Appelkoekjes

Het wordt weer eens tijd voor wat koekjes, tja dan ga je eens snuffelen in allerlei boeken, daarmee ben je dan de eerste tijd al zoet ;-). Sinds enige tijd ben ik in het bezit van dit boek: "Bob's Red Mill baking book" met veel volkoren en verschillende graansoorten. Ik zal hier binnenkort wat meer over vertellen, maar kan nu al vast zeggen dat de koekjesrecepten bijzonder goed in de smaak vallen. Zo ook deze koekjes gemaakt met stukjes gedroogde appel. De koekjes zijn heerlijk bros en knapperig.

Appelkoekjes
(± 30 koekjes)
150 g boter (of margarine), zacht
150 g fijne kristalsuiker
2 eierdooiers
140 g volkoren tarwemeel
140 g bloem
2 tl bakpoeder
1/2 tl kaneelpoeder
1/4 tl piment
1/8 tl gemalen kardamom
100 g gedroogde appel, in kleine stukjes
2 el melk

Verwarm de oven voor op 190ºC en bekleed twee bakplaten met bakpapier.

Klop de boter en suiker samen luchtig in een grote kom (met de mixer gaat dat het makkelijkste). Voeg dan de dooiers toe en klop het goed door.
Meng in een andere kom het meel, bloem, specerijen en bakpoeder en voeg dit bij het botermengsel samen met de appelstukjes. Meng dit tot het net samenkomt.

De 2 el melk zijn er voor als het deeg te droog is (hangt af van het meel).

Vorm op een werkblad het deeg tot een bal en rol het uit tot ongeveer een halve centimeter dikte.

Steek hieruit vormpjes (of snijd er rechthoekige of vierkante stukken van) en leg die op de bakplaten. Bak ze in de voorverwarmde oven tot ze goudbruin zijn (ongeveer 15 minuten). Laat ze dan verder op een rooster afkoelen voor je ze in een goed afsluitbare trommel bewaard.

Eet smakelijk!

Apple Cookies

Recently I bought "Bob's Red mill baking book". I'll review this book soon, but for now I'll just mention that the cookie recipes in the book are really good. Like this example; the apple cookies. Made with dried apple pieces and apple spices. They are very crispy and full of applepie-flavour.
10 TBSP butter, softened
3/4 cup sugar
2 egg yolks
1 cup whole wheat flour
1 cup unbleached white flour
2 tsp baking powder
1/2 tsp ground cinnamon
1/4 all spice
1/8 tsp ground cardamom
1/2 cup dried apple, chopped
2 TBSP milk (only add if the dough turns out a little too dry)



Preheat the oven to 375ºF and cover two bakingsheets with parchment paper.
Cream the butter with the sugar in a large bowl until light, then beat in the egg yolks.
Sift together the flours, baking powder, spices and apple pieces and add to the butter mixture until just combined.
(add the milk only if the dough seems too dry)

Put the dough on a workingsurface and form quickly into a ball. Roll the dough to 1/4 inch thickness. And cut out cookies in the shapes you like. Place them onto a prepared baking sheet and bake for about 15 minutes until lightly browned. Don't take them out before they're done or you'll wind up with soft cookies. Cool on a wire rack.

Oh Lien, that looks amazing! I love, love, love to bake with apple (and cinnamon) but it's always tarts and pies and cakes. Never thought of using dried apples for cookies. Brilliant!

Note to self: buy dried apple slices next monday ;-)

Op je foto is al te zien dat ze lekker bros zijn :-)

OT: dat moet een echt godinnetje zijn met die naam ;-)
