BBBabes bake streetfood

engels.amer klein This month our lovely babe Natashya from "Living in the kitchen with puppies" choose a great recipe as kitchen of the month July. A wonderful small bread filled with ground sesamepaste that is a common food in the streets of Beirout. You can either eat it roomtemperature or warm, but I prefer it warm. When they were cooled I just place them in the microwave for a minute or so.

(Beirut Tahini Swirls - Makes 6 golden brown, flaky textured coiled rounds, about 6 inches wide, filled with sesame paste and sugar)
Sukkar bi Tahin
(PRINT recipe)
Dough
1/2 tsp. active dry yeast
1 cup lukewarm water
about 2-1/2 cups all purpose flour
2 tsp sugar
1 tbsp olive oil

Filling
3/4 cup tahini*
3/4 cup sugar

Directions
In a medium bowl, dissolve the yeast in the lukewarm water. Stir in one cup of the flour, then add the sugar and oil and stir in. Incorporate a second cup of flour, then turn the dough out onto a well floured surface and knead for 5 minutes, or until smooth. Cover the dough with plastic wrap and let rise for 2 to 3 hours, until doubled in volume.

Meanwhile, place a baking stone or unglazed quarry tiles, if you have them, (or a baking sheet) on the middle oven rack and preheat the oven to 375º F. Mix together the tahini and sugar and stir until smooth. Set aside.

Cut the dough into 6 equal pieces. Work with 3 at a time, keeping the others covered. Flatten each out on a lightly floured surface, then roll each out to a rectangle about 5 inches by 10 inches. Spread the top surface with 2 1/2 tablespoons of the filling mixture, spreading it almost to the edges. Roll up the rectangle from a long side into a cylinder, which will stretch as you roll to about 20 inches long. Anchor one end and coil the bread around itself, then tuck the end in. Flatten with the palm of your hand, then set aside, covered, while you fill and shape the other 2 rectangles.

Return to the first coil and roll out gently with a rolling pin. Roll the other 2 out a little and then return to the first one and roll it out a little more thinly, and so on, until you have rolled each to a round about 6 to 7 inches in diameter. A little filling may leak out—don’t worry, just leave it.Place the breads on the hot baking stone or tiles (or baking sheet)** and bake for 15 to 20 minutes, until golden brown and flaky. Transfer to a rack to cool. Shape and bake the remaining 3 pieces of dough. Serve warm or at room temperature.
*Tahini is a paste of ground sesame seeds. It can be found in health food stores, Middle Eastern markets and some grocery stores. It is a common ingredient in hummus, and is gaining in popularity in most parts of the world. It must be refrigerated after opening.
** I baked mine on parchment on the stone. Three fit on a large piece of parchment.

Deze maand is onze babe Natashya van “
Living in the Kitchen with puppies” aan de beurt om de keuken van de maand te leiden.

Ze heeft een geweldig recept gekozen dat in de straten van Beiroet als straatsnack gegeten wordt. Een heerlijk broodje gevuld met sesamzaadpasta en suiker, maar niet te zoet. Je kunt het op kamertemperatuur of warm eten, maar ik vind het warm het lekkerste. Dus zijn ze afgekoeld, even in de magnetron, maar dat is natuurlijk persoonlijk.

Sukkar bi Tahin
(Tahinkrullen uit Beiroet-
6 stuks ronde broden van ongeveer 15 cm doorsnede, gevuld met sesamzaadpasta en suiker)

Tahinkrullen uit Beiroet (p.244)
(recept PRINTEN)
Deeg
1/2 tl droge gist
235 g handwarm water
± 420-480 g bloem
2 tl suiker
1 el olijfolie

Vulling
150 g tahini*
150 g sugar

Werkwijze
Doe 150 g meel, gist en lauwwarm water in de mixerkom en doe de olie en suiker erbij. Voeg daarna steeds meel toe terwijl je kneedt (in de standmixer gaat dat het makkelijkste) tot je een soepel deeg krijgt, dat niet te droog is.

Doe het deeg in een ingevette kom, dek af met plastic en laat 2-3 uur rijzen tot het verdubbeld is.
Verwarm de oven voor op 190ºC met een ovensteen onderin. (je kunt de Tahinkrullen ook op een bakplaat bakken). Meng de tahini en suiker in een kommetje en zet apart.

Verdeel het deeg in 6 gelijke delen. Werk met drie stukken tegelijk terwijl je de andere stukken afgedekt laat. Rol een stuk uit tot een rechthoek van ongeveer 13 x 25 cm. Verdeel hierover een egale laag van de vulling (2,5 el), laat rondom 1 cm vrij. Rol het deeg op, beginnend aan de lange kant, die tijdens het uitrollen zal uitrekken tot zo'n 50 cm. Houd één kant vast en rol de sliert erom heen. Stop het uiteinde onder het brood. Dek af en vorm de andere twee op dezelfde manier.Pak nu weer het eerst gemaakte broodje en rol het wat uit met een deegroller, leg opzij. Doe dit ook bij de andere twee broodjes. Ga weer verder met het eerste broodje en rol nogmaals uit, tot uiteindelijk zo'n 16-18 cm doorsnede. Rol tussendoor de andere uit als het deeg nog te elastisch is. Drie platte broodjes passen net op een bakplaat (of op bakpapier die je op de ovensteen legt). Geen paniek als er wat vulling doorheen lekt, gewoon zo laten.

Bak de broden op de hete ovensteen of bakplaat en bak ongeveer 15-20 minuten of totdat ze goudbruin zijn. Laat ze op een rooster afkoelen.
Terwijl de 1e lading broden bakt, maak je op dezelfde wijze de volgende drie.

Warm of op kamertemperatuur serveren

*Tahini is sesamzaadpasta. Je kunt het vinden in grote supermarkten, toko's of bij de turkse winkel. Na opening koel bewaren.
TIP: De broden zijn ook goed in te vriezen, na ontdooien heel even licht warm maken in de oven of magnetron, want warm zijn ze toch het lekkerste.

Lien, I can't wait to try these. They look so yummy.

The chicks that were supposed to arrive today didn't come because of incubator failure. Hopefully we'll have them in two weeks. Kids and mom are really sad :o(
