Bread Baking Babes: Corny in June

After having had a few very hectic weeks, welcome back for the June edition of the Bread Baking Babes.

But first of all this: I get asked sometimes when the next recipe will be posted by people who are curious about what there’ll be on the menu. Our dates varied until now. We sometimes got lost ourselves and missing out post dates that jumped upon us by surprise. Tanna came to the rescue and pulled us back in line and we all love her for it. To make our and your lives easier the new Babes challenge posting date will be on the 16th of each month. You can see what’s been baked on several Babes-blogs and you can bake along. The deadline for the Buddies is the 29th of each month. So you can fill in your calendars for the next months, don’t have to scan the net for a new post of franticly search for the buddie-deadline-date and use all your energy for baking :)

And now back to business, this month it was my turn to choose a recipe and I decided it was time again for me to bake something from the (famous) book by Joe Ortiz “The Village Baker”. I found a healthy recipe with lots of grains/seeds. Now sometimes  bread with grains can be dangerous for those of us (me) that have visited the dentist far to often in their lives. I once lost half my  tooth while eating a slice of bread with whole grains in it. So I’m causious when it comes to grains in bread. Here the soy beans made me wonder if it would not be to hard, but this bread is just totally delicious, crunchy, not tooth breaking hard, not giving you the idea that you’re eating just grains disguisted like bread at all. Very good indeed!

I’ve baked it in one huge round loaf, you can bake two oblong loaves (or in loaf pans) as well if you find that more handy (just check before the time is over if they’re already done). Korni
(makes 1 round 3 1/2 pound loaf)
(PRINT recipe)
(in red what I used)
Soy bean mixture
1/2 cup organic (dried) soy beans (85 g)
1 cup boiling water (235 g)

Poolish
1 package (2 1/2 teaspoons; 1/4 oz) active dry yeast (1 1/2 tsp)
2 1/2 cups warm water (2 1/4 cup = 533 g)
1 cup organic rye flour (100 g)
1 cup organic whole wheat flour (130 g)
1 1/2 cups organic unbleached white (or all-purpose) flour (180 g)
 
Dough
1 teaspoon active dry yeast
1/4 cup warm water
(60 g)
All of the starter from the previous step
3 cups organic, unbleached white (or all-purpose) flour
(420 g)
1 tablespoon sea salt (2 tsp)
1 tablespoon ground caraway seeds* (1 tsp)
1/4 cup organic flax seeds (37 g)
1/2 cup organic millet (100 g)
All of the soy mixture
Glaze: 1 whole egg whisked with 1 tablespoon milk

Prepare the soy beans:
Place them in a small bowl, cover them with the boiling water, and let them soak for 10 minutes. Drain the beans and let them cool. Process the beans in a food processor fitted with the metal blade until they roughly chopped.

Place the beans on a cookie sheet and roast them in a preheated 350°F oven between 15 and 20 minutes, until they are completely dried out. Set them aside.

(to make your own, grind a few tablespoons of whole caraway seed in a mortar with a pestle until you have a fine powder. If your powder still contains large chunks of seed, sift the mixture and use 1 tablespoon of the sifted powder) 

Prepare the sponge/poolish:
First proof the yeast, in a large bowl, in 1 cup of the warm water. When it is creamy, mix in 1 1/4 cups warm water and slowly add the rye flour, whole wheat flour, and 1½ cups of white flour by handfuls while stirring the mixture with a wooden spoon.
Set the batter aside, in a large bowl, covered with a dish towel, for between 8 and 10 hours or overnight.

Make the dough:
Proof the yeast in the warm water, add it to the risen sponge, and mix the two together. Start adding the flour, handful by handful, stirring vigorously with a wooden spoon. After all but 1 cup of the flour has been added (this will take about 10 minutes), turn the dough out onto your worktable, sprinkle the salt and the ground caraway over the dough, and incorporate them by kneading the dough for about 5 minutes while adding the last of the flour. The dough should be very moist.

Add the flax seeds, millet, and roasted soy beans and knead the dough to incorporate them.
Set the dough aside, covered, to rise for 1 hour, until it has doubled in size.

Flatten out the dough again and then shape it into a round loaf. This loaf is best proofed in a canvas-lined basket and then baked on a baking stone in the oven. It can also be placed on a parchment-lined baking sheet. Let the loaf rise for about 1 1/2 hours.

Glaze the loaf with the egg and milk mixture and bake it in a preheated 425°F oven for between 30 and 35 minutes.

Bread Baking Babes in juni

Na een paar hele drukke weken aan deze kant..welkom terug bij de juni-aflevering van de Bread Baking Babes.

Maar eerst nog even een huishoudelijke mededeling: Soms vragen mensen mij wanneer het volgende recept zal verschijnen van de Babes, dit omdat onze post-datum tot nu toe verschillend was. Soms overviel het ons zelf  -tijd gaat immers snel- dat het ineens weer tijd was om een bericht te schrijven. Tanna redde ons uit de brand en stelde vaste data voor, geweldig idee! Dus vanaf nu zal de nieuwe Babes-Bakuitdaging gepost worden op de 16e van elke maand. Dan zie je op verschillende blogs van de Babes het recept en baksel verschijnen. Wil je meebakken als Bread Baking Buddy, dan is de deadline vanaf nu de 29e van elke maand. We hopen dat het zo wat duidelijker is voor iedereen!

OK terug naar waar we mee bezig waren, deze maand was het mijn beurt om een recept te kiezen. Ik dacht dat het hoog tijd was weer eens iets te bakken uit het boek van Joe Ortiz “The Village Baker”. Ik zag een gezond broodrecept dat me wel aan sprak met granen en zaden. Voor sommigen onder ons (en ik ben daar één van) die de tandarts iets te vaak van dichtbij mochten bekijken, is het eten van brood met granen erin niet zonder risico. Ik heb al eens een halve kies verloren bij het eten van brood met hele granen erin, dus ik ben wat huiverig als ik m’n tanden in zo’n soort brood zet. Ik vroeg me af of die gehakte en maar zo kort geweekte sojabonen geen spel(of liever tand-)breker zou worden. Maar nee dus, niets harde stukken in het brood, maar alleen een lekkere krokante beet met veel smaak.

Een prima brood dat je eigenlijke met alles kunt combineren, zoet of hartig. Ik heb één brood gemaakt van dit recept, een heel groot brood. Je kunt al je dat makkelijker vindt, natuurlijk ook twee broden bakken die naast elkaar in de oven kunnen. Denk je dan wel even aan de baktijd? Die moet misschien aangepast. Ik hoop dat je ook zin hebt dit brood eens te bakken en nodig je van harte uit een Bread Baking Buddy te worden en een welverdiende ‘badge’ te ontvangen. Bak, schrijf een bericht en stuur je gegevens + foto van het brood naar mijn emailadres (links-boven in de zijkolom): Deadline 29 juni. Ik zal dan de inzendingen bij elkaar zetten in een bericht en je een “Bread Baking Buddy Badge” sturen.

Vergeet niet even bij de andere Babes te kijken (links in de zijkolom). Soms bakken we niet allemaal elke maand, dit omdat het leven ook nog doorgaat ondertussen, dus zie je ergens geen Korni deze maand, probeer even een andere Babe-blog.  Veel plezier met bakken!

Korni
(1 groot rond brood van ongeveer 1,5 kg)   (recept PRINTEN)
Sojabonen
85 g (gedroogde) sojabonen
235 g kokend water
Voordeeg
1 1/2 tl droge gist
533 g lauwwarm water
100 g volkoren roggemeel
130 g volkoren tarwemeel
180 g sterke tarwebloem
Deeg
1 tl droge gist
60 g lauwwarm water
het voordeeg (alles)
420 g sterke tarwebloem
2 - 2 1/2 tl zout
1 -3 tl gemalen karwijzaad (optioneel en naar smaak)
37 g lijnzaad (gebroken of heel)
100 g gierst
de geprepareerde sojabonen

voor het bestrijken: 1 klein ei + 1 el melk (geklutst) 

De sojabonen voorbereiden:
Doe de gedroogde sojabonen in een kommetje, giet er kokend water op tot ze onder staan en laat ze 10-20 minuten weken. Giet ze af en laat ze afkoelen. Hak de bonen nu grof (met dehand of keukenmachine).

Leg de bonen op een bakplaat en rooster ze in een voorverwarmde oven 180°C, ongeveer 15-20 minuten, tot ze droog zijn. Zet ze apart.

Voordeeg:
Meng alle ingrediënten door elkaar. Dek het af en laat het 8-10 of 's nachts staan.

Deeg:
Meng de gist en het water door het voordeeg, voeg dan beetje bij beetje de bloem toe (op 100 g na), strooi het zout en gemalen karwijzaad (optioneel) erover en roer het goed door elkaar. Voeg nu de laatste 100 g bloem toe (zoveel als nodig) en kneed het deeg tot het elastisch is. Het deeg is niet erg droog. Voeg nu het lijnzaad, gierst en geroosterde sojabonen erdoor en kneed ze erdoor tot ze gelijkmatig verdeeld zijn. Vorm het tot een bal, leg in een ingevette kom, dek af en laat ongeveer 1 uur rijzen.

Druk het deeg plat en vorm het dan tot een rond brood (of twee lange broden als je wilt, let op de baktijd), laat het rijzen in een rijsmand of kom bekleed met een met bloem bestoven doek. je kan het brood ook op een bakplaat met bakpapier laten rijzen. Dek af met ingevet plastic en laat het deeg ongeveer 1,5 uur rijzen.
Verwarm de oven voor op 220°C.Bestrijk het brood met het ei/melk mengsel, snijd eventueel het brood aan de bovenkant in en bak het ongeveer 35 minuten.

So glad the BBB will have a fix date from now on. I was always searching all the BBB blogs for a couple of days around the middle of a month to see whether the new recipe had been posted. My life will be easier now ;o). And yes, this bread looks great!!!! I am definitely going to be a buddy this month!

Oh, one question, though. Do you mean flaxseed? My dictionary can't find anything called fax seed... And flaxseed would compliment all the other grains quite well...

This was a fun recipe. Too bad I'm so backward and made the wrong version!

Well, I like the new "digs". Maybe your site redesign has escaped me and it's not new. But I was trying to say I like the beautiful colorful background.

I am so with you on the dentist, tooth aching bread thing so besides the fact that I wasn't able to bake you had me scared as well.
But when I see all the lovely breads and read your confirmation I will try and re-bake all the loaves I missed during our building!

This looks just like my favourite kind of bread. OK, that means an extra tour on bike for the health store for soybeans but it looks like it's worth it.
