BBBabes bake with muesli

I can honestly say I love this months recipe. I made all sorts of muesli rolls, but each time with a different recipe, they seem to get better. So I was very very pleased to hear that our lovely Babe Karen ("Bake my Day") had placed them on our Bread Baking Babes Menu for this month. Oats, dried fruit, all kinds of healty seeds ánd chocolate, it's a winner! To make it even more healthy I added more whole wheat flour to the recipe. You can make round rolls of course, but I must say I really liked these rectangular ones, a perfect fit for a lunchbox. Great pick Karen, thanks!

Muesli Rolls
(makes ± 15 rolls)
(PRINT recipe)
350 g strong bread flour
150 g whole wheat flour
40 g rolled oats
8 g instant dry yeast
10 g salt
30 g (treacle or blackstrap) molasses
20 g honey
40 g olive oil
370 ml water
40 g walnut pieces (chopped small)
30 g flaxseeds
20 g sesame seeds
80 g sunflower seeds
80 g pumpkin seeds
40 g dried apricots, cut into pieces
80 g small chocolate chips/drops
100 g rolled oats to decorate
Place flours, oats, yeast, salt and wet ingredients in a large mixing bowl.  Using a wooden spoon, combine to form a dough.  Tip dough out onto a lightly floured surface and knead for 15 minutes, resting it for 1 minute every 2-3 minutes until dough is smooth and elastic. Check dough throughout kneading for stickiness; add a little more water or flour if necessary to achieve a soft dough that's not too firm.

Add walnuts, seeds, dried fruit and chocolate. Knead until well incorporated and combined into dough.  Place dough in  a lightly oiled bowl, cover with clingfilm and leave in a warm place for approximately  1,5 hours, until dough has doubled in size. Gently knock back dough in bowl by folding it back onto itself several times. Cover again and leave for a further 30 minutes.

Tip dough upside down onto a lightly floured work surface.  Sprinkle flour over top of dough (which was on the bottom of the bowl).  Very carefully turn dough over and gently flatten to 2 cm thick.  Using a dough scarper or large chef's knife, cut dough into 7cm (2 3/4in) squares.  Using a pastry brush, brush the tops with water, Sprinkle entire surface of each roll with rolled oats, and pat down gently to stick them on.

Line a baking tray with baking paper.  Place rolls onto lined tray, leaving a 2-3 cm gap between each roll.  Cover with clingfilm and leave to prove for 30-45 minutes, depending on room temperature.

Place rolls on baking tray in a preheated 230ºC oven, apply steam and quickly close oven door.  Bake for 20-25 minutes, turning tray around halfway through baking if needed. Remove rolls from oven and place on a wire rack to cool.

Lekkere en gezonde broodjes bij de Bread Baking Babes deze maand.

 Een hele goede keuze deze maand van onze eigen Karen Baking Soda (bakemyday!), overheerlijke mueslibroodjes en lekker zijn ze zeer zeker. Gedroogde vruchten, zaden, haver én chocolade... kan niet beter. Ik heb een beetje meer volkorenmeel erbij gedaan dan het oorspronkelijke recept, maar dat kan je naar wens aanpassen. Dat aanpassen geldt ook voor de vorm, je kunt ronde bolletjes maken, maar ik vond deze vierkante/rechthoekige wel erg handig, omdat ze er makkerlijk in de lunchbox passen.Een aanrader!

Muesli Broodjes
(voor 15 broodjes)
(recept PRINTEN)
350 g broodbloem
150 g volkoren tarwemeel
40 g havervlokken
8 g droge gist
10 g zout
30 g molasse stroop (of keukenstroop)
20 gr honing
40 g olijfolie
370 ml water

40 g walnoten (fijn gehakt)
30 g lijnzaad
20 g sesamzaad
80 g zonnebloempitten
80 g pompoenpitten
40 g gedroogde abrikozen, in stukjes
80 g chocolade druppels (puur)
100 g havervlokken (ter decoratie)

Doe de melen, havervlokken, gist, zout en de natte ingrediënten in een grote mengkom. Meng alles en kneed het (met de hand of machine) tot het deeg glad en elastisch is. Voeg water of  bloem toe, zodat je een zacht deeg krijgt wat niet te stijf is. De ingredienten van de vulling absorberen ook nog wat vocht, dus het deeg mag niet te droog zijn.
Voeg de walnoten, zaden, droog fruit en chocolade toe.  Kneed het voorzichtig door het deeg tot het goed verdeeld is. Vorm het deeg tot een bal en leg het in een licht ingevette kom, dek de kom af en laat het deeg ongeveer 1,5 uur rijzen. Druk voorzichtig de lucht eruit en vouw het deeg een paar keer dubbel. Dek weer af en laat nogmaals 30 minuten rijzen.

Keer het deeg om op een licht ingevet (of bebloemd) werkvlak. Strooi wat bloem op het deeg, keer het deeg voorzichtig om en druk het zachtjes in een vierkant of rechthoek tot het deeg ongeveer 2 cm dik is. Gebruik een metalen deegschraper om het deeg in gelijke rechthoekige of vierkante broodjes te steken. Bestrijk de broodjes met wat water en bestrooi met wat havervlokken. Druk de vlokken lichtjes aan.

Bekleed een bakplaat met bakpapier en leg de broodjes met een tussenruimte van 2-3 cm erop. Dek af met licht ingevet plastic en laat ongeveer 30-45 minuten rijzen..
Bak de broodjes in een voorverwarmde oven op 230ºC, met stoom. Bak ze ongeveer 20 minuten, laat ze daarna afkoelen op een rooster.

I too adore this month's bread and am secretly pleased that my husband does not. It means that I put the rolls in the freezer and am getting to have them one by one for breakfast. Whoohooooooooo!

Hooray! Looks like you added more whole wheat and that gives it about the same density as I got. But wow you really got gorgeous color.
I also love the square/rectangle shape for looks, function and ease of shaping! Perfect.

The extra whole wheat flour makes these even better looking Lien, plus the square shape is delightful. Guess I should make these again to freeze and I'm going to copy you and add more of the whole wheat. Love the photo of the sliced roll showing all the goodies inside.
