Pastinaak

Dit is een groente die misschien niet voor iedereen bekend is of regelmatig gegeten wordt. Toen ik nog een Odin groente-abonnement had zaten deze er regelmatig in. Onlangs was ik bij de Lidl, die ook wat meer biologische producten krijgt en zag tot mijn verrassing de (biol.) pastinaken daar gewoon bij liggen. Omdat ik niet zo vaak bij de Lidl kom (ligt erg onhandig uit de buurt) nam ik meteen maar twee verpakkingen mee. Ik weet dat ze heerlijk zijn om te roosteren samen met bijv. aardappel, pompoen en dergelijke. Maar deze keer wilde ik er eens wat anders mee doen. Voor wat ideeën zocht ik eens op de site van Odin, waar ik een leuk recept vond.

Pastinaakkoekjes
(als groente/bijgerecht voor 4 pers)
± 400 g pastinaak, geschild en fijn geraspt
(opt. voor wat extra kleur, rasp er nog wat wortel door)
2 eieren
2 el olijfolie
4 el Yofy (dat is een soya yoghurt) (of kwark of gewone yoghurt)
5 el boekweitmeel (of volkoren tarwemeel)
1 tl gemalen korianderzaad
2 el citroensap
peper
zout

Meng olie, yoghurt, eieren, peper, zout en koriander door elkaar. Meng de geraspte groente met het citroensap en meng ze met het meel en de overige ingrediënten.
Bak hiervan ongeveer 14 koeken door een flinke eetlepel in een hete pan met wat olie of boter te doen. Druk het mengsel plat tot een 1,5 cm dikke koek en bak het aan beide kanten bruin.

Omdat de groente van zichzelf een wat zoetige smaak heeft, is het lekker dit te combineren met een pittig gerecht, bijv. een pepersteak, pittige gehaktbal of iets dergelijks, samen met een frisse salade.
Eet smakelijk.

Parsnips

As I understand this is an easy available vegetable in England and Australia, I don't know about America, but here it is not often used. You can get a weekly filled bag from Odin here in the Netherlands with seasonal and organic veggies or fruit or a combination, if you sign up and pay of course. You pick it up at your greengrocer in the neighbourhood on a fixed day. I made use of this for a long time, (untill they changed the pick-up day) and in the winter this was a veg often to be found in the bag. Recently I found these parsnips even the organic ones, in a (cheap) supermarket Lidl. As I don't come there very often, I bough 2 packages. I know they are roasted very good, but I wanted to do something different with them, so I took a look on internet and found this one:

Parsnip cakes
(as vegetable/side dish: serves 4)
± 400 g parsnip, peeled and finely grated
(opt. a little grated carrot for colour)
2 eggs
2 TBsp olive oil
4 TBsp yogurt
5 TBsp buckwheat flour
1 tsp ground corianderseed
2 TBsp lemon juice
salt and pepper


Whisk oil, yogurt, eggs, coriander, pepper and salt in a bowl. Sprinkle the lemon juice over the grated parsnips and add to the rest of the ingredients.
Bake about 14 cakes from this batter by putting about 2 heaped TBsps in hot oil in a frying pan, press it down a bit and bake until golden brown on both sides.

It tastes very good with spicy meat (like peppersteak) and a fresh green salad, because it has a lightly sweet taste by itself. Enjoy!

I do love parsnips. I'm sure my grandmother grew them in her garden.
Really like the idea of them in a little cake like this!
They are very easy to find here in season and can be found often out of season in large grocery stores.
