BBD #21

engels.amer klein Am I still in time? Yes I am (just). Now it seems that my computer woes are over, I had and have to catch up with lots of things. One of them is Bread Baking Day #21, that is celebrating its two-year anniversary. Founder of this great event is Zorra and she hosts this special edition too. "PIZZA"!
So guess what we had for dinner last night. Great weather, an outdoor dinner and what can be better than pizza?

It's all about the dough here. I have to make different toppings for the kids (lots of stuff they won't eat or can't eat because of allergy) so I concentrate on the crust. I used to bake round pizza's but now it almost always sheetpizza's, because I can fit those in the oven at the same time and that means we can eat at the same time.

I don't seem to have a favorite pizza dough, cause I make them different all the time. It just should be crispy and not too thick. I baked a pizzarecipe a few weeks ago that had butter in it (don't let the Italians hear that!) and it was really really good. But the addition of olive oil works for me too, it makes it more elastic somehow.




I also put herbs in the dough, so the crust has some extra flavor too. It 's also a nice idea to put garlic-paste into the dough, it won't burn and get bitter that way (which can happen if you put it on top). My favorite topping when I go to a pizza place is just tomato, basil, mozzarella and grated cheese (sometimes with mushrooms), for me a stone oven baked pizza doesn't need more. At home we just look what we have in the fridge.


Cornmeal pizza dough with fresh herbs
(makes 4 large round pizza's or two sheet pizza's)
Pizza (cornmeal dough) with chestnut mushroom, mozzarella, tomato and smoked salmon.
(PRINT recipe)
580 g pizza flour
100 g cornmeal
1 1/2 tsp salt
2 tsp dry instant yeast
5 TBsp olive oil
360-400 g handwarm water
10 g fresh herbs (parsley, rosemary, basil and oregano) torn or chopped
Place flours, salt and yeast into a large mixing bowl. Stir to mix. Add the olive oil and mix.
Add the herbs and enough water to knead into a souple and elastic dough.
Place in a greased bowl, cover with plastic and let rise for 45-60 minutes until doubled.

Divide the dough into four if you make 4 individual round pizza's or into two when you make 2 rectangular sheet pizza's (one for 2 persons each).

Spray or grease the middle part of the baking sheets, don't spray the edges so your pizza won't slither back when you stretch it out.

Flatten the dough with your hand and let it relax (work on the next pizza while the former one relaxed) so you can stretch it without tearing it.

As for the topping... whatever you fancy or is in your fridge. You know what you like best!
Don't make the topping layer to thick or you may end up with a soggy pizza bottom.

Bake in a very hot oven (preheated 460ºF) on a stone or if you bake more pizza's in one go (as we do here, place one bakingsheet on a rack in the top and one on the stone on the bottom of the oven, use the van-oven on 400ºF until golden and crispy. (about 15 minutes depending on your topping and your oven.

Ben ik nog op tijd? Ja, nog net. Het lijkt erop dat mijn computerdrama weer even over is. Ik kan alles weer vinden en kan weer aan de slag. Ik moet heel wat bijwerken en inhalen na deze tijd van computerstress. Eén van die dingen is de Bread Baking Day #21, die ondertussen alweer 2 jaar succesvol is. De bedenkster en ook de hostess van deze maand is Zorra en ze koos voor deze feestelijke aflevering "PIZZA"!
Rara dus was we gisteren hebben gegeten, heerlijk weer, dus buiten aan de pizza, wat wil een mens nog meer?

Ik heb het vandaag eigenlijk alleen over het deeg. Ik moet toch altijd verschillende toppings maken voor de kinderen (de één lust dit niet en de ander mag dat niet), dus ik concentreer me maar op de korst. Ik bakte altijd ronde pizza's, maar tegenwoordig maak ik twee grote plaatpizza's die tegelijktijd in de oven kunnen (met hetelucht) zodat we tenminste tegelijk kunnen eten.

Ik heb niet echt een favoriet deegrecept voor pizza, ik gebruik om de haverklap een ander. Het moet alleen niet te dik zijn en wel lekker knapperig. Ik bakte een poosje geleden nog een recept waar flink wat boter in ging (laat de Italianen het maar niet horen!)...dat was me toch lekker! Maar met olijfolie kan ik ook goed uit de voeten, het deeg wordt er lekker elastisch en smaakvol van.
Ik doe ook vaak verse kruiden in het deeg zelf, zodat ook de korst er lekker uit ziet en smaakt. Het is ook erg lekker om wat geperste knoflook in het deeg te doen, dan voorkom je meteen dat het verbrandt (en bitter wordt) als je het boven op legt.

Toch nog even mijn favoriete toplaag vermelden: tomatenprut, mozzarella, basilicum en parm kaas erover geraspt (eventueel met wat champignons), meer dan genoeg voor een echt steenovenpizza (vooral dus bij het eten in een pizzeria). Thuis is het ook een kwestie wat er in de koelkast ligt... met tonijn ook erg lekker, of gekruid gehakt.... ach gewoon wat dan in je opkomt en aanwezig is.


Pizzadeeg met maismeel en verse kruiden
(voor 4 grote ronde pizza's)Pizza -cornmeal crust with herbs
(recept PRINTEN)
580 g pizza bloem
100 g maismeel
1 1/2 tl zout
2 tl droge gist
5 el olijfolie
360-400 g handwarm water
10 g verse kruiden (zoals peterselie, rozemarijn, basilicum en oregano) in grove stukken
Doe de bloem, maismeel, zout en gist in de kom van de standmixer, roer het door. Voeg daarna de olijfolie toe en meng het erdoor. Doe dan de kruiden en genoeg water erbij om een soepel en elastisch deeg te kunnen kneden. Vorm tot een bal en leg het in een ingevete kom, dek af met plastic en laat 45-60 minuten rijzen tot het verdubbeld is.

Verdeel het deeg in vieren als je vier ronde pizza's maakt of in tweeën als je twee grote plaatpizza's maakt.
Spray (of vet licht in) het midden van de bakplaat in, maar niet de randen. Zodat je pizza niet wegglijdt als je hem probeert uit te rekken. Op de niet ingevette delen blijft hij dan makkelijker plakken zonder terug te springen.

Druk het deeg plat en met je vingers zo ver mogelijk uit, laat het tussen door rusten zodat het niet steeds terug veert en je het uit kunt rekken zonder dat het scheurt. Ondertussen ga je dan verder met het vormen van één van de andere bodems.

Dan voor de toplaag... gewoon kiezen wat je het lekkerst vindt (of wat in je koelkast hebt). Ieder zijn eigen voorkeur. Maak de toplaag alleen niet te dik anders heb je kans dat je bodem soppig wordt (zeker met te veel producten die vocht afgeven)

Bak de pizza's in een hele hete oven (voorverwarmd op 250ºC) op een ovensteen of als je er meer tegelijk wil bakken met de heteluchtstand op 200-210ºC0 tot de pizza knapperig en goudbruin is. (ongeveer 15 minuten, afhankelijk van je topping en oven)

This is a great pizza dough recipe! I will try it! It does look so flavorful. We also like our pizzas à l'italienne and quite simple. So this dough must really add something great. It really looks like it works well there, too. Perfect!

Don't know where I came up with the herbs in the crust thing but it's made me happy ever since. Love seeing that other people do that too.
Pizza's just good anytime and everytime.

Those simple toppings are my favorite too. The herbs and garlic past in the crust are a great idea. I'm glad your computer troubles are behind you!

I honestly never seen Pizza flour before. I should look harder when I go to grocery store. Seriously your pizza look so good Lien. Love the topping very much!

Your pizza looks great.
I also found that one should be careful with the amount of topping to avoid a soggy pizza. Next time I must try to add some herbs to the dough.

Dear Lien,
once again you came up with a great recipe! The pictures are wonderful...made me hungry just to read the post...!
I loved the idea of cornmeal, and what a coincidence, my recipe also uses it!
Your topping looks great too!
To avoid the soggy dough I always pre-bake the pizza withou topping...and then I put the sauce,cheese and whatever I feel like, then take to the oven once again just to melt the cheese and get the crunch!
