Bread Baking Day Anniversary!

badge 31It’s celebrating time for the third anniversary of this wonderful bread baking event that Zorra (Kochtopf) initiated. One event that I try not to miss, I really love participating and seeing the round ups when the month is over and get inspired by all the beautiful baked goods.

This time Zorra is hosting this special edition herself and she choose “Bread and Nuts”. A yummy combination, I love nuts in bread. It’s great with dried fruits or another sweet ingredients, but I decided to try a savory version. I found a recipe in an old book by Beth Hensperger with pecans and shallots. Partly with whole wheat flour, which sounded good ánd they were rolls too, nothing could go wrong there. A totally delicious smell filled my kitchen when they were baked…. and they tasted delicious too. I’ll be making these again for sure. My husband ate three before I even could take pictures!

Country rolls with shallots and pecans
(12 rolls)Country rolls with shallots and pecan's (p.202) (PRINT recipe)
1 cup pecans
2 tsp dry yeast
pinch of sugar or honey
1/2 cup warm water
2 shallots, chopped
4 TBsp unsalted butter or oil
1 tsp salt
1/4 cup bran
1/4 cup whole wheat flour
about 2 -2 1/2 cups bread flour
1/2 cup warm milk

Country rolls with shallots and pecan's  -close up Preheat the oven to 325ºF. Place the pecans on a baking tray and toast for 10 minutes, let cool and coarsely chop.

Heat the butter/oil in a skillet and sauté the shallots until soft and translucent, leave to cool.
Place the yeast, sugar, water, milk, shallots and pecans in a large bowl and stir. Add the bran, salt, whole-wheat flour and 1 cup of the bread flour.
Mix and add more bread flour until you can knead the dough. Knead it until the dough is smooth and springy. It may be a little sticky but not too much. Place in a greased bowl, cover with plastic and let rise for 1 - 1,5 hours.

Turn the dough out onto the work surface, divide the dough in 12 equal portions and shape them to rolls. Place them on a baking sheet with baking parchment, cover with greased plastic and let it rise for about 1 hour.

20 minuts before baking preheat the oven to 400ºF.
You can slash the tops before baking or leave them like that. Bake until golden brown and done for about 20-25 minutes.
Cool on racks (or serve luke warm).

Bread Baking Day viert feest!

Alweer het derde jaar van het broodbak event Bread Baking Day, de 31e editie. Het event is gestart door Zorra van Kochtopf, en is uitgegroeid tot een zeer populair event. Elke maand een ander thema rond om het brood bakken. Deze maand heeft Zorra het thema zelf gekozen en dat is “Brood en noten” geworden. Altijd een goed combinatie. Natuurlijk met zoete dingen, suiker, amandelspijs of met rozijnen, maar ik besloot de hartige kant op te gaan. Ik vond in een ouder boek van Beth Hensperger een lekker recept van bolletjes met pecannoten en aangefruite sjalotjes. Ik kan je verzekeren dat de keuken heerlijk rook. Toen de broodjes lagen af te koelen waren er drie verdwenen in de maag van mijn man die kon er niet van afblijven. Gelukkig waren er nog genoeg voor de foto om ook deze editie weer mee te kunnen doen met dit leuke broodbak-spektakel.

Bolletjes met sjalotjes en pecannoten

125 g pecannoten 2 tl droge gist
snuf suiker of wat honing
118 g lauwwarm water
2 sjalotjes, gehakt
4 el olie
1 tl zout
35 g tarwe zemelen
35 g volkoren tarwemeel
280 - 350 g sterke bloem
118 g lauwwarme melk

Verwarm de oven op 160ºC. Leg de pecannoten op een bakplaat en laat ze 10 minuten roosteren. Laat ze afkoelen en hak ze grof.

Verhit de olie in een koekenpannetje en fruit daar in de sjalotjes aan tot ze glazig zijn. Neem t de pan en laat ze afkoelen.

Meng de gist, suiker, water, melk, sjalotjes en pecannoten in een grote (mixer)kom door elkaar. Voeg de zemelen, zout, volkorenmeel en 150 g bloem toe. Meng dit en voeg genoeg bloem toe om het deeg goed te kneden. Kneed het deeg tot het glad, elastisch en soepel is. Het is nog een klein beetje plakkerig, maar niet erg. Vorm het deeg tot een bol, plaats het in een ingevette kom, dek af met plastic en laat 1 -1,5 uur rijzen.

Verdeel het deeg in 12 gelijke delen en vorm ze tot bolletjes. Leg ze op een bakplaat met bakpapier, dek af met ingevet plastic en laat ongeveer een rijzen.
Verwarm de oven 20 minuten voor het bakken voor op 200ºc.
Je kunt de bolletjes eventueel insnijden aan de bovenkant. Bak ze goudbruin en gaar in ongeveer 20-25 minuten.
Laat afkoelen op een rooster of eet ze warm.

Those are what little rolls should be. Perfect size and shape to enjoy more than three or four ... oh I'm so greedy.

(I'm greedy too; I'd like to start with 2 or 3 so I can come back and get 2 or 3 more after everyone has served themselves. And then maybe 2 or 3 more when everyone's tidying up. There's no point in putting just a few away, is there?)
