Heerlijke cakejes

Het is natuurlijk geen aardbeientijd, maar ik vond nog een doosje met een paar ingevroren aardbeien in de diepvries. Die kon ik mooi gebruiken als decoratie van deze overheerlijke cakejes. Maar je kan er ook wat anders op doen, wat amandelschaafsel of andere gehakte nootjes, wat dunne plakjes appel... Dit is nog zo'n recept waar je de eiwitten die je soms over hebt (en natuurlijk invriest) heel fijn voor kan gebruiken. Ik heb de cakejes in muffinvormpjes gebakken, maar je kan ze ook in andere kleine vormpjes bakken.

Amandel-aardbeiencakejes
(12 stuks)
6 eiwitten
185 g gesmolten boter
125 g gemalen amandelen
240 g poedersuiker
75 g bloem
een paar aardbeien in plakjes

Verwarm de oven voor op 210ºC. Vet 12 muffinvormpjes in en bestuif met bloem.

Doe de eiwitten in een kom en klop ze iets op met een vork. Voeg de gesmolten boter, amandelen, poedersuiker en bloem toe en roer alles goed door elkaar. Schep het in de vormpjes en decoreer met de plakjes aardbei.

Bak de cakejes ongeveer 30 minuten. Laat ze even iets afkoelen in de vorm en laat ze daarna uit de vorm verder afkoelen op een rooster.
Strooi voor het serveren nog wat poedersuiker erover.

Strawberries are not in season yet, but I found some frozen ones in our freezer. They came in handy for decorating these small and delicious cakes. You can top them with other fruits or chopped nuts to your liking. It's also a good recipe to use the eggwhites that you may havein storage in the freezer. I've baked these in a muffintray, but you can use other small bakingshapes if you have them.

Almond-Strawberry cakes
(yield 12)

6 large eggwhites
1 1/2 stick butter, melted and cooled
1 heaped cup of ground almonds
1/2 cup all-purpose flour
2 cups and 2 TBSP icingsugar
a few strawberries, sliced


Preheat the oven to 410ºF. Grease and flour 12 muffincups.

Loosen the eggwhites with a fork in a large bowl. Add the melted, cooled butter, ground almonds, icingsugar and flour en stir until well mixed.

Fill the muffintin-shapes and decorate with a few slices strawberry.
Bake for about 30 minutes or until golden brown. Let them cool in the tin for about 10 minutes then transfer them to a wire rack.

Sprinkle with some icing sugar before serving. Enjoy!

Beautiful cakes Lien! I wanted to ask about the freezing of egg whites. I always have them left and they hide in the fridge until I eventually throw them out. Do you just freeze them as normal and defrost before use?

I use very small plastic boxes (You can buy them at Xenos) that yield 2 or 3 eggwhites.
Always defrost them before using them. This is the tricky part, because you have to take them out of the freezer preferably the night before so they can defrost in the refrigerator. you can't defrost them in the microwave...they'll cook. Write on a sticker how many eggwhites there are in the container (1,2,3) and date so you'll use the oldest ones first.

He getsie, had ik net een heel verhaal geschreven over je lekkere recepten, je mooie foto's, je adviezen over het invriezen en bovenal het ontdooien van eiwitten... plaatst 'ie het berichtje niet. Ik weet niet wie dat zou moeten plaatsen maar in ieder geval zie ik hem niet meer. Nou ja, complimenten ;o)
Weet je ook of je de eiwitten na het invriezen nog wel steeds schuimig kunt kloppen?

En ja hoor, de eiwitten doen alles gewoon nog zoals ze dat zouden doen voor ze ingevroren waren! (wel zonder vet natuurlijk, dus bakjes goed ontvetten!)

so, you don't need to whisk the egg whites till stiff? that's the easiest recipe I've ever come across and look fabulous!
