Iets geels

Ja, ja weer een zogenaamd blog-event. Het is vandaag internationale vrouwendag en bloggers zouden geen bloggers zijn als ze daar geen event aan vast knoopten. Zo ook Zorra en Fior di sale die er een geel event van maakten. In de zuidelijke landen worden er traditioneel (gele) mimosa gegeven aan vrouwen, die een teken zijn van respect en een uiting van solidariteit ten aanzien van onderdrukte vrouwen wereldwijd.

Ik vond het een aardige gelegenheid om nog een keer die leuke kleine puddingvormpjes te gebruiken en een zeer smakelijk toetje met ricotta en passievrucht te maken. Heb je geen puddingvormpjes, kan het ook gewoon in een grotere schaal of oude (schone) yoghurt/danoontje bakjes of gewoon in kleine koffiekopjes.

Ricotta-passievrucht pudding
(4 pers)
250 g ricotta
3 eiwitten
4 blaadjes gelatine
3 passievruchten
3 el honing
1 tl arrowroot (of andere sausbinder)
2 el suiker

Snijd de passievruchten door, lepel ze leeg en werk het door een zeef. Je kunt een aantal zaadjes bewaren om later door de saus te doen.
Week de gelatine in koud water. Klop de eiwitten stijf in een vetvrije kom.
Doe 3 el passievruchtenpulp met 3 el honing in een klein pannetje en verwarm het tot de honing opgelost is. Laat het iets afkoelen en los er dan de uitgeknepen gelatine in op. Klop nu de ricotta door het passievruchten/honing mengsel. En spatel tot slot de eiwitten erdoor.

Spoel de puddingvormpjes (of vorm) om met koud water en giet het mengsel erin. Zet het in de koelkast om op te stijven.

Verwarm de rest van het passievruchtensap in een pannetje met de suiker. Roer hier 1 tl arrowroot door heen en verwarm het tot het indikt. Laat het afkoelen.Na ongeveer 1,5 uur (kleine vormpjes) en 2 uur (1 grotere vorm) kan je de puddinkjes lossen. Houd de vormpjes even in warm water en los ze op een bord. Schep de saus erover en om heen.

Zet keihard "I'm every woman" op van Shaka Kahn en Eet smakelijk!

Something Yellow

Today its international women's day. And foodbloggers wouldn't be foodbloggers if they didn't make a food event out of it. And there is our well known hostess
Zorra together with Fior di sale to present this event in yellow. Why in yellow? (I quote):"Yellow because on this day in Southern countries there is the tradition to give sprigs of bright yellow Mimosa flowers to women. The flowers are intended as a sign of respect and also an expression of solidarity with the women in their support for oppressed women worldwide."
I took this opportunity to use my lovely pudding molds again and created a very tasty ricotta and passion fruit pudding. If you don't have molds like this, no worry, you can use a bowl to make a larger pudding, or coffee cups.

Ricotta-passion fruit pudding
(serves 4)
250 g ricotta
3 egg whites
4 sheets gelatine
3 passion fruits
3 TBsp honey
1 tsp arrowroot
2 TBsp sugar

Scoop out the passion fruits, and pass it through a sieve. You can save a few seeds to put back into the sauce later. Soak the gelatine in cold water. Beat the egg whites to stiff peakes.
Take 3 TBsp of the passion fruit pulp and put it in a small sauce pan with the honey. Heat until the honey is dissolved.
Let it cool a little and stir in the gelatine (with as less water attached as possible) to dissolve.

Whisk in the ricotta and finally fold in the beaten egg whites. Rinse the molds with cold water and poor the mixture in. Place in the fridge to set (1,5 - 2 hours).

Heat the rest of the passion fruit pulp with the sugar, whisk in 1 tsp arrowroot and heat until it's a thick sauce. Let it cool.

Put the molds in warm water for a minute or so and carefully tip them on a plate. Spoon over the sauce. Put Shaka Kahn in your CD player, select "I'm every woman" , turn up the volume and enjoy!!

Oh Lien this looks lovely, I have ricotta in the fridge so I just have to find a substitute for the passion fruit that is sadly missing! Thanks!

Hi Ilva, You can subsitute with all kinds of fruitjuices. You can also use lemonjuice(2 TBsp and 4 TBsp honey) in the pud and serve with warm cherries and some thickened cherry juice on the side... yummy!
And you have real fresh ricotta over there (I love it), I have to use a tub here. Can't wait to be back in Italy and have fresh ricotta...mmmm
