BBD # 23

engels.amer klein Sometimes it's a good thing that there is a deadline... even if I have posponed this until the very last day, without a deadline it would never have been written. This month's Bread Baking Day initiated by Zorra and this time hosted by Nick from Imafoodblog and choose a surprising theme: “Something You’ve Never Made Before.” I immediately knew what I wanted to make: English Muffins. They were on my to-do-list for a long time and finally this event made me bake them at last! A real funny way of baking bread without an oven, but they were delicious an moist. We ate them all in one meal with baked fish. I don't know if that is a regular way to eat them... probably not, but we all loved it!

English Muffins
(12 3-inch muffins)
Traditional English Muffins (p.268)
(PRINT recipe)
60 ml warm water
1 TBsp active dry yeast
pinch of sugar
560-640 g AP flour
1 1/2 tsp salt
1 large egg, roomtemperature
295 g warm milk
30 g butter, melted
some semolina for sprinkling.

Mix the water with the yeast and sugar and let stand for 5 minutes
In another bowl place 280 g flour mixed with the salt, add the egg, milk, butter and yeast mixture. Beat until creamy (use paddle attachment if using a standmixer), about 2 minutes.
Add the remaining flour about 70 g at the time until the dough thickens. (change to the knead hook). Keep adding flour and knead for 3 minutes or until he dough is smooth and springy. The softer you leave the dough the lighter the muffins.

Place the dough in a greased container, cover and leave to rise until doubled (about 1 hour).

Sprinkle your work surface with semolina and place the dough on it. Sprinkle some more on top to prevent sticking. Roll or press the dough out into a rectangle (about 1/2 inch thick).
Cut out muffins with a cutter (3 inch). Reshape and roll the scraps and cut some more. (I could get more out than 12)

Preheat a electric griddle to 350°F (170°) or heat a non-stick pan with a thick bottom over medium heat. Lightly grease the surface (I didn't do that).
Bake several muffins at the same time on the griddle, cook until golden (several minutes), turn and cook on the other side. Take time to let them bake all the way through. Once baked let them cool on a rack and bake the rest of them in the same manner.

Soms is het wel goed dat er deadlines zijn... ook al heb ik het deze keer uit weten te stellen tot het allerlaatste moment. Zonder een deadline was deze post nog lang niet gekomen.

De Bread Baking Day van deze maand wordt verzorgd door Nick van Imafoodblog en er is een verrassend (en vrijblijvend) thema gekozen:
"Iets dat je nog niet eerder hebt gemaakt". Ik wist meteen wat dat moest worden: Engelse Muffins. Het stond al tijden op mijn dat-moet-ik-echt-een-keer-maken-lijst, maar zoals zo vaak kwam het er maar niet van. Deze keer dus wel, een heel andere manier van brood maken zonder gebruik te maken van de oven, maar ze waren erg lekker. We hebben ze allemaal in één maaltijd soldaat gemaakt, belegd met stukjes gebakken lekkerbekjes, wat waarschijnlijk niet echt een traditioneel beleg is.. maar erg lekker was het wel.

Engelse Muffins
(12 muffins)
Traditional English Muffins
(recept PRINTEN)
60 ml warm water
1 el droge gist
snuf suiker
560-640 g bloem
1 1/2 tl zout
1 ei, Large op kamertemperatuur
295 g lauwwarme melk
30 g gesmolten boter
griesmeel om te bestrooien

Meng water, gist en suiker en laat het 5 minuten staan.
Meng in een andere kom 300 g meel en zout en voeg daar het ei, melk, boter en gist mengsel aan toe. Klop dit tot het crèmig is (gebruik bij een standmixer de K-klopper).

Voeg nu steeds zo'n 70 g meel per keer toe tot het deegmengsel dik wordt. Neem nu de kneedhaak en kneed verder terwijl je steeds meel toevoegt tot het deeg glad en veerkrachtig is. Hoe zachter je het deeg weet te laten, hoe luchtiger de muffins straks.

Doe het deeg in een ingevette kom, dek af en laat het ongeveer 1 uur rijzen tot het verdubbeld is.

Strooi wat griesmeel (semolina) op je werkblad en kiep het deeg erop. Strooi ook wat griesmeel erover zodat je het deeg kunt uitrollen of drukken. Vorm het deeg tot en rechthoek van ongeveer 1,5 cm dik en steek er met een steker of groot glas (ongeveer 8 cm doorsnede) muffins uit. Vorm de resten tot een nieuwe lap deeg en steek nogmaals rondjes uit. (ik kon er meer dan 12 uit halen)

Verhit een electrische grilplaat (170°C) of een anti-aanbak koekenpan met een dikke bodem op medium. Vet de pan of plaat licht in (ik heb dit niet gedaan).
Bak meerdere muffins tegelijkertijd tot ze goudbruin zijn, keer en bak nogmaals tot goudbruin. De muffins hebben tijd nodig om ook van binnen te garen. Als ze gaar zijn laat je ze op een rek afkoelen terwijl je ondertussen de rest van de muffins bakt.

I'll be honest, I never have eaten English muffins with baked fish. Something new to try! And you got the best nooks and crannies of any muffins out there.
