Met pindakaas

Wie kent haar nou niet? Delia Smith. Ze is de best verkopende auteur in Engeland op kookboekgebied. Ze heeft dan ook heel wat boeken geschreven. Ik heb heel veel kookprogramma's van Delia gezien op de BBC en toch had ik geen enkel boek van haar. Onlangs kocht ik voor een zacht prijsje een tweedehands boek van haar hand. En omdat mijn voorliefde in de keuken toch vooral bij het bakken ligt, werd dat "Baking" uit The Delia Smith Collection. Niet een extreem dik boek, maar wel mooi, overzichtelijk en met genoeg lekkere recepten om gelijk mee aan de slag te gaan...dus daar gaat 'ie:

Pindakaas koekjes
(± 24 stuks)
110 g pindakaas met nootjes
75 g boter (of margarine) op kamertemperatuur
110 g gele basterd suiker
175 g bloem
1 ei (medium)
3/4 tl baking soda
wat rietsuiker (voor de topping)

Verwarm de oven voor op 180ºC. Bekleed een bakplaat met bakpapier.

Meng alle ingrediënten (behalve de rietsuiker) tot een deeg. Dit kan met de hand of met de platte garde (K-garde) van de standmixer. Maak van dit deeg balletjes ter grootte van een walnoot.
Doe de rietsuiker in een laag bakje en druk de balletjes hier met 1 kant in. Leg ze met de suiker naar boven op de bakplaat en maak ze iets plat.


Bak de koekjes nu 15-20 minuten tot de bovenkant stevig aan voelt als je er voorzichtig met een vinger op drukt. Haal de bakplaat uit de oven en laat een paar minuten afkoelen. Verplaats dan de koekjes naar een rooster waar ze verder af kunnen koelen.

With Peanut Butter

She's the English leading lady when it comes to cookbooks. She wrote lots of them and is overall bestselling on cookbooks in the UK . I saw various shows of her on the BBC. Where they really know how to make cookery programms. And still I did not own any cookbook by her. Until recently when I purchased a second hand book from the "Delia collection"; "Baking". It's a nice book. Not very many pages, but enough to make you wanna start right away..and so I did.

Peanut Butter Biscuits
(±24 cookies)

4 oz crunchy peanut butter
3 oz butter (or margarine) roomtemperature
4 oz light brown soft sugar
6 oz plain flour
1 egg (medium)
3/4 tsp baking soda
some demerara sugar (for topping)

Preheat your oven to 350ºF. Line a baking sheet with parchment paper.

Mix all the ingredients (except the demerara sugar) to form a stiff dough. You can do this by hand of with the flat beater of your stand mixer. Take bits of the dough and form balls of the size of a walnut.
Place the demerara sugar in a small bowl, press one side of the balls in the sugar and place them -sugary side up- on the baking sheet. Flatten them slightly.
Space them about an inch apart. Bake for 15-20 minutes until they are firm whem pressed lightly by a finger. Let them cool on the sheet for a few minutes and transfer them to a wire rack to cool completely.
Well that was easy, wasn't it...now enjoy!

Ik ben een grote fan van Delia! Ze is lang niet zo sexy als Nigella of Jamie, maar haar recepten werken, ze bedenkt al vantevoren waar het bij jou mis kan gaan en geeft je met zachte hand een duwtje in de goede richting... een beetje streng doch rechtvaardige keurige kookschooljuf (en niet te beroerd om haar bloopes te laten zien). Delia rocks!

Lien, I have purchased Peanut Butter (we do not have a Brazilian version) but have thought tree times before using it to baking...it´s a bit expensive here so I have only used in sandwiches and snacks. But just the other day a friend blogger gave a recipe for home made Peanut Butter which she said is a little bit oily for eating plain. So I might do it and bake these cute cookies!!! I´ve been wanting to try these for some time now...
I also want her book...
