Bread Baking Day #32: Italian style!

engels.amer vlagHigh time I made this post, it's been baked for a while now, but my time plans are being put upside down by this time off for the whole family. I hardly know what day it is anymore... and who cares really. As long as you keep in mind when they come to pick up the carbage ;) . High time indeed for the 32th edition of the Bread Baking Day this time hosted by Andrea from "Family, Food & other things" choose ''Italian Breads'... what a great choice (and why didn't I think of that?!?) . The only problem was what to bake. I've baked many Italian breads, but I wanted to make something I hadn't made before. In a book I bought in Italy I found a recipe called "Schiacciatine" a cracker type of bread. According to the book these were the breads bought by kids in Mantova during their lunchbreak. Schiacciata is the Toscan word for a bread what is also known as Focaccia. Schiacciatine (at least the ones in this book) are much thinner. "Schiacciare" means to flatten, press down.

This recipe give a rich cracker (because of the amount of lard ... I used shortening) without a topping, just brushed with olive oil and sprinkled with coarse seasalt. The ideal companion for minestrone or any other kind of soup. According to the kids here good just like that! Looking forward in seeing all the other breads in the round-up not long from now. Schiacciatine
(12-16 pieces)
(PRINT recipe)
500 g bread flour
250-300 ml warm water
5 g dry instant yeast ( or 15 g fresh)
150 g lard (or shortening or butter)
10 g salt

olive oil
salt

Mix the bread flour, water, yeast until a shabby dough. Sprinkle the salt over and knead until it comes together. Mix in the lard bit by bit until it’s fully absorbed in the dough. Divide the dough in 12 to 16 equal pieces, roll them into small balls, cover with greased plastic and let rest for 20 minutes.

Roll each ball into a rectangle (about 10 x 17 cm), about 1/2 cm thick and place on a baking sheets (with baking parchment), cover and let rest for about 20 minutes. In the meantime preheat the oven to 200ºC.
Brush with olive oil and sprinkle with salt (you could vary by using freshly ground black pepper, sesame seeds ecc) Bake for about 15 minutes, until just beginning to color.

You can also bake several sheets at once in a fan oven, lower the temperature to 180ºC and bake for about 12-15 minutes. Take out and leave to cool on wire racks.

Het wordt hoog tijd dat ik eindelijk dit bericht eens afmaak, maar nu iedereen hier vrij heeft, loopt de tijd vreemd door elkaar op de een of andere manier. Ik weet some niet eens welke dag het is omdat alle regelmaat weg is. Maar ach wat kan het schelen, zolang ik er maar aan denk dat ik de vuilnisbak op de goede dag buiten zet, nietwaar.

Maar in ieder geval de hoogste tijd voor mijn recept voor Bread Baking Day de 32 editie alweer. Andrea van "Family, Food & other things" koos `Italiaans brood` als onderwerp... woehoe.. fantastische keuze (waarom kwam ik daar niet zelf op?!)   Nu de moeilijke opgave om een keuze te maken. Ik heb al heel wat verschillende Italiaanse broden gebakken, maar ik wilde toch graag een nieuw recept proberen. Ik vond een recept in een Italiaans boek voor ¨Schiacciatine¨. Ik kende wel Schiacciata, de Toscaanse variant van Focaccia, maar deze schiacciatine zijn een stuk dunner en lijken meer op crackers  (schiacciare betekent plat drukken, samenpersen).

Het is een cracker is rijk door het aandeel reuzel (ik heb overigens shortening gebruikt) zonder ´beleg´ zoals bij Focaccia. Het wordt alleen bestreken met olijfolie en bestrooid met wat zout. Een perfecte begeleider voor een heerlijke minestrone, maar volgens de kinderen ook perfect als tussendoor snack om zo op te knabbelen. Ik kijk er naar uit om de andere Italiaanse broden te zien over een poosje in de round up. Tot de volgende Bread Baking Day!

Schiacciatine
(12 tot 16 stuks)
(recept PRINTEN)
500 g sterke bloem
250-300 ml lauwwarm water
5 g droge gist ( of 15 g verse)
150 g reuzel (of shortening of boter)
10 g zout

olijfolie
(grof) zout

Meng de bloem, water (genoeg om een kneedbaar deeg te krijgen) en gist tot een ruw deeg, strooi het zout erover en kneed het tot het samenkomt. Meng nu in delen de reuzel (shortening of boter) erdoor en kneed tot je een homogeen deeg hebt. Verdeel deeg in 12-16 gelijke delen en vorm ze tot bolletjes. Dek af met ingevet plastic en laat het 20 minuten rusten.

Rol elk bolletjes deeg uit tot een rechthoek (ongeveer 10 x 17 cm of iets groter als je 12 bolletjes maakt), ongeveer 0,5 cm dik. en leg ze op bakplaten met bakpapier, de ze af (met ingevet plastic) en laat ze 20 minuten rusten. Verwarm ondertussen de oven voor op 200ºC.

Bestrijk ze met olijfolie en bestrooi met wat (grof) zout (je kunt variëren met bijv. grove zwarte peper, sesamzaad etc). Bak ze ongeveer 15 minutes, tot ze net beginnen te kleuren.

Je kunt ook de verschillende bakplaten tegelijk bakken met hete lucht (temperatuur verlagen tot 180ºC en ongeveer 12-15 minuten bakken. Laat afkoelen op roosters.

Lien this sounds so wonderful. I believe I'll make mine with olive oil and some finely chopped rosemary!

Thanks for participating in BBD #32. The Schiacciatine (I have never heard of them before) look wonderful. I also think that rosemary would be the perfect companion.

Deze lekkere knapperige, hartige crackers heb ik idd wel eens gereuz.. eh... gepeuzeld in Italië:-)En nu kan ik ze ook zelf maken...;-)

These sound delicious and perfect with soup! I like the idea of adding some herb like rosemary or oregano, but they are lovely the way you made them.

Oh Lien, I know very well those schiacciatine! Very popular here, still they are a perfect snack at mid-morning in school. BTW, I have the same book, wonderful, and make them very often!
