Bread Baking Day nr.7

Het gaat de laatste paar berichten steeds over brood en deze keer is daar geen uitzondering op. Het is namelijk alweer bijna de deadline voor de inzending van de 7e editie van Bread baking day, gestart door Zorra en deze keer is onze hostess Petra van
Chili & Ciabatta. het thema is deze keer "Flatbreads", tja ik weet daar zo geen Nederlandse beschrijving voor. Platte broden... maar ja dat klinkt ook zo.... nou ja plat. Maar jullie begrijpen wel wat ik er mee bedoel; crackers, pita-broden, focaccia, roti, etc. etc.
Overal waar ik kom speur ik naar meelsoorten. Ondertussen weten we wel dat het een afwijking is, maar zolang het niet erger wordt dan houden we het wel vol ;). Zo kocht ik ergens een zak Chapatti flour. Ik weet nog nét wat chapatti's zijn. maar heb verder niet veel verstand van de Indiase keuken. ik heb wel eens een curry gemaakt, maar dan heb je het ook wel gehad.
Chapatti's zijn platte pannenkoek-achtige 'broden', die je eet bij de maaltijd. Bij curry's, stoofpotten etc. Het chapattimeel wordt ook wel 'attameel' genoemd en is een volkorenmeel, maar dan héél fijn gemalen. Als je dit dus wilt maken en je hebt niet zo'n vreemde meel-aankoop-tik als ik (of je kunt het gewoon niet vinden bij de toko), gebruik dan het fjjnste volkorenmeel dat je kan krijgen. Het maken is verder heel eenvoudig.

Chapatti's
(± 8 stuks)
260 g atta- of chapatti meel (event. zeer fijn volkorenmeel)
snufje zout
1 tl olie
± 170 g lauw water
Voeg het water geleidelijk bij de andere ingrediënten en kneed het tot een zacht en elastisch deeg. Laat het in plastic ongeveer 15 minuten rusten.
Deel het deeg in 8 gelijke stukken en rol elk stukje uit tot een dunne ronde pannenkoek.
Zet een zware koekenpan op hoog vuur en als hij heel heet is kan het naar medium/hoog vuur.
Bak de chapatti's hier in aan beide kanten tot ze bruine vlekken hebben (ongeveer 30 sec. per kant). Ze zullen zich ook vullen met hele lucht en opblazen, je drukt ze gewoon weer plat in de pan met een spatel.
Bak ze zo één voor één en serveer ze met een heerlijke stoofpot, soep of iets dergelijks.

*TIP: heb je wat chapatti's over van de vorige dag? Niet weggooien omdat je ze wat droog vindt...
Bestrijk één kant met wat tomatensaus (of ketchup), wat kruidenkaas, vleeswaren, gerapte kaas of mozzarella, basilicum.. of andere restjes uit je koelkast. Leg er een andere chapatti boven op, pak het in in alufolie en leg 10 minuten in de hete oven. Snijd in partjes en je hebt een heerlijk voorafje of snack tussendoor. Eet smakelijk!!

It's all about bread these last entries on this blog. And here's another one, because tomorrow is the deadline for posting an entry for the 7th Bread baking Day, initiated by Zorra and this time hosted by the very talented Petra from Chili & Ciabatta. Theme is Flatbreads this time.. I like it, good choice!

I always look for different things in the shops to use for baking. Also flours have a great attraction. Yes I know it's a bit of a aberration, but hey, as long as it doesn't get worse, it's OK. And so I bought a bag of Chapatti flour. It is used to make chapattis of course. I knew what they are, a flat pancake like bread, baked on a griddle. But I must admit I don't know much about Indian cuisine. A curry is about all. You eat the chapattis with your meal and it goes very well with things like curries or stews. The flour is also called atta flour and is a very fine ground whole wheat flour. So if you want to make these and you can't get hold of this flour, use very fine whole wheat flour. Making them is a simple as it gets.

Chapattis(± 8 pieces)
2 cups atta or chapatti flour (or very fine ground whole wheat flour)
large pinch salt
1 tsp cooking oil
± 2/3 cup + 2 tsp tepid water
Gradually add the water to the rest of the ingredients and knead it into a soft and elastic dough. Cover with plastic foil and let rest for about 15 minutes.

Divide the dough in 8 equal pieces and roll out the individual balls into thin pancakes. Cook on a heavy based frying pan, turning it over as soon as brown bubbles form. If they puff up, just press then down with a spatula. Cooking time for each chapatti is about 1 minute.


*TIP. Any left overs? Don't throw them out....here's what you can do with them. Spread some tomato sauce (or ketchup) on one side, look in your fridge and add the things you like; cheese, thin slices of meat, slices of tomato, mozzarella, some herbs.. and place another chapatti on top. Wrap in tinfoil and place in a hot oven 10 minutes. Cut into wedges and you have a great snack before dinner, with a drink or as an antipasto. Enjoy!!

Yes!! I love these chapatti. I made them years ago with an Indian dish with peas and fresh cheese. Love your idea for the leftovers!

Dat overal meel kopen komt me bekend voor ;-)
zit ook met een voorraad speciale Chinese bloemsoorten om bapao's mee te maken (ooit)... Bedoel je trouwens niet de Indiase keuken ipv de Indische keuken?

@ kattebelletje. Tja je moet wel in de gaten houden dat de meel niet te oud wordt, dat zou ook jammer zijn.
Ik heb het even nagekeken, Indisch verwijst volgens het woorden boek zowel naar - ...uit India, als naar - ...uit (voormalig)Nederlands-Indië.
Nu zou je iets uit de laatstgenoemde eerder Indonesisch noemen. Maar om verwarring te voorkomen heb ik het in deze post even veranderd.
