BBB & Royal Crown Tortano

The fun in participating in an event is to something together and to get inspired by all the entries in the round up. Of course there is a theme, but you can choose from so many different ideas, that there are hardly ever two the same recipe entries.

Recently I received an invitation from Tanna (My kitchen in Half Cups) to take part in a small bread baking group, called "Bread Baking Babes". The idea is that every member bakes the recipe the same recipe monthly and be in touch with eachother to talk about problems, tips, so we'll become better breadbakers by learning from each other and have some fun together in the process. The individual results are published on the members blogs. The recipe is to be found in the kitchen of the month. This month the kitchenprincess is Karen/Baking Soda from Bake my day! Although the group is small, we invite all bread baking buddies to bake the monthly recipe too. If you do this within a week, and you send a link to the kitchenprincess of that month, she'll put those links on her blog, so you can see also see the breads from other Bread Baking Buddies.

This months recipe is the ROYAL CROWN TORTANO from Maggie Glezer's book "Artisan Baking". (Recipe in English)

I baked this bread twice this month with different flour:
On the left side of these photo's is the bread baked with "farina d'oro bianco doppio 00". (14% protein)
On the right it's baked with organic flour T55 from France. (Also the single photo's are from this flour) This is probably less in protein, because the dough was wetter and gave a bit more problems to be kept in shape. 















But the holes were much better is this one ánd an amazing taste, truly a great difference. Sorry I can 't give you a slice to taste!
The rising takes forever, if you can say it rises at all (I let it rise the final time for 4 hours). But don't get dicouraged.... when you pop it on a hot ovenstone, spray some water in.... it pops up like a balloon.
I followed the recipe to the letter, except it took much longer to give it some sort of a final rise (4 hrs) and I didn't let it rise upside down, it was just too delicate to be able to do that.

Het leuke van meedoen aan events is dat je niet alleen samen met iets bezig bent, maar vooral om dat later bij elkaar terug te zien. Je bakt (of kookt) natuurlijk allemaal wat anders, zodat je alle kanten uit kan met wat je maakt en daarna geïnspireerd wordt door alle creaties. Je bent ook vrij om wel of niet mee te doen, zodat je kunt kiezen aan welke events je toe komt... want ik heb er vaak een stapel liggen, maar doe maar met een paar mee.

Onlangs kreeg ik een uitnodiging van Tanna (
My kitchen in Half Cups) om deel te nemen aan een klein groepje van bloggers die graag brood bakken. De groep heet Bread Baking Babes en bestaat uit de volgende leden: A Fridge Full of Food (Glenna), Bake My Day (Karen), Cookie Baker Lynn (Lynn), I Like to Cook (Sara), Living on Bread and Water (Monique), Lucullian Delights (Ilva), My Kitchen in Half Cups (Tanna), Nami-Nami (Pille), Notitie van Lien (Lien), The Sour Dough (Mary aka Breadchick), Thyme of Cooking (Katie), and What Did You Eat (Sher)

Het is de bedoeling om iedere maand allemaal hetzelfde recept te bakken en onderlinge vragen of problemen met het brood te overleggen, om zo met de gezamelijke kennis tot betere broodbakkers te worden én voor de gezelligheid natuurlijk. Voor ieder recept zal iemand de 'Keuken van de maand' zijn en het recept plaatsen, terwijl verder iedereen op zijn eigen blog de resultaten laat zien van het brood van die maand. Het is heel goed te zien, dat er geen één brood hetzelfde wordt, ondanks dat iedereen hetzelfde recept gebruikt.

Deze maand is het "Royal Crown Tortano" uit Maggie Glezer's "Artisan Baking" met Karen alias Baking Soda van
Bake my Day! als keukenprinses. Zij had dat brood al eens eerder gemaakt en ik ook. Hier staat het recept in het Nederlands. Dat was al ruim twee jaar geleden zag ik. Ik herinner me vaag dat het een knol van een brood was, dat nauwelijks te temperen was met rijzen. Ik vermoed dat ik toen stiekem meer gist heb gebruikt, want het rees nu voor geen meter!

Deze keer heb ik het recept precies gevolgd, dus geen extra meel toegevoegd, niet gesjoemeld met de hoeveelheid gist... het enige wat wel anders werd: -de rijstijd, die zou aan het eind zo'n 1,5 uur zijn... maar na 4 uur was er nog nauwelijks beweging in: een platte zware pannenkoek met een gat. Beide hebben dus ongeveer 4 uur een laatste rijs gehad. Bovendien heb ik het ook niet op de kop laten rijzen, want het deeg was door de nattigheid zo moeilijk hanteerbaar, dat ik het maar zo heb laten liggen. maar met twee verschillende meelsoorten.


Dus op de foto's zie je steeds de broden met
- links: "Farina d'oro doppio 00", met 14% eiwit.
- rechts: biologische franse T55 bloem. (Met hartelijke dank aan Aranka van Koken in de buurt!) Die ziet wat grijzer. Deze bloem is wat minder sterk, maar toch werden bij dit brood de gaten mooier en de smaak was echt een groot verschil, véél lekkerder.

Mocht het toch niet smaken (onvoorstelbaar!), dan kan je er altijd nog een hanglampje van maken....schijnt zo gezellig door..;-))))

Mooi brood geworden, wat leuk om het verschil in meel zo duidelijk te zien, jammer dat ik het niet kan proeven!
Blijft fascinerend hoe 1 recpet met verschillende soorten meel (en/of bakkers) toch anders wordt.

Love that you tried the recipe with the two flours, I want to do that from time to time! It certainly made a difference in your two loaves.
I think we all were impressed with how slow or if at all this dough rose but it sure show great oven spring!

Ik haal mijn meel op diverse plaatsen, het meeste van hoeve eiteweert (matsloot groningen), bij de molen, ik neem zelf diverse pakken meel mee uit Italië als ik op vakantie ben... eigenlijk waar ik mijn handen maar op meel kan leggen dus... Maar voor meel in je buurt kan je vaak het beste terecht bij een molen, even surfen op internet. Ik zie graag broden tegemoet op je blog... eerst zoete broodjes bakken natuurlijk ;)))

Bedankt marleen, dat wil ik zeker graag weten. Ik kan alleen niet zien wat er fout staat,'reacties toestaan' staat wel goed aangevinkt, misschien dat er een storing is of zo. Ik kan zelf wel een comment plaatsen, maar ja dat komt dan misschien omdat ik ben ingelogd, misschien wil je het later nog eens proberen om te kijken of het werkt? vast bedankt!!
