Bread Baking Day nr. 13

Alweer de 13e keer is het Bread Baking Day, het broodbakevent dat bedacht en gestart is door Zorra van 1x umrühren bitte. Jude van Apple, Patis & Paté verzorgt deze 13e aflevering.


Met zo'n gezond thema als "100 % volkoren", kan dat geen ongeluk brengen dacht ik zo! Hier in huis wordt veel volkoren, helemaal of gedeeltelijk gegeten, hoewel de kinderen het liefst wit zouden eten volgens mij. Ik ben met 1 volkoren boterham snel klaar met ontbijten, als het wit is vult dat niet zo, alleen dat bewijst z'n nut al lijkt me. Iedereen weet wel dat het gezond is en het smaakt ook gewoon lekker. Ik heb dit keer gekozen voor een 100% volkoren met walnoten, een lekkere combinatie, die hier regelmatig gebakken wordt.


Walnoten Volkoren Brood
(recept printen)
40 g sinaasappelsap
225 g lauw water
25 g plantaardige olie
350-400 g volkoren tarwemeel
25 g havermeel (4 el)
25 g volkoren gerstemeel (4 el)
25 bruine suiker
ruim 1 tl zout
85 g walnoten, fijn gehakt
2 tl droge gist

Kneed alle ingredienten tot een soepel deeg. Voeg niet té veel tarwemeel toe, dan wordt het droog, het deeg blijft wat plakkerig. (Geef het ook de tijd om het vocht te absorberen, dat gaat wat langzamer bij volkoren meel). Leg het deeg in een ingevette en afgesloten kom en laat het 1 tot 2 uur rijzen.

Vorm het deeg tot een rol en leg het in een bakblik (ongeveer 25 cm lang), dek het af met ingeveet plastic en laat het nogmaals 1 uur rijzen.
Verwarm ondertussen de oven voor op 200ºC. Snijd het deeg een aantal malen diagonaal in en bak het in de oven 35-40 minuten. Als het brood te bruin wordt kan je het afdekken met alufolie.

This is already the 13th time that there is an episode of the bread baking blog event that was initiated by Zorra. Jude from
Apple, Patis & Paté hosts this month. A great theme is chosen, no bad luck there (13th or not) "100% whole Grain". I love it, we love it here, just the kids prefer the white or whiter stuff... but hey they're kids.


We all know the benefits of whole wheat grain, fibers and vitamins. Just give me one whole wheat slice in the morning and I'm ready to go, if I'd to eat white that would be at least two, because it's not filling enough. Just that is a benefit on its own. It's also tastes great and it full of flavour. I choose for a whole wheat loaf with a small amount of other wholemeal grains and walnuts. Walnuts and whole wheat are a great combination and this one is baked here quite often.


Walnut Whole Wheat Bread
(1 loaf)
(Print Recipe)
3 Tbsp orange juice
scant 1 cup luke warm water
2 Tbsp vegetable oil
3 - 3,5 cups whole wheat flour
4 Tbsp wholemeal oat flour
4 Tbsp wholemeal barley flour
2 Tbsp packed brown sugar
1 1/4 tsp salt
1 cup walnuts, finely chopped
2 tsp instant yeast

Knead all the ingredients intoa smooth and soft dough. Don't add all the flour if that's not necessary, it takes time to absorb the liquid and the dough will stay sticky. Place in a greased bowl, cover and let rise for 1 - 2 hours.

Shape the dough into a log and place in a greased loaf tin (8 1/2" x 4 1/2"), cover with greased plastic and let rise for about an hour. Preheat the oven in the meantime to 400º F. just before baking slice the loaf a few times on the diagonal and bake in the oven for 35-40 minutes. If your loaf turns too dark too quick, just tent with some foil.
