Kokosmakronen met een twist

Ik heb al vaker dingen met marsepein gebakken de laatste tijd, waar dit er één van is. Ik kwam namelijk nog een flink stuk marsepein tegen dat hoognodig op moest en vandaar dat ik op deze koekjes kwam. Tel daarbij het feit dat mijn man is een grote fan van alles waar kokos in zit....en deze waren dus helemaal goed. Dit zijn werkelijk heerlijke koekjes en niet moeilijk te maken. De gekleurde (suiker)korreltjes zijn optioneel, maar zoals eerder vertelt vinden Italianen dit erg feestelijk.

Biscotti di Marzapane e Noce di Cocco
(Marsepein/kokosmakronen ± 36 st)
225 g marsepein
150 g suiker
2 grote (of 3 medium) eiwitten
flinke snuf zout
1 tl amandelextract/olie (of eventueel aroma)
175 g geraspte kokos
2 el bloem
(optioneel: gekleurde suiker voor decoratie)

Verwarm de oven voor op 190ºC.
Breek de marsepein in stukjes en mix ze met een mixer zo lang tot het op fijne broodkruimels lijkt. Voeg de suiker toe en roer dit 2-3 minuten met de mixer. Daarna de eiwitten, zout, amandelextract, kokosrasp en bloem erbij doen en mixen tot het mengsel glad is en het aan de onderkant van de kom begint te plakken. Niet te lang blijven roeren anders worden de koekjes niet zo luchtig bij het bakken.

Bekleed twee bakplaten met bakpapier. Doe het mengsel in een (wegwerp)spuitzak met een glad spuitmondje ( ± 1 - 1 1/2 cm in doorsnede) en spuit ronde koekjes van ongeveer 5 cm op de bakplaat. Hiervoor houd je de spuitzak helemaal rechtop boven de bakplaat. Maak de bovenkant glad met de achterkant van een natgemaakte lepel. En strooi desgewenst gekleurde sprinkels erover.

Bak de koekjes ongeveer 12-18 minuten totdat ze goudbruin zijn.
Laat de koekjes afkoelen...en eet smakelijk!!!

I've been baking more with marzipan lately, that's because I've found a big piece of marzipan that had to be used now or never! And I've found this nice recipe on the Internet. Add the fact that my husband loves anything with lots of coconut in it...et voilà these cookies are perfect. There easy to make, nice and sweet and very festive as well. So you'd better try them soon ;D

Biscotti di Marzapane e Noce di Cocco
(Marzipan and coconut Macaroons; makes about 3 dozen)

8 ounces plain marzipan
3/4 cup granulated sugar
2 large (or 3 smal-medium) eggwhites
large pinch of salt
1 tsp almond extract
2 cups grated coconut (preferably not sweetened)
2 TBSP all-purpose flour
(optional for decoration: colored sprinkles)

Preheat the oven to 375ºF.

Break up the marzipan with the paddle attachment in an electric stand mixer until it looks like fine bread crumbs. Add the sugar and beat on medium for 2 to 3 minutes. Add the egg whites, salt, almond extract, coconut and flour and continue mixing on medium speed until the mixture is smooth and sticking to the bottom of the bowl. Don't overbeat or the macaroons will not puff in the oven.

Transfer the mixture into a large pastrybag with a 1/2-inch plain tube. Pipe out into 1-inch rounds onto the parchment lined cookie sheets.

Smooth the tops of each cookies with the back of a spoon dipped in water and sprinkle each cookie with colored sprinkles (optional).

Bake for about 12-18 minutes or until they are golden and firm on the outside but still soft inside. Cool the macaroons on the pans on racks. Enjoy!!!

Potverdikkie Lien, ik ging even op jouw Blog kijken en ik zag meteen deze koekjes. Alleen... mijn 12 jarige zoon zag het ook en die is gék op kokos. Andere kids eigenlijk ook. En ik ook! En nu willen ze (we) óók deze koekjes. Ik groei nog eens dicht ;o)
