Bread Baking Babes bake up a treat

This month I have the honour to lead the kitchen of the month. The recipe I choose in the end was one that had been on my baking list since ever I'd seen it being made on a TV-cookery show. It's by one of my favorite chefs, Raymond Blanc. Besides the fact that he has a lovely accent and of course can cook fantastic, he's lovely disorganised at times and makes very funny mistakes. For example the one in this video (if want to go straight to the fun start the video at 16.30 minutes), so lovely that he apparently didn't have any trouble leaving this part in the show. I guess we would all wish we'd have an "Adam" in our kitchens, I would! 

You can see the video of this recipe here, but as the recipe makes much more dough than needed for one gâteau, I have rewritten it for 2 small ones, or if that's too much richness for you, you can make one round gâteau with a small brioche loaf on the side. They take about the same baking time, so just place the tin next to the gâteau when you bake it

Gâteau à la crème
recipe for 2 small gateaux, or 1 gateau and a small brioche loaf (serves 4-6 per small gateau)
(PRINT recipe)
For the brioche dough
250 g strong plain flour
3,5 g sea salt
2 TBsp caster sugar
1 TBsp fresh yeast or 1 1/2 tsp active dry yeast
3,5 free-range eggs, preferable organic (the other half egg will be used for the glaze)
150 g unsalted butter, cut into small cubes (cool room temperature)

For the crème filling (for two small gateaux, if you want to make 1 small gateau and 1 plain loaf, half it)
6 free-range egg yolks, preferably organic
60 g caster sugar
1 lemon, juice and zest
250 ml crème fraîche

For the glaze
1/2 egg, preferably organic
1/2 TBsp caster sugar
10 g (¾ oz) butter, cut into cubes (optional)
1/2 - 1 TBsp nibbed sugar, to decorate

Preparation method
1. For the brioche dough, place the flour, salt, sugar and yeast (keeping the yeast away from the salt as it will attack it and damage its ability to ferment), in an electric mixer bowl. Add the eggs and mix with a dough hook attachment for 5 minutes on low power until the eggs are completely incorporated (alternatively, place the ingredients in a large mixing bowl and stir together for 5 minutes).

2. Increase the speed of the machine or your stirring and mix for another 5 minutes until the dough comes away from the edge of the bowl. Then add the cubes of butter and continue to mix for 2-3 minutes until completely incorporated.

3. Remove the bowl from the machine, if using, then cover with clingfilm and set aside at room temperature for 1 hour to prove, then chill the dough for a further hour (it will be easier to work with).

4. Preheat the oven to 180ºC/360ºF.

5. Lightly flour a work surface and your hands. Take half of the brioche dough and bring it together with the palms of your hands to form a ball, then place it on a baking tray and flatten it slightly. Starting from the middle of the dough, gently press the dough flat and spread it out to form a circle to approx 24 cm ( 9,5 in) in diameter, but leave a 2 cm (1 in) gap from the edge as this will create the rim of the tart. Be careful not to stretch the dough and try to keep the base even in thickness. Use the second half of the dough for another gateau or make a small loaf from it.

6. Cover with lightly greased plastic and a clean tea towel and place the dough in the warm area for 25 minutes.

7. For the crème filling, mix the egg yolks, sugar, lemon zest and juice together in a large mixing bowl and gradually mix in the crème fraîche. Set aside.

8. For the glaze, brush the rim of the gateau with the egg yolk and sprinkle with the nibbed sugar and prick the base of the dough evenly with a fork to help the even cooking and rising of the dough. Pour 1/4 the crème mixture inside the rim of the dough of one gateau, sprinkle with the caster sugar and dot with the butter. Pour in the other 1/4 when the baking sheet is already in the oven, so you won't spill. (make the second one the same way)  and bake in the preheated oven for 25 minutes, or until the brioche has risen and the filling is set. Remove from the oven and set aside to cool, then serve.

NB: For this recipe you will need a food processor with a dough hook attachment.

Bread Baking Babes bakken iets lekkers 
(voor Pasen misschien?)
Deze maand heb ik de eer om de keuken van de maand te zijn. Het recept dat ik uiteindelijk koos, stond al langer op mijn baklijst, eigenlijk al sinds ik het op tv zag. Het is van één van mijn favoriete chefs, Raymond Blanc. Behalve zijn leuke accent en zijn kooktalent, is hij bij tijd en wijle soms heerlijk onhandig en grappig. Om een voorbeeld te geven, kan je naar deze video kijken (als je meteen naar de grap wil, start de video dan op ongeveer 16,5 minuten). Zo grappig dat hij blijkbaar ook geen probleem had om dit stukje gewoon uit te zenden. Misschien dat we allemaal wel een "Adam" in de keuken zouden willen hebben (ik in ieder geval wel) 

Dit recept kan je op de video hier zien, maar omdat het recept daar veel meer deeg maakt dan nodig voor 1 taart/brood, heb ik het herschreven voor 2 kleine ronde taarten of 1 taart en 1 brioche broodje. Ze hebben ongeveer even lang nodig om te bakken, dus kan je ze gelijktijdig in de oven doen.

Custardtaart
Recept voor 2 kleine ronde broden of 1 rond brood en een klein briochebrood
(recept PRINTEN)
brioche deeg
250 g sterke bloem
3,5 g zout
2 el suiker
1 el verse gist of 1,5 tl droge gist
3,5 eieren (4 eieren totaal, het ½ ei dat over is wordt later gebruikt voor bestrijken van het deeg)
150 g ongezouten boter, in kleine blokjes (koele kamertemperatuur)

custard vulling (dit is voor 2 kleine ronde broden, voor 1 gevuld brood, gebruik je het halve recept)
6 eierdooiers
60 g kristalsuiker
1 citroen, sap en rasp
250 ml crème fraîche

afwerking
1/2 ei
1/2 el suiker
10 g boter, in stukjes (optioneel)
1/2 - 1 el greinsuiker

Werkwijze
Doe het meel, zout, suiker en gist in de kom van een standmixer. Voeg de eieren toe en kneed met de deeghaak ongeveer 5 minuten op lage snelheid tot de eieren volledig opgenomen zijn.

Verhoog de snelheid van de mixer iets en kneed nog 5 minuten tot het deeg loslaat van de zijkanten van de kom. Voeg nu de blokjes boter erbij en kneed 2 tot 3 minuten tot ze volledig opgenomen zijn. Dek de kom af met plastic folie en laat het een uur op kamertemperatuur staan, zet het daarna een uur in de koelkast (je kunt er dan makkelijker mee werken). Je kunt het ook ‘s nachts in de koelkast laten staan om de volgende dag verder te verwerken.

Verwarm de oven voor op 180ºC.

Gebruik wat bloem op het werkopppervlak en aan je handen. Neem de helft van het deeg en vorm er een bal van. Druk de deegbal plat en leg het op een bakplaat met bakpapier. Druk het deeg verder plat vanuit het midden tot er een deegcirkel van ongeveer 24 m doorsnede ontstaat, maar laat aan de rand een opstaande reep van ongeveer 2 cm over. Let erop de dat bodem van de taart overal even dik is.  Gebruik de rest van het deeg om nog een taartvorm te maken of gebruik het om een klein brioche brood te maken. Dek af met ingevet plastic en een theedoek. zet het deeg op een warme plek ongeveer 25 minuten. .

Maak de vulling door de eidooiers, suiker, citroenrasp en -sap te mengen in een kom. Voeg daarna de crème fraîche toe en mix het tot het goed gemengd is.

Bestrijk de rand van de taart met het ½ ei dat over is van het deeg. Bestrooi met greinsuiker. Prik de bodem in met een vork. Giet ¼ van het crème mengsel in de taartbodem, schuif dan de bakplaat in de oven. Giet daar nog ¼ deel van het mengsel, zodat de vulling er niet overheen klotst bij vervoer naar de oven. Strooi de suiker over de vulling en (optioneel) de boter in kleine vlokjes erover. Maak de tweede taart op dezelfde manier (of maak een naturel brioche broodje in een klein bakblikje). Bak de taart(en) in een voorverwarmde oven ongeveer 25 minuten of tot de vulling stevig is. Laat het afkoelen op een rooster.
NB: Voor dit recept heb je een standmixer nodig met een kneedhaak..

It does seem to be a recurrent them that most of us hesitated in baking this one.

Once again it proves that we all seem to love stuffed breads. And who could doubt brioche ;-)

Well, my dough definitely did NOT look as pretty as yours (your edges are built up so beautifully), but I'm so happy that I made this! And while my Irish-twist was perfect for this weekend, I think I have to agree that this would be perfect for Easter...I will make it again WITH the lemony custard then. :)

I love the way you shaped the dough, I coulnd't get my rim to look that professional Lien, very very good! The color on your filling is also much better, so nice creamy yellow. Sigh. Can I come and live with you?

Ik had zo'n zin om mee te bakken met de Babes, maar helaas het lukte me deze maand niet. Maar deze Gateau komt zeker op onze tafel, dank je wel.
