Bread Baking Day #25

engels.amer vlag Of course I've baked for this month Bread Baking Day, founded by Zorra and hosted this time by the lovely Cinzia from "Cindystar".
"Baking under the tree" was the theme for this month and a good choice for a festive month like December. I decided to bake a bread, as it is after all Bread baking day. And I wanted to use some of the mincemeat (again), cause I just love it so much. All those spices, dried fruits and as it was a jar I made last year I think it was even better than before. Maybe it ages well. This was the Delia Smith recipe for
mincemeat, but you can use any kind you want, homemade or shop bought. I wanted to bake it in a pullman loaf 'cause you can get such a lovely square swirl from that and such neat slices. You can do it any pan you have of course it tastes just as good! It goes very good with breakfast but also with a cup of tea or coffee. Happy New Year to all.

(PRINT recipe)
600 g bread flour
2 tsp dry yeast
35 g butter
1 tsp salt
grated zet of 1/2 orange
1 tsp sugar
1 tsp vanilla sugar
300-340 g warm water

approx. 500 g mincemeat
almond shavings (for decoration)

Bread with a Christmas swirl -rollingKnead all the ingredients (except the mincemeat and the almond shavings) into a souple and elastic dough. Place in a greased bowl, cover and let rise until doubled, about 1 hour.

Grease a pullman loaftin (mine is 3,5 x 3,5 x 13 inches) or another large loaf tin if you don't own a pullmantin.

Roll out the dough to a rectangle (13 x 16 inches) and divide the mincemeat over it, spreading it out and leaving an one inch border free on all sides. Roll the dough (start at one of the 13 inch sides) and pinch the seam tight. Decorate it with almond shavings by rolling it gently over the sprinkled almond shavings and place the dough in the tin. Place the (greased!) lid on the tin, but leave it open a little so you can see how far the dough has risen. Cover this open part with plastic so the dough doesn't dry out.

Preheat the oven to 430°F.

When the dough has risen about 1,5 inch under to rim of the tin, close the lid and place it in the oven for 20 minutes. Then lower the temperature to 400°F and bake for another 20 minutes.
Take the loaf tin out of the oven, take the lid off and test if the loaf is firm and ready and golden brown. If needed you can place it bake for another 5 minutes or so (without the lid). Invert the bread on a wire rack and let cool completely before carving it.

Natuurlijk heb ik ook voor de 25e editie van Bread Baking Day, bedacht door Zorra en deze keer verzorgd door de fantastische Cinzia van "Cindystar".
"Bakken onder de boom" is deze maand het thema en dat is natuurlijk een prima keus voor december. Ik besloot een brood te bakken, per slot van rekening is het 'BROOD bakdag". En ik wilde graag weer eens
mincemeat gebruiken, omdat ik het zo'n kerstige smaak vind hebben met de specerijen en gedroogde vruchten die er in zitten, ik ben er dol op. Ik had nog een pot van verleden jaar naar een recept van Delia Smith, maar je kunt natuurlijk alle soorten gebruiken waar je aan kan komen, zelf gemaakt of gekocht. Ik wilde het brood in een casinovorm bakken, omdat je dan zo'n leuke hoekige spiraal krijgt, maar je kunt het natuurllijk ook in een andere vorm bakken, dat doet aan de smaak niets af. Het smaakt heerlijk bij het ontbij, maar ook prima bij de koffie of thee. Een geweldig nieuwjaar toegewenst!

Brood met kerstspiraal
(1 groot casinobrood)

(recept PRINTEN)
600 g sterke bloem
2 tl droge gist
35 g boter
1 tl zout
rasp van 1/2 sinaasappel
1 tl suiker
1 tl vanillesuiker
300-340 g lauwwarm water

ongeveer 500 g mincemeat
amandelschaafsel ter decoratie

Bread with a Christmas swirl - in the panKneed alle ingrediënten (behalve het mincemeat en het amandelschaafsel) tot een soepel en elastisch deeg. Leg het in een ingevette kom, dek af met plastic en laat 1 uur rijzen tot verdubbeld.

Vet een casinobakvorm in (mijn blik is 9x9x33 cm) of een ander (groot) broodbakblik.

Rol/strek het deeg uit tot een lap van 33 x 40 cm (of de lengte van je blik x 40 cm) en bestrijk het met de mincemeat, waarbij je de randen een paar centimeter vrijlaat. Rol dan de lap op en knijp de naad goed dicht. Rol hem door de geschaafde amandelen en leg hem voorzichtig in het bakblik. Doe de deksel op het blik (als je een casinoblik gebruikt) en laat hem een klein stukje oen, zodat je kan zien hoe ver het rijzen is. Leg hierover een stukje plastic zodat het deeg niet uitdroogd.

Verwarm de oven voor op 220°C.

Als het deeg tot ongeveer 4 cm onder de rand is gerezen doe je de deksel (ook ingevet) dicht en zet het blik in de oven en laat het 20 minuten bakken.
Verlaag dan de temperatuur tot 200°C en bak nog 20 minuten.
Haal het blik uit de oven en schuif de deksel eraf. Kijk of het goudbruin is en stevig. Zet het zo nodig nog 5 minuten in de oven (zonder deksel).
Keer het brood op een rooster en laat helemaal afkoelen voor je het aansnijdt. Heerlijk bij het ontbijt, maar ook als delicatesse bij de koffie perfect.
