Strawberries

engels.amer klein Spring is trying it's best to creep in. Isn't it amazing how quick you get used to those sunny days that make you think it stays that way from now on. But hey spring is 'springy' in its moods and gives you cold and rainy days right after a day of sipping drinks on terraces in town. But it's great to see everything getting fresh green again in nature.

It's really a bit to early for strawberries here, they're not as red and as sweet as they should be and will be later in season. The strawberries in our garden are in bloom, so that'll take a while before they bear fruit. But I couldn't resist buying them in the shop anyway, I guess my longing for summer is too strong. They are a bit sour to enjoy just like that, so I used them in a wonderful dessert with quark. I found this recipe in a book in the library... as if I haven't enough recipes in my own books, clippings and magazines, always on the prowl for more recipes. I loved the look of this one right away... and it was totally delicious.

Strawberry-Quark Terrine

(serves 8) (PRINT recipe)

500 g strawberries
300 g quark (you can also use all Greec yogurt if you can't find quark)
100 g Greec yogurt
5 sheets of gelatine
50 g sugar
200 ml whipping cream
50 g icing sugar

Clean the strawberries and cut half of them in tiny pieces. (leave the rest whole).
Soak the gelatine sheets in cold water.

Mix quark and yogurt in a larg bowl.
Heat 3 TBsp of cream in a small saucepan and whisk the gelatine leaves in one by one, until totally dissolved. Stir this mixture in the quark until well mixed. Add sugar and chopped strawberries and gently fold them in.

Beat the cream with the icing sugar stiff and fold that into the quark-strawberry mix.

Line a terrine (or loafcake tin) with clingfilm. Scoop half of the mixture in, place the whole strawberries on top (all lengthwise) and top with the rest of the mixture. Even out the top, cover with clingfilm and place in the fridge for at least 3 hours (you can also make this 1 day ahead).

Turn the terrine on a serving platter with care, peel off the clingflim and cut into thick slices with a sharp knife. Serve just like that or with some whipped cream or a strawberry coulis.

Vlag nl klein Aardbeien

De lente doet hard haar best alle kou te verdringen. Verbazend hoe snel je gewend raakt aan die zonnige dagen, het lijkt net of het meteen zo blijft. Maar april doet wat hij wil en mei is eigenlijk net zo, dus na een middag in de zon op een terrasje kun je zomaar weer een koude en natte dag krijgen. Maar het is heerlijk alles weer zo fris groen te zien worden in de natuur om ons heen.

Het is eigenlijk nog iets te vroeg voor aardbeien. In onze tuin staan ze nu in bloei, dus dat duurt nog wel even voor we kunnen plukken. En in de winkel zijn ze nog iets te zuur, gelukkig verbetert dat over een poosje, maar toch kon ik me niet inhouden ze al te kopen, ik denk dat mijn verlangen naar de zomer zich niet meer in kon houden.
Ik heb ze gebruikt in een heerlijk dessert met kwark en yoghurt, lekker fris. Ik vond het recept in een boek uit de bibliotheek.. alsof ik nog niet genoeg recepten uit mijn eigen boeken, knipsels en tijdschriften heb! Maar ik blijf toch altijd op jacht naar lekkere recepten en dit is daar zeker één van. Ik viel meteen voor het plaatje dat er zo heerlijk zomers uitzag... en het is inderdaad verrukkelijk!

Aardbeien-Kwark Terrine
(8 pers) (recept PRINTEN)

500 g aardbeien
300 g kwark
100 g griekse yoghurt
5 gelatine blaadjes
50 g suiker
200 ml room
50 g poedersuiker

Maak de aardbeien schoon en verwijder de kroontjes, snijd de helft in kleine blokjes (laat de rest heel). Week de gelatineblaadjes in koud water.

Roer in een kom de kwark en yoghurt in een kom door elkaar.
Verwarm 3 el room in een klein pannetje en klop daar met een garde één voor één de uitgeknepen gelatineblaadjes door, tot ze helemaal opgelost zijn. Klop dit mengsel door de kwark. Voeg dan de suiker en gehakte aardbeien toe en schep voorzichtig door.

Klop de slagroom met de poedersuiker stijf en schep dat door het kwarkmengsel.
Bekleed een vorm (bijv. een cakevorm) met huishoudfolie.
Schep de helft van het mengsel in de vorm en leg nu de hele aardbeien in de lengterichting op die laag. Schep de rest van het mengsel erover, strijk glad en dek af met huishoudfolie.
Zet de schaal minstens 3 uur in de koelkast om op te stijven (je kunt dit ook de dag van te voren doen).

Keer de terrine op een serveerschaal en snijd er met een scherp mes plakken van. Serveren met bijv. slagroom of aardbeiensaus.

what a delicious dessert. It has been cold in California and I haven't seen any of the best strawberries yet. I am not sure why I never made these type of dessert, I must give them a try after your inspiration.

We are getting local gariguette fraises (strawberries) that are quite good, very flavorful, but hubby says they must be hot house berries. Oh well, I have been buying them anyway. This dessert is so pretty to look at and what a wonderful, sweet, yummy way to serve strawberries!

Shouldn't we always give into spring, especially when it's this good to eat ;o)
For some reason even the name of this one is extra inviting or maybe it's the exotic sound of quark terrine. Wish I had some now.

I've no experience with the use of gelatine but this recipe will be a good first try.

It sounds so fresh, not much sugar, mostly strawberries and quark/yoghurt. Have to try this when the Swedish strawberries start to come. But will be another month, I'll probably cheat with Belgian, or Spanish berries.
