Bread Baking Babes go Indian

Lynn ("Cookie Baker Lynn"), our lovely hostess of Januari's kitchen, choose Naan for us to bake. I never made that before, I remember seeing then being made on TV in a special Tandoor oven in a Indian restaurant, quite spectaculair. Of course we have to take a short cut, as I don't think many of us will have a Tandoor oven at hand. So just on a griddle or a large frying pan.

As naan normally accompanies meals, I made a wonderful spiced soup to go with it (later this week I'll post about that!). I made the curried naan with raisins that went very very well with the spiced soup. I haven't come around making the plain naans, but hope to make those too in the near future. But the curried naan got nothing than praise from the family here (as the soup did too) and they're (that is the kids) are not the easiest eaters in the world to say the least. Right away came the request to make them again. But in all honesty (even if it doesn't sound modest at all) they were really good.

Curried Naan bread(makes 4 naan)Naan with curry (p.73)

PRINT recipe)
scant 4 cups white bread flour, plus extra for dusting
1-1/2 tsp salt
1 Tbsp olive oil, plus extra for frying
2 Tbsp mild curry powder
1/2 oz / 15 g. package compressed fresh yeast*
1-1/4 cups water
generous 1/2 cup (golden) raisins
3 Tbsp mango chutney

* If you are using instant or dry yeast, reduce the quantities a little (I used 1 tsp)

1- Put the flour, salt, oil, curry powder, yeast, and water into a bowl and mix together for 2 minutes. Tip out onto a lightly floured counter and knead for 5 minutes, or until the dough is soft and pliable. Let rise for 30 minutes.

2- Line a baking sheet. Incorporate the golden raisins and chutney into the dough. Divide the dough into six pieces, then put on the baking sheet and let rest for 1 hour.

3- Turn the dough out onto a lightly floured counter and, using a rolling pin, flatten each piece into a circle, 25.5 cm / 10 inches in diameter. Put back on the sheet and let rest for 5 minutes.

4- Heat a skillet to medium heat and add a splash of olive oil. Shallow-ofry each dough until browned on both sides, then set aside to cool slightly before serving.

Plain Naan

- makes 3 naan (I've made 4)
scant 4 cups white bread flour, plus extra for dusting
1-1/2 tsp salt
1/2 oz / 15 g. package compressed fresh yeast*
water to mix
1 tsp cumin seeds
1 tsp caraway seeds
olive oil for frying

1- Line a baking sheet. Put the flour, salt and yeast into a bowl and add enough water to make a soft, but not sloppy dough. Add the seeds, then divide the dough into three pieces and put on the baking sheet. Let rest for 1 hour.

2- Turn the dough out onto a lightly floured counter and, using a rolling pin, flatten each piece into a circle, 10 inches / 25.5 cm in diameter, and let rest for 5 minutes.

3- Heat a skillet to a medium heat and add a splash of olive oil. Shallow-fry each naan until browned on both sides, then set aside to cool slightly before serving.

De Bread Baking Babes houden van reizen, want er zijn al uit diverse landen broden gebakken en deze maand gaan we naar India. Lynn ("Cookie Baker Lynn"), onze gastvrouw van de Januari keuken dit keer, koos Naan om te bakken. Ik heb het ooit wel eens op de TV gezien dat ze dat in een Tandoori oven bakken, maar zelf had ik nooit naan gebakken. Natuurlijk heeft de doorsnee mens geen Tandoori oven in zijn keuken gemetseld, dus doen we het in een pan.
Normaal gesproken is Naan een vaste begeleider bij maaltijden en daarom heb ik heerlijke soep met specerijen gemaakt die er perfect bij paste. Over deze soep zal ik later deze week een bericht plaatsen. Ik heb de naan met kerrie en rozijnen gemaakt en die ging erg goed samen met de gekruide soep. De gewone naan heb ik (nog) niet gebakken, maar hoop dat in de komende tijd nog eens te doen. De kerrie naan kreeg samen met de soep niets dan complimenten, terwijl ze (lees: de kinderen) toch niet altijd zulke makkelijke eters zijn.


Probeer het ook eens, het is niet moeilijk of tijdrovend en met een pittig gerecht en warm geserveerd bij het avondeten heb je een topper! Wordt een Bread Baking Buddy en stuur je naanavonturen naar Lynn voor 26 januari, zodat zij ze bij elkaar kan plaatsen en je de andere naan baksels ook kan zien. Naan met kerrie

(4 stuks)
Naan met kerrie
(recept PRINTEN)
500 g bloem
1 tl zout
1 el olijfolie (+ extra voor het bakken)
15 g mild kerriepoeder
15 g verse gist (of 5 g instant droge gist)
3 dl water
100 g rozijnen
3 el mangochutney

Kneed de bloem, zout, olie,kerriepoeder, gist en water tot een soepel deeg en laat het 30 minuten afgedekt rijzen.
Werk de rozijnen en de chutney erdoor en verdeel het in 4 stukken. Leg ze op een bakplaat bedekt met bakpapier en dek ze af met ingevet plastic en laat ze een uur rusten.

Rol elke stuk met een deegroller uit tot een ronde lap van ongeveer 28 cm doorsnede. Leg ze weer op de bakplaat (dek af) en laat nog een paar minuten rusten.
Verhit een koekenpan op matig vuur en doe er wat olijfolie in. Bak de broden aan beide kanten goudbruin en serveer warm bij de (Indische) maaltijd.

when we lived in calgary we used to go to an indian restaurant that had a camera in the kitchen at their naan oven so you could watch them make and cook the naan when it was ordered.
