Autumn cake

engels.amer klein Ok so it is chilly, so it's raining, wintertime totally ruined my internal clock for a few weeks. Ok, so I miss the sun, miss the eggs of our chickens, miss getting outside without putting on coats and gloves and hate that the kids keep losing them everywhere. So I miss the flowers and the green, long nights while it's still light out. But then again I'm so happy to live in a place where the seasons are really different, all to be enjoyed to the fullest, ah it's not so bad to live in Holland after all.

And I do LOVE autumn! These colors of the leaves, the shape of the branches that shimmer because of the rain, stormy weather raging outside while you snuggle up with a cup of tea on the couch. Making your world a little smaller by drawing the curtains before dinner, it gives a warm feeling. And of course the holidays are coming too, here in Holland we have St. Maarten (nov 11), Sinterklaas (dec 5) and Christmas... although that's already wintertime. Then there are lots of apples and pears to bake pies and mushrooms and for some of us truffles, nuts and pumpkins.... let's enjoy autumn.

Pear, Hazelnut and Chocolate Cake
(one 9 inch round cake)
Peer, hazelnoot en chocolade taart
(PRINT recipe)
100 g blanched hazelnuts
160 g self-raising flour
175 g butter, cubed
140 g golden caster sugar
2 large eggs
5 small (or 4 normal sized) ripe pears
50 g small chocolate chips (or chopped chocolate)
2 Tbsp apricot jam

Preheat the oven to 160ºC.
Grease and line a cake tin (9 inch).

Grind the hazelnuts in a foodprocessor fine. Add the flour and the butter and pulse until it forms breadcrumbs. Add sugar and eggs and mix briefly.

Peel, core and chop two pears. Stir in the pear pieces and chocolate chips.

Spoon the mixture in the tin and smooth the top.

Peel, core and slice the rest of the pears and scatter the over the top. Press them down lightly.

Bake in the oven for 50-60 minutes until firm tot the touch. Cool in the tin for 10 minutes, then turn out on a plate. Warm the jam in a small saucepan and brush over the top.

Serve warm or cold.

Vlag nl klein Herfstcake

Ok het wordt kouder, er valt meer regen en de wintertijd zet mijn interne klok een paar weken op de kop. Ja tuurlijk ik mis de warme zon en de eieren van onze eigen kippen. Ik mis dat ik zo naar buiten kan stappen zonder jas en handschoenen, ik heb er de pest aan dat de kinderen die handschoenen om de haverklap kwijt raken. Ik mis de bloemen en het groen in de tuin, lange warme avonden terwijl het buiten nog licht is. Maar toch ben ik vooral blij dat ik in een land woon waar alle seizoenen ook echt verschillend zijn om ze volop te genieten, ach het is nog niet zo slecht wonene in Nederland.

Bovendien ben ik dol op de herfst! De kleuren van de bladeren, de vorm van de takken die je nu pas goed kunt zien, nat van de regen. Stormwind en regen buiten terwijl je in een warme kamer zit met een kopje thee op de bank. Lekker in je eigen wereldje met de gordijnen al dicht voor het avondeten, gezellig. Natuurlijk de feestdagen, Sint Maarten hier in het Noorden, dan Sinterklaas en natuurlijk kerst... alhoewel dat natuurlijk eigenlijk al weer winter is. Maar ook het eten in de herfst is heerlijk, appels en peren, noten, allerlei paddestoelen, en wat dacht je van pompoenen? ... laten we gaan genieten van de herfst.. met een stukje cake of zo :)

Peer, Hazelnoot en Chocolade Taart
(1 ronde taart van ongeveer 23 cm)
Pear, hazelnut and chocolate cake
(recept
PRINTEN)
100 g blanke hazelnoten
160 g zelfrijzend bakmeel
175 g boter, in stukjes
140 g licht bruine basterd suiker
2 grote eieren
5 kleine (of 4 medium) rijpe peren
50 g pure chocolade, in kleine stukjes gehakt
2 el abrikozen (om te bestrijken, optioneel)

Verwarm de oven voor op 160ºC.

Vet een rond bakblik in en bekleed de bodem met bakpapier.

Maal de hazelnoten vrij fijn in een keukenmachine, voeg de bloem en boter toe en pulse tot het eruit ziet als broodkruim. Meng de suiker en eieren er kort door.

Schil de peren verwijder het klokhuis en snijd twee peren in blokjes. Vouw die door het deeg met de chocolade stukjes. Schep het deeg in het bakblik, strijk de bovenkant wat vlak.

Snijd de overige peren in plakjes en verdeel ze over de bovenkant. Druk ze licht aan.
Bak in de oven 50-60 minuten tot het stevig is. Laat het 10 minuten in het blik afkoelen, keer het dan op een bord (gebruik nog een bord of serveerschaal om het nogmaals om het nogmaals om te keren zodat de peer-bovenkant boven komt). Verwarm de jam en bestrijk de bovenkant. (je kunt dit eventueel ook weglaten). Warm of koud serveren.

Love the autumn cake - pears and hazelnuts sound wonderful together.
