Bread Baking Day #36 Corny bread

Last day of the month, time for another edition of the Bread Baking Day event initiated by Zorra and wow it's already the 36th time. This month hosted by Heather from "Girlychef". The theme is Corn(y) breads, we love bread with cornmeal or kernels here, so I really liked thist theme. 

I went on a wonderful search for a new recipe I hadn't tried before. I found one in Linda Dannenberg's book "Paris Boulangerie Pâtisserie". The bread has cornmeal and corn kernels in it. I changed some minor things in the recipe and also the baking time. If I would bake the bread as long as stated in the book (1 hour on 200ºC) it would be a very dark and dry bread. It is a very nice, though not spectacular bread, we liked it here. Goes well with cheeses or meat. The kids had it with sweet things on it as well... they have sweet things on anything really! But I didn't quite like that as good as the savory.

Pain au Maïs
(2 small loaves)
(PRINT recipe)
295 g lukewarm water
4 tsp dry yeast
1 egg, beaten
475 g bread flour
150 g cornmeal
50 g softened butter, unsalted
2 tsp salt
125 g corn kernels (fresh, canned and drained or thawed frozen)

Place flour and cornmeal in a mixing bowl, make a well in the centre and pour in the water. Sprinkle the yeast on it, stir it in the water and let stand for 5 minutes. Now add the beaten egg and start mixing until the dough starts forming. Add the butter in pieces and the salt and keep kneading (with the dough hook or by hand) until smooth and elastic (about 10 minutes). Knead in the dough kernels so they're evenly distributed.
Form a ball and place in a lightly greased bowl. Cover with plastic and let rise until doubled in volume.

Grease two small loaf pans (8 x 4 inch/20 x 10 cm). Divide the dough in two equal pieces, shape into a loaf and place in the pans. Cover with greased plastic and let rise until almost doubled.
In the meantime preheat the oven to 400ºF/200ºC. And place a shallow pan of hot water in the lower oven to create steam.

Score the bread crosswise and bake in the middle of the oven until done and golden brown. Take the loaves out of the pans and let them cool completely before slicing.

Bread Baking Day nr.36

De maand al weer bijna voorbij en hoog tijd voor de Bread Baking Day. Dit keer wat het thema "Brood met Mais" daar zijn we hier gek op, dus snel een recept gezocht dat ik nog niet gebakken had. Het is een recept geworden met zowel maismeel als maiskorrels. Persoonlijk vind ik het het lekkerste met hartig beleg, maar de kinderen eten het ook met zoet.. maar ja die doen overal bijna zoet op. 

Maisbrood
(2 kleine broden)
(recept PRINTEN)
295 g lauw water
4 tl droge gist
1 ei, licht geklutst
475 g brood meel
150 g maismeel
50 g zachte ongezouten boter
2 tl zout
125 g maiskorrels (vers, uitgelekt uit blik of ontdooid uit de diepvries)

Doe de bloem en het maismeel in een kom, maak een kuiltje in het midden en giet daar het water in, roer de gist door het water en laat het 5 minuten staan. Voeg het ei toe en begin met het deeg te mengen. Als het een deeg begint te vormen voeg je de boter in delen toe en ook het zout. Kneed (met deeghaak of met de hand) tot je een elastisch en glad deeg hebt (ongeveer 10 minutes). Kneed daarna (met de hand) de maiskorrels erdoor zodat ze gelijkmatig verspreid in het deeg zitten. Vorm het deeg tot een bal, leg het in een ingevette kom, del af met plastic en laat het rijzen tot het verdubbeld is.

Vet twee kleine broodvormen in (20 x 10 cm). Deel het deeg in twee gelijke delen, vorm het tot een brood en leg het in de bakvormen. Dek af met ingevet plastic en laat het rijzen tot het bijna verdubbeld is.

In de tussentijd verwarm je de oven voor op 200ºC. Zet een laag bakje met wat heet water onderin de oven om stoom te maken tijdens het bakken. Snijd het brood in en bak het midden in de oven tot ze gaat en bruin zijn, ongeveer 30-40 minuten. Haal de broden uit de vormen en laat ze afkoelen op een rooster.

Looks fantastic! Sometimes I'm asking me if the authors of cookbooks even test their recipes once. Such errors are no problems for experienced bakers like us but for beginners.....

Your bread looks great, Lien. I love the corn studded throughout...so tempting. Thank you for bringing it to the BBD#36 basket this month :D
