Bread Baking Day #37

What a short month February was.... have to hurry and make this post ready for Bread Baking Day. Initiatied by Zorra and hosted this month by Champa ("Versatile Vegetarian Kitchen") . The theme is Bread with a sponge, you know a biga, poolish... that's just a theme to my heart! I'm not extremely fond of sourdough bread, I don't really like the acidity, but breads with a sponge or pre-ferment that you make a day or so earlier, just love it. It doesn't only gives your bread a longer shelf life, it gives it a slight chewy texture and real depth of flavour!

So I made this bread very soon after the theme was launched... and of course waited until the end of the month to finally make a post. It's a bread with a raisin and cinnamon swirl, made with a biga that is made 8 hours or the night before. Not much sugar, the sweetness comes mostly from the raisins.
There will be several breads in the round up later that I will just love and that'll make my to-bake-list so much longer. Can't wait!

Cinnamon Raisin Bread
(makes two small loaves)

Biga
200 g warm water
1/8 tsp dry active yeast
225 g bread flour

Stir the ingredients around mixing them well. Cover with plastic and let ferment for 8 hours at room temperature.Or ferment 1 hour at room temp. + 8 hours - overnight in the fridge.When you have had your biga in the fridge, allow to get to roomtemperature (about 3-4 hours).

Dough
45 ml warm water
1 1/4 tsp active dry yeast
400 g Biga starter
250-350 g water
575 g bread flour
2 tsp salt
425 g dark raisins
65 g sugar
1 TBsp ground cinnamon

Mix the yeast in the warm water, let stand for a few minutes. Add the biga and water (starting with 250 g) to it and mix to break up the starter. Add the flour and salt and knead until smooth and souple, adjusting with flour or water to get a souple dough, that is not too stiff. Place in a greased bowl, cover with plastic and let rise for 20 minutes. Take the dough out and fold it, then place it back into the bowl and let rise for 1 hour.

During this time, soak the raisins in warm water (just cover them) for half an hour, drain them and pat them dry. Combine sugar and cinnamon in a small bowl and set aside.

Fold the dough for a second time, left side over the middle, right side over the middle and then fold it in half. Turn seamside down. Cover and let rise for 1 - 1,5 hrs until fully risen.

Grease two loaf pans (9x5 inches). Divide the dough in two equal parts and press each part into a rectangle. the short side with the same length as the loafpan. Sprinkle half of the cinnamon sugar on to dough and divide half of the raisins over the surface. Roll the dough up tight and place in the loaf pan. Repeat with the second part of dough. Cover with greased plastic foil and let rise until they rise about 1 inch above the rim of the pans.

30 minutes before baking preheat the oven to 230ºC. Bake with steam for 15 minutes, then lower the temperature to 190ºC and bake for 15 minutes longer or until done. If the tops brown to quick, tent with alu foil.

Let the loaves cool in the tins for 5 minutes, then remove the breads from the tins and let cool on a wire rack.

Bread Baking Day nr. 37

Hoog tijd voor een nieuwe aflevering van Bread Baking Day, nummer 37 alweer. Deze keer is het thema "Brood met voordeeg". Helemaal toppie, want broden met biga en poolish zijn toch mijn favoriete broden. Ik heb voor deze keer een rozijnen brood met kaneel gemaakt met een biga van de avond ervoor. Heerlijk!!
Rozijnen kaneel brood
(2 kleine broden)
(recept PRINTEN)
Biga/Voordeeg
200 g warm water
1/8 tl droge gist
225 g sterke bloem

Meng alle ingrediënten, dek af met plastic en laat 8 uur op kamertemperatuur staan. Of laat het één uur op kamertemperatuur staan en zet het daarna in de koelkast (8 uur tot een nacht). Laat het in dit laatste geval de volgende ochtend eerst weer een paar uren op temperatuur komen voor je het gaat gebruiken.

Deeg
45 ml lauwwarm water
1 1/4 tl droge gist
400 g Biga starter
250-350 g water
575 g sterke bloem
2 tl zout
425 g bruine rozijnen
65 g suiker
1 el kaneel

Roer de gist door het lauwwarme water en laat het een paar minuten staan. Voeg de biga en het water toe (begin met 250 ml) en meng dit om de biga los te weken. Voeg dan meel en zout toe en kneed het deeg tot het soepel is. Voeg zo nodig water of bloem toe om een niet te stijf deeg te krijgen. Leg het deeg in een ingevette kom, dek af met plastic en laat het 20 minuten rijzen. Vouw dan het deeg drie keer en laat het in de afgedekte kom verder rijzen, ongeveer 1 uur.

Tijdens deze rijs zet je de rozijnen (net) onder lauw water gedurende een half uur. Giet ze dan af en droog ze af. Meng de suiker en kaneel in een kommetje voor straks.

Vouw het deeg nogmaals, links over het midden, rechts over het midden en dan dubbel. Leg het deeg weer in de kom met de naad naar beneden en laat het weer rijzen voor ongeveer 1 1,5 uur.

Vet twee broodblikken in. Deel het deeg in twee gelijke delen en druk één deel uit op een ingevette ondergrond tot een rechthoekige lap, waarvan de korte kant de lengte heeft van je bakblik. Strooi de helft van de kaneelsuiker erover en verdeel daarna de helft van de rozijnen over het deeg. Rol het deeg strak op en leg het in het bakblik met de naad naar beneden.

Doe hetzelfde met het tweede stuk deeg. Dek ze af met ingevet plastic en laat ze 2 cm. tot boven de rand rijzen. 30 minuten voor het bakken verwarm je de oven voor op 230ºC. Bak de broden met stoom 15 minutes, verlaag dan de temperatuur tot 190ºC en bak ze nog ongeveer 15 minuten tot ze gaar zijn. Als de bovenkant al te snel bruin word, dan dek je die al eerder af met alufolie.

Laat de broden uit de oven nog 5 minuten in de vorm en laat ze daarna op een rooster verder afkoelen.

I saw this in champa's round-up got hooked, lovely texture to the bread, I am going try this out, kids will love this!, one more thing your BBB dead line was over, i was not able to participate with some health problems, when is the next posting and where should i look for it can you tell me please

I just made cinnamon rolls this morning- big fail. I think I might be able to handle this bread though!
