit recept komt me heel goed uit, want ik heb al een hele tijd een zakje amandelmeel liggen zonder te weten waarvoor te gebruiken.

Gelukkig maar dat hij hem niet zo weggooide baking!
Maar je kunt de koekjes ook snijden gewoon langs een lange lineaal en een pizzawieltje of mes.
