Bramen

Mijn vader (77) heeft een bramenstruik in de tuin, nou ja "struik" klinkt wat wilder dan het is. Hij heeft een muur op het zuiden waar bramenranken langs geleid zijn. Hoewel het er niet als heel veel uitziet, komt er een machtige partij bramen vanaf. Jarenlang heeft hij er sap van gemaakt en van het sap potten jam... héél veel potten jam. Nou is het niet zo dat hij zelf gek is van bramenjam, volgens mij waren wij vroeger thuis al nooit echte jam-eters. Bovendien mag hij het ook eigenlijk niet hebben omdat hij zijn suiker in de gaten moet houden.

Dus kreeg iedereen die langs kwam een pot jam, meestal meerdere. Thuis zat je je dan af te vragen hoe je die potten in vredesnaam op kreeg, aangezien wij hier weer geen echte jam-eters zijn. En als je dan al jam eet, tja dat wil je ook wel eens wat anders dan bramenjam. Dus meestal stonden de potten nog in de kast, als je bij het volgende bezoek alweer met een nieuwe lading terug kwam.
Ook mijn vader begon natuurlijk te merken dat het soms gefingeerde enthousiasme voor de jam, waar hij toch heel wat werk aan had (al was het maar het schoonmaken van de keuken naderhand), afnam en knipte toen maar een deel van de bramenranken weg om wat minder oogst te krijgen. Er zal vast minder afgekomen zijn, maar voor ons gevoel bleven de potjes onverminderd komen.

Uiteindelijk besloot mijn vader toch maar te stoppen met het maken van jam (er ging hier een stil gejuich op..). Maar ja weggooien kon hij ze natuurlijk ook niet en dus vroor hij ze zo in, tot er een iemand langs kwam aan wie hij ze kon slijten. Ik zei dat ik wel eens wat mee wilde nemen om er wat mee te bakken. Dat hoefde ik niet twee keer te zeggen, en bij het volgende bezoek moest ik dan maar de koelbox meenemen.
Op de terugweg zaten er twee kilo ingevoren bramen in. Ik heb er o.a. heerlijke bramencake en -taart en ruim twee liter bramensorbetijs van gemaakt. En een aantal malen bramenpudding om tot het juiste recept te komen. Maar in ieder geval gingen de bramen er door, en ook nog op een smakelijke manier!

Vorige week waren we weer bij mijn vader ("Je hebt toch wel een koelbox bij je hè?!").... ik heb nu weer ruim twee en halve kilo bramen in de vriezer staan. Iemand nog een origineel idee???


Hieronder staat het recept van een heerlijke bramenpudding, die zo heerlijk luchtig is dat hij op in je mond gewoon oplost. Het is meteen het recept voor frambozenpudding (foto links), aardbeien-, mango- of zwarte bessen pudding. Etcetera... je verandert gewoon het fruit. Zeef wel altijd eventuele pitjes eruit, want dat voelt toch wat lekkerder in je mond...
Eet smakelijk en oogst met mate!

Bramenpudding
(1 pudding van ± 3/4 liter of 6 kleine vormpjes)
(recept PRINTEN)
± 300 g bramen (in totaal moet je 200 ml bramenpuree krijgen)
1 el citroensap
125 ml slagroom
3 blaadjes gelatine
50 ml water
75 g suiker
(voor decoratie eventueel wat extra bramen en/of slagroom)
puddingvorm(pjes)

Werk de bramen door een (draai)zeef en meet 200 ml bramenpuree af, doe hier het citroensap bij. Klop de slagroom stijf. Week de gelatine blaadjes in koud water (ongeveer 5 minuten).
Verwarm de suiker met het water tot het opgelost is. Klop met een garde snel de geweekte en uitgeknepen gelatine blaadjes door de warme siroop en giet het bij de bramenpuree. Schep dit voorzichtig door de geklopte slagroom. Spoel de vorm of vormpjes om met koud water en giet het mengsel erin. Zet in de koelkast tot het opgesteven is.
Voor het serveren het bovenste randje even met een mesje losmaken, de vormpjes even in warm water houden en dan op borden storten, eventueel decoreren met nog wat verse bramen en slagroom. Eet smakelijk!

Blackberries


My father (77 and still going strong) has got a black berry bush in his garden. Well bush sounds a bit too much probably, more like some twines that grow along a wall facing the south. And though it doesn't looks or sounds like much, it produces loads of blackberries. Several years he made them into (seedless) jams... and lots of jars were produced. It's not like he is crazy about blackberry jam himself, as kids we weren't a jam-eating family anyway. And in fact he himself isn't even allowed to eat any, so his sugar levels don't go up and down too much.
So everybody who came to visit went home with a jar of blackberry jam.. well that is to say: several jars. At home I always wondered how in the world I would empty all these jars, as we're still not a jam-eating family. And on the occasion we did... we don't want to eat blackberry jam all the time. So most of the jars were still in the cupboard when we returned with even more jars from our next visit.

My father started to notice that our enthousiasm became less for his jam, which cost him quite a lot of work to make (and clean the kitchen afterwards!) and so he decided to trim the blackberry down drasticly to harvest less. There was probably less, but we still had the feeling that the jars kept on coming.


In the end my father decided to stop making the jam altogether (silent cheers here in the house). But throwing them away or letting the birds eat them was no option of course, so he froze them as they are. Waiting for someone to come by, that had some use for them.

So I told him I wanted to take some home to bake a pie with it. That didn't have to be repeated, I just had to bring the cool box with me. And so on our way back I carried over two kilo's of frozen blackberries with me.

I baked, amongst other things, a delicious blackberrie pie, blackberry cake and made two liters of blackberry sorbet. I also experimented with a blackberry pudding, until I got the right consistancy. And finally I used them all in a tasty way!

Last week we were at my father's again ( "I hope you brought your cool box!"). I now have over two kilo's of blackberries in my freezer...again. Any original recipes anyone???

I give you my recipe for a lovely blackberry dessert, so light, it melts in your mouth. And it is a recipe for raspberry pudding (photo on the right) as well, or for mango, strawberry pudding.... use the fruit of your own choice, just sieve out the pips if there are any. Enjoy!

Blackberry pudding
(about 3/4 liter pudding or 6 small pudding molds)
(PRINT recipe)
± 300 g blackberries (to end up with 200 ml blackberry purée)
1 TBsp lemon juice
125 ml whipping cream
3 sheets of gelatine
50 ml water
75 g sugar
(some extra blackberries and/or cream for decoration optional)
and pudding molds (1 large or 6 individual ones) or use small coffee cups.


Pass the blackberries through a sieve to remove the pips and add the lemon juice. Whisk the cream until stiff and set aside. Place the gelatine sheets in cold water to soak for about minutes. In the meantime heat the water and the sugar in a pan and stir until the sugar is dissolved.

Quickly whisk in the soaked gelatine sheets (water squeezed out of them) one by one until dissolved and pour into the blackberry purée. Fold it into the whipped cream. Rinse the molds with cold water before pouring the mixture in and place in the fridge until set.

To serve; place the mold(s) in warm water for a minute or so and turn out on a plate. Garnish with some extra blackberries and/or cream. Enjoy!!

Mja, ik zou denken aan bramenlikeur. Hele bramen wegzetten met randewijn en suiker, paar maanden laten staan en zeven. Kan je met kerst je bramenmousse of vanilleroomijs ermee opluisteren.

Golly I love blackberries.
Simplest and bestest thing I know with blackberries ( actually two):
One blackberry smoothie: yogurt, blackberries, banana, vanilla(beans if you are extravagant) and a little honey. blend it smooth if blackberries & bananas are frozen it's thick and seems really rich.
Two blackberry tassie: blackberries & buttermilk. blend it smooth.

@Koken in de buurt: ja dat is een goed idee. Ik kreeg gisteren van iemand een recept toegestuurd van "creme de mures" (en creme de cassis).
ik vond ook nog een leuk recept van een bramen-vinegrette en een chutney. Dan is het wel handig dat je bramen ingevroren zijn, dan kan je tenminste rustig één voor één wat uitproberen.

Oh my word, those all look wonderful inviting! You know, that was very sweet of you all to not let your father know that you didn't like the jam as much as just having the berries to make desserts with, but wasn't it nice when he noticed and rather than being offended he simply gave the berries to all of you? It's so tricky with families some time but what a wonderful gift. I bet the desserts were all the "sweeter" from having come from your father's garden.

Ooh komt me zo bekend voor! Maar dan ben ik degene die jam maakt. Ik vind het zo leuk om te doen maar wij zijn hier ook helemaal eigenlijk geen jameters, hihi. Lief van je vader, de pudding ziet er erg lekker uit!

@ Glenna, you're so right that it's sometimes delicate how you react in family matters. My father always supplied our family (of 6) with vegetables from his own vegetable lot, when we were kids, this is the only homegrowing left, so that is special. I'm glad he's still around, healthy and active! It's just a shame I can't let his taste all the goodies because of his sugarlevels. But he really enjoys it when I tell him all the stuff I made with the blackberries:))

@Baking Soda, ja dat maken vind ik zelf ook zo leuk... eigengemaakte jam, moes en chutneys op de markt brengen, met zelfgemaakte etiketten en zo leek me altijd het einde, maar ja daar zijn er zoveel van helaas...

The blackberries is the freezer are much better, now I can use them for all sorts of things.. I could even make jam :)
