BBBabes tie some knots

engels.amer klein And yes here is another episode of the Bread Baking Babes, and this time it's Ilva's turn to boss us around and be the baking chef of the kitchen of the month. You all know she lives in Italy, so of course she choose an Italian bread, rolls to be precise: "Italian Knot Bread". So I'm happy, because I always love to bake something Italian. The dough is very easy, white dough enriched with lard (I used shortening) and olive oil. Lovely taste by using a biga and beautiful fine crumb: delicious rolls. The tying-them-in-a-knot-part is a bit harder, I think I only had two rolls that were alike, even though after the first few you'll get the hang of it... sort of anyway. So don't get alarmed when you end up with a "not' instead of a knot, they'll taste delicious anyway.

I baked them twice. The pictures are from the first session, they (the rolls I mean) were great. The second time my time table got tied up in a real knot. First of all I suddenly had to put a muddy and smelly boy in the shower without getting mud everywhere... when baking time was almost over. Suddenly I smelled them upstairs... very dark brown. BTW we still ate them, they were a bit hard, but the taste was still good.

The second batch that went in later than planned, because the first batch had been in there too long. They had to be taken out before they were brown, because I had to pick another kid up from the busstop. So I had some very dark and some very pale rolls. Good thing I shot pictures from my first baking session. But we ate them all with joy and they were all delicious. Very forgiving these rolls. Thanks Ilva for these wonderful Italian rolls; I'll certainly make these again (and again).

Italian Knot Bread
(or Pane di pasta tenera condita -12 rolls) (PRINT recipe)
biga:
200 g normal bread flour
5 g fresh yeast or 1/4 tsp dry instant yeast
170 ml water

- Dissolve the yeast in a little water and quickly work the dough together.
- Put it in a container, cover it with a half closed lid or kitchen towel and leave it for 15-24 hrs.

dough:
250 g biga
500 g flour (type 00)
200-260 ml water, handwarm
15 g fresh yeast or 1 1/2 tsp dry instant yeast
25 g extra-virgin olive oil
30 g lard (or shortening)
12 g honey
12 g salt

- Put the flour either in a big bowl or on a baking board, add the lard (or shortening) and mix it with your fingers until it has 'crumbled' and is completely mixed with the flour.
- Dissolve the yeast in little tepid water and add it to the flour. Mix as well as you can.
- Mix salt, olive oil and honey with the handwarm water and add it to the flour. Now work it it until it holds together and then add the biga.
- Work the dough until it is smooth and doesn't stick.
- Put it into a big bowl, cover it with plastic film and leave to rise until it has doubled.
- Now take up the dough and divide it into 12 equal parts and roll them it into long strands (about 30-35 cm)
- To make the knots:

1. Roll out the dough into snakes and lay them out on a flat surface.
2. Make a semi-circle with the dough strands.
3. Twist the two ends together like in the photo.
4. Bring the two ends towards the upper part of the circle.
5. Lift/fold the top part over the twisted part.
6. Take the two end and join them together under the actual knot, this will make the knot part come out more and it hides the ends.
- Put the knots on baking sheets and leave to rise (covered) until they have doubled in size.
- Bake in a pre-heated oven (200°C/390°F) for 25-35 minutes until golden brown.

En ja het is alweer tijd voor een aflevering van de Bread Baking Babes en deze maand was het Ilva's beurt om ons alle hoeken van de keuken te laten zien en de keuken van deze maand te leiden. Zoals de meesten weten woont Ilva in het mooie Italië en dus koos ze een Italiaans brood, broodjes om precies te zijn. Ik was natuurlijk in mijn sas, want iets Italiaanse bakken is altijd leuk.

Het deeg was makkelijk, een wit deeg verrijkt met reuzel (ik heb shortening gebruikt) en olijfolie. Mooie fijne kruim en gewoon heerlijke bolletjes. Het in de knoop maken van deze broodjes was wat lastiger, ik geloof dat ik maar twee broodjes had die echt op elkaar leken, hoewel naarmate je ze vaker vormde het wel steeds handiger ging. Maar schiet dus niet in de stress als het broodjes niet de perfecte knoopvorm hebben, dat maakt niet uit; smaken doen ze toch wel!

Ik heb het recept twee keer gebakken. De foto's zijn van de eerste bakgang, die bollen waren mooi gelukt. De tweede keer raakte mijn hele tijdschema in de knoop toen ik ineens een met modder besmeurd (stinkend) jongetje onder de douche moest zetten, zonder het hele huis onder de blubber te krijgen... natuurlijk net toen de broodjes richting einde baktijd gingen natuurlijk. Ik rook ze ineens toen ik boven was.... en dus heel erg bruin. We hebben ze overigens wel gewoon opgegeten, de korst een beetje taai, maar verder eigenlijk ook nog heel lekker. De tweede lading kon er toen te kort in, omdat de beschikbare tijd aan de 1e lading was besteed en ik een kind van de bus moest halen. Dus de helft te donker en de helft te wit. En toch waren beide heerlijk. Wel "ingewikkeld" deze broodjes, maar vergevingsgezind.

Italiaanse Knoopbroodjes
(of Pane di pasta tenera condita - 12 broodjes) (recept PRINTEN)
biga/voordeeg:
200 g (sterke) bloem
5 g verse gist of 1/4 tl droge gist
170 ml water (kamertemperatuur)
- Doe alle ingrediënten bij elkaar en meng het goed.- Doe het in een kom, dek losjes af en laat het 15-24 uur staan op kamertemperatuur.

deeg:
250 g biga/voordeeg
500 g bloem (type 00)
200-260 ml water, handwarm
15 g vesre gist of 1 1/2 tl droge gist
25 g extra-virgine olijfolie
30 g reuzel (of shortening)
12 g honing
12 g zout

- Doe de bloem in een grote (mixer)kom en wrijf met je vingers de reuzel (of shortening) erdoor tot het kruimelig is.
- Voeg de gist toe en meng het door het deeg.
- Meng zout, olijfolie en honing door 200 ml water en voeg het bij de bloem, kneed het erdoor. Boeg nu ook de biga toe in stukken.
- Kneed het deeg tot een soepel deeg dat niet meer plakt. Voeg zo nodig meer water toe (of bloem) om de juiste verhoudingen te krijgen.
- Maak een bal van het deeg, leg het in een ingevette kom, dek af met plastic en laat rijzen tot het verdubbeld is.
- Verdeel het deeg in twaalf gelijke delen en rol ze uit tot lange slierten (± 30-35 cm)
- Zo maak je de knopen
1. Maak een soort cirkel van de sliert.
2. Draai de onderste twee kanten twee keer om elkaar heen
3. Vouw de twee uiteinden naar de bovenkant van de cirkel.
4. Til de bovenrand nu over het gedraaide deel.
5. Pak de twee uiteinden, maak ze aan elkaar vast en vouw ze onder het deeg.

- Leg de knopen op bakpapier op bakplaten en laat ze (afgedekt) rijzen tot ze verdubbeld zijn.
- Bak ze in een voorverwarmde oven (200°C) ongeveer 25-35 minuten tot ze goudbruin zijn.

I know exactly what you mean about the time table, although my kids are older ... suddenly someone HAS to be at the station two minutes ago, and WHERE have all the socks gone, and has ANYONE seen my mobile???

Ha, and that is the so called multi-tasking we women are famous for. You not only protected your house against a muddy boy and fetched the other but baked beautiful breads and also managed to take pictures.

I love the close up of the crust.
