Autumn ice cream

engels.amer klein I've been in the kitchen lately making all sorts of fig bakes and dishes again. You all must know I love figs by now ;). I have a little fig tree, well we'd better call it small bush since last year, it has grown considerably and has even survived -wrapped in bubble plastic- the severe frosts that came last winter. It gets little green figs buds too, but.. well I don't know why, but they turn up too late and don't grow into ripe figs at all. I must be doing something wrong and will dive into some books and the net to find out how to go about this fig business. It should be able to grow them here in Holland, even it's not as warm as in their natural habitat.

In the mean time I've been up and down to the next town carrying bags of figs back home. I hope he'll sell quinces too when time has arrived for those, that also were hard to come by. But let's concentrate on figs first. I don't know what your ideas on ice cream are, it it just a summer thing to get cool... well in my opinion you can eat ice cream all year around. In summer outside and probably more sorbets and when it's colder an ice cream after dinner sounds just perfect to me. This time it's the wonderful versitile fig that combines just great with orange... enjoy!

Caramelised Fig and Orange Ice Cream
(approx. 1 liter)
Gekarameliseerd vijgen-sinaasappelijs (p.82)
(PRINT recipe)
150 g fine sugar
8 fresh figs, each but into about 10 pieces
juice and grated zest of 2 oranges
1,5 dl cream
3 dl full fat milk
3 large egg yolks

Heat 75 g sugar in a heavy saucepan, don't stir, wait till the sugar melts and turns golden brown. Add the fig pieces and swirl them in the caramel. Add the orangejuice and stir until it starts to bubble. Add orange zest and cream and let simmer for about 3 minutes. Take the pan of the heat and let it cool.

Bring the milk to the boil. Whisk the egg yolks with the rest of the sugar licht and fluffy. Whisk the milk in, return the pan to the heat and heat, while stirring, until the custard coates the back of a spoon (don't let it boil). Take the pan of the and let it cool. Add the fig mixture and let it churn in the ice machine for about 30 minutes. Scoop in a plastic container and plae in the freezer until stiff.

Vlag nl klein Herfst IJs

Ik heb afgelopen tijd een aantal baksels en recepten gemaakt met vijgen. Jullie moeten ondertussen wel weten dat ik daar gek op ben. Ik heb sinds vorig jaar een klein vijgenboompje, nou ja zeg maar liever klein struikje in een grote pot staan. het groeit vlijtig en heeft zelfs de zware vorst van de afgelopen wintel goed doorstaan (gewikkeld in bubbelplastic). Er komen kleine groene vijgenknopjes aan, maar dan... ik weet niet precies wat er fout gaat, maar ze beginnen te langzaam met groeien en hebben aan het eind van de herfst nog niet eens de goede grootte, laat staan dat ze rijp zijn. Ik doe vast iets fout en zal daar me eens verder in verdiepen. Vijgen kunnen prima groeien in Nederland, al zal de oogst misschien eerder ophouden en minder zijn dan pak 'm beet in Italië, dus we hopen op volgend jaar.

Ondertussen blijf ik regelmatig op en neer karren naar een stad verderop waar ik een goede groenteboer heb gevonden en waarvan ik regelmatig met een zak vijgen terugkom. Ik hoop stiekem ook al dat ik daar binnenkort aan kweeperen zal kunnen komen, want dat is ieder jaar ook een probleem, maar laten we ons eerst maar concentreren op de vijg. Ik weet niet hoe jullie denken over ijs; is het alleen een zomerseizoen lekkernij? Wat mij betreft kan ijs altijd. In de zomer buiten en vaker een sorbet, maar in koudere perioden heerlijk een roomijs na het eten... lijkt me een prima optie. Deze keer dus een ijs met vijgen in combinatie met sinaasappel, wat erg goed werkt. Eet smakelijk!

Gekarameliseerde vijgen- en sinaasappelijs
(circa 1 liter)
Gekarameliseerd vijgen-sinaasappelijs
(recept PRINTEN)

150 g fijne suiker
8 paarse vijgen, in ongeveer 10 stukken gesneden
sap en geraspte schil van 2 sinaasappels
1,5 dl slagroom
3 dl volle melk
3 grote eierdooiers

Verhit 75 g van de suiker in een koekenpan met zware bodem. Niet roeren, maar wachten tot de suiker is opgelost en goudbruin wordt. Voeg de vijgen toe en keer ze om en om, voeg het sinaasappelsap toe en roer tot het bubbelt. Voeg de sinaasappelschil en de room toe en laat alles 3 minuten bubbelen. Neem de pan van het vuur en laat afkoelen.

Breng de melk aan de kook. Klop de dooiers met de andere 75 g suiker met de mixer dik en licht. Klop de melk erdoor en verwarm het in een pan (niet koken) tot het de achterkant van een pollepel bedekt. Neem de pan van het vuur en laat afkoelen. Meng het vijgenmengsel met de koude custard en draai het in de ijsmachine tot het stijf is. Zet het in een plastic doos in de freezer en laat het verder opstijven.

LOve the colur of your ice-cream. We have to wait some more months for figs to appear here. :)
I am with you about ice-cream the year around, but it might be that it is warm enough here all the time so perfect for ice-creams!

Yum! What a wonderful ice cream! I love fresh figs but don't see them here too often.
I haven't tried a quince yet - can you believe it! I hope to try one soon.

Wat geweldig gedaan die reflectie van dit Yammie-ijs in de lepel:-)))
In het plantsoen hier stikt het van de kweeperen, heb jij ook niet toevallig wat gemeentelijk groen met deze struik in de buurt....?;-)

Ziet er erg goed uit! Er is een vijgenboompje in de planning voor mij -verlaat verjaarskado- ik hoop dat íe wat doet!

If only you lived closer! We have thousands of figs.... And have been trimming the trees and hauling them off to the tip....
I feel so guilty. I don't think I could ship them to you though....
