WBD - After hours party

engels.amer klein Did you all visit the round-up of the Bread Baking Day this year? So many breads, a real inspiration. I was sorry that lots of the were in languages that I don't understand, but fortunately there were lots of breads in familiar languages to choose from. And so I can join in the after hours party and bake some of the recipes. Here are some of the breads I baked (until now):

Sweet Brandy buns, that Ania from "
Moja Mala Kuchnia" baked. Thanks for taking the trouble to translate in English as well. Delicious sweet buns with a hint of brandy... our kids loved them to bits.

Yogurt and honey whole wheat bread from Stefanie's blog "Hefe und mehr"... I baked a whole wheat version and a white flour version, both very good.

Cracked Wheat and Hazelnut Bread

Kaloorexi". This was also a very delicous bread with the crunch of the toasted nuts and cracked wheat.

But the very first recipe I picked was from Donatella's blog "Il cucchiaio d'oro" (the golden spoon... great title for a blog) "Ciambellone tonno e cipolla"; a savory breadring filled with onions and tuna. This appealed to me right away and I just had to bake it. Grazie mille Donatella for sharing! It was so delicious I can advice everyone to make this too. We ate it still warm for dinner and finished it in one go. I added a few extra ingredients, but it'll taste good without them too! I'll be baking this again soon.

Tuna and Onion filled breadring
(makes one large ring)

(PRINT recipe)

dough
300 g bread flour
1 tsp dry yeast (or 15 g fresh)
170 g warm water
1 TBsp olive oil
pinch of sugar
1 tsp salt

filling
3 large onions (red or yellow)
2 cans tuna in (olive)oil
handful of flatleaf parsley, coarsly chopped
1 (medium) clove of garlic, minced

3 TBsp oat flakes (to sprinkle on top)

Make the dough by kneading all the ingredients into a smooth dough. Add a little water or flour if the dough is too dry or too wet. Place in a greased container and let it rise until doubled (about 1-2 hours depending on the temperature).

In the meantime prepare the filling. Slice the onions in half rings and bake them on low/medium heat in some of the oil from the tunacans. Bake them slow until caramelised and lightly browned. Add the minced garlic to the pan the last 10 minutes to bake with the onions. Let it cool.

Drain the tuna and mix it with the baked onions and parsley.
Preheat the oven to 200C.

Roll out the dough into a long strip (50 x 17 cm) and place the filling in the middle, and fold the dough around it. Pinch the seam tightly. Shape the dough into a ring and press the ends tighlty together. Brush a little olive oil (that you drained from the cans) and sprinkle the oatflakes on top. You can bake this freeform on a piece of baking parchment or place the ring upside down in a greased ringshaped pan.

Bake for about 30 minutes in the oven until golden brown. Invert the bread on a board, let cool and serve cold or warm.

Wereld brood dag van 2009 was een groot succes en ondertussen heeft Zorra alle inzendingen, 265 maar liefst. Daar zijn vast wel een paar recepten die roepen om nabakken en dan kan je meedoen aan de "after hours party". Ik heb dat ook weer gedaan (net als vorig jaar, en het jaar daarvoor), misschien dat ik er nog wel een paar bak, maar laten we eerst deze even showen.

Sweet Brandy buns, die Ania van"Moja Mala Kuchnia" bakte. Heerlijke licht zoete bollen met een vleug cognac.

Cracked Wheat and Hazelnut Bread van Anooska ("Kaloorexi"). Een heerlijk brood met name door de getoaste hazelnoten.

Maar het eerste recept waarvan ik meteen wist dat ik het móest maken kwam van Donatella's blog "Il cucchiaio d'oro": "Ciambellone tonno e cipolla". Een hartige broodring gevuld met uien en tonijn. Het water liep me meteen in de mond en dat moest snel gebakken worden. Dankjewel Donatella! Het was echt mega-super-kei lekker. We aten het lauwwarm als avondeten en het hele brood ging in een mum van tijd op. Meteen kwam de vraag "niet of, maar wanneer" ik dit weer zou bakken. Ik heb een paar hele kleine toevoegingen aan het recept gedaan. En van Donatella kreeg ik toestemming om dit ook hier te plaatsen. Ik zou zeggen "Bakken!"

Broodring gevuld met tonijn en uien
(1 ringvormig brood)
(recept PRINTEN)

deeg
300 g (sterke) bloem
1 tl droge gist (of 15 g verse)
170 g warm water
1 el olijfolie
snuf suiker
1 tl zout

vulling
3 grote uien (rode of gele)
2 blikjes tonijn in (olijf)olie (uitlekgewicht per blikje ongeveer 100 gr)
een handvol platte peterselie, grof gehakt
1 (niet te grote) teen knoflook, gehakt
vers gemalen zwarte peper

3 el havervlokken (ter decoratie)

Kneed alle deegingrediënten tot een mooi soepel deeg (voeg zo nodig wat water of bloem toe als het te nat of te droog is). Plaats het in een ingevette kom, dek af en laat rijzen tot het verdubbeld is (afhankelijk van de temperatuur 1-2 uur).

Ondertussen maak je vulling. Snijd de uien in halve ringen en bak ze langzaam op niet te hoog vuur in wat olie uit de tonijnblikken. Bak ze langzaam, dan worden ze bijna zoet van smaak. Bak de laatste 10 minuten de knoflook mee (doe je dat eerder kan het bitter worden). Laat het afkoelen.

Giet de tonijn af en meng het met de gehakte peterselie door de uien. Voeg peper toe naar smaak en laat afkoelen.

Verwarm de oven voor op 200°C.

Rol het deeg uit tot een lap van ongeveeer 17 x 50 cm. Leg de vulling in het midden over de hele lengte en vouw het deeg erom heen. Druk de naden goed vast. Maak de uiteinden van de rol aan elkaar vast en vorm een ring. Je kunt dit zo op een bakblik bakken of in een kransvorm-bakblik (brood op de kop erin doen). Strijk wat olie (bijv. uit de tonijnblikken) over de bovenkant en bestrooi met havervlokken.

Bak het ongeveer 30 minuten tot het goudbruin is. Haal het brood uit de vorm of de bakplaat en laat afkoelen. Eet warm of koud.

Tuurlijk, zo'n vulling is veel lekkerder IN brood ipv OP brood.....!!

Yum! Good for you for baking up so many great breads! I want some of that tuna one for breakfast. :)
