Mellow Bakers in Januari - Part 2

And here they are the three breads for the Mellow Baker challenge (baking through the Hamelman book "Bread") that were supposed to be baked last month, but due to a rye starter that was determined to stay dead, it took me some time to make a new one. And just baked these all at once. (including 2 vollkorn breads and a black bread, that are 'future' breads for the Mellow Baker, but I just wanted to be sure and use this active starter while it lasts)
What can I say.... no not my kind of bread, to sour, to much rye flour and well just not my kind of loaves... oh I already said that. The difference is minor for me, I can't say I love the 70% a little better than the 90% one.
But considering all that, I was pleased with how they turned out, I've had worse examples before with rye sourdoughs. So they're all sliced up in the freezer and in my christal ball I forsee a sourdough bread future for my husband these coming weeks.......

   3-stage 70% sourdough rye,                       3-stage 80% sourdough rye,                         3-stage 90% sourdough rye

I love sour and rye, I could come over and help you eat them!
They look great to me, kudos to you for baking them even though you prefer other types of bread. You must be a Virgo too. ☺

I'm a Virgo although that doesn't help me in the stick to my list department... it does help add to my feelings of guilt though...

They look all great to me Lien and eh very German (my husband will be no help eating these hehe)
