Vijgen en amandelen

Nog maar een keer aan de gang met vijgen. Ik heb al eens eerder vijgenjam gemaakt en die was echt erg lekker. Deze keer weer een vijgenjam, maar dan met een Italiaanse twist. Ik gebruik daar hier Vin Santo voor, een Italiaanse dessertwijn, maar heb je dat niet kan je ook bijv. cognac gebruiken.


Vijgenmarmelade met amandelen
(Composta di fichi e mandorle - ± 1 pot)
250 g verse vijgen
40 g blanke amandelen
175 g suiker
1 1/2 el Vin Santo (of cognac)
geraspte schil van 1/4 citroen


Vijgen schoon maken en in vieren snijden. Doe ze in een pan met de suiker erover en laat het zo een uur staan. Zet dan de pan op het vuur en breng het aan de kook. Laat het borrelen tot de suiker een beetje begint te karameliseren. Voeg dan de amandelen toe en laat het nog een paar minuten borrelen. Tot slot de Vin Santo erbij en doorroeren.


Spoel schone jampotten en deksel om met kokend water en schep de hete jam erin, draai de deksel er stevig op en zet de potten 5 minuten op de kop. Laat ze dan verder afkoelen.

Van de rest van de vijgen die ik toen nog overhad heb ik heerlijke 'gewone' vijgenjam gemaakt, volgens de aanwijzingen op de verpakking van de geleisuiker. Ik gebruik meestal 2:1; dat is geleisuiker waar je twee keer het gewicht aan fruit gebruikt en 1x het gewicht aan suiker. Die heb ik bij de Aldi gekocht in het zomerseizoen. Zo proef je nog meer die lekkere fruitsmaak. Wat is het toch een lekker seizoen.

Figs and Almonds




I've made fig marmelade before (in the days when this blog was still only in Dutch!) and that was really good. This year I made some more but now with an Italian twist. I used Vin Santo, an Italian dessertwine, but if you can't get hold of that, you can also use cognac.



Fig marmelade with almonds
(Composta di fichi e mandorle - ± 1 jar)
250 g fresh figs (green or blue)
40 g almonds, skinned

175 g sugar
1 1/2 TBsp Vin Santo (or cognac)
grated zest of 1/4 lemon


Clean the figs and quarter them. Put them in heavy saucepan with the sugar and let it stand for at least an hour. Place the pan on the stove and bring slowly to the boil, let it boil until the sugar starts to turn into caramel, add the almonds and let simmer for few minutes more. Then add the Vin Santo and stir it together.

Rinse clean jam jars and lids with boiling water and put the jam in. Close the lids tightly and put them upside down for about 5 minutes. Let them cool and if you're in the mood, make some nice stickers for the jars.

From the remaining figs that I had left, I made some 'normal' fig jam. I just can't get enough of it. I just follow the instructions on the packeage of the special sugar for jam making. I use the sugar variaty where you use two parts of fruit and 1 part of sugar, so it tastes even more fruity!

This jam sounds and looks delicious! I will save the recipe for next year when I don't know what to do with the figs from my tree.
