Italian Baking for Christmas

What kind of Italian Christmas treat to bake this year? I did several things already Panettone, Pandoro, Pandolce Genovese (only in dutch)...so what's next? I choose this delicious and traditional recipe Panforte di Siena. You can get it all year round now in Italy, but it's still tradition in Siena to eat a piece of panforte and two cavallucci (spiced cookies... maybe a good idea for nex year!!) on Christmas eve. It's sweet, it's spicy, full of nuts and energy and I love it! It keeps quite a while too, so very practical for making gifts for Christmas. Originally it was called Panpepato, (= peppered bread) because there is a lot of pepper in it. There are more than one recipe to make this version (Panforte Margherita) and there is also a version with chocolate (Panforte Nero).

I've heard many stories about how old this treat is. The one I liked a lot dates from the 1200s where a sister in a monastry discovers that the bags with gifts donated by believers (gifts of spices, nuts and candied fruits) are nibbled on by mice and all the goods have poured out of the bags and lay mixed on the flour and shelves. Throwing it away would be a sin (as the goods are gifts to God) and she wonders what to do with it all. A black cat comes in and tells her to cook it. She does that and a wonderful smell fills the kitchen, then the cat tells her to taste some. But as she now understands this cat is the devil, she pours the hot mixture over him and the cat/devil turns to smoke. Mother superior comes in, because of the divine smell that overpowers the stench of the devil and tastes what's left in the pan and decides that this can be only a gift from God that is stronger than evil. Aren't these old tales fun?
Anyway this recipe is really worth a try, cut in small wedges and enjoy with a cup of espresso or Vin Santo. Buon Natale a tutti!

Panforte (di Siena)
(± 16 pieces)
(PRINT recipe)
125 g dates
125 g dried figs
50 g honey
100 g dark moscovado sugar
½ tsp ground cinnamon
½ tsp ground cardemon
½ tsp ground cloves
½ tsp ground nutmeg (freshly ground if possible)
½ tsp black pepper (freshly ground)
100 g candied orangepeel, finely chopped (you can also use other candied citruspeels)
150 g varied candied fruits (like cherries, melon, peach, pear, mango...), chopped
50 g blanched almonds
50 g pinetree kernels
50 g hazelnuts, skinned and toasted
4 TBsp flour
50 ml Vin Santo (you can substitute with grappa or sherry)
icing sugar
edible paper (ricepaper) for the mold

Preheat the oven to 150ºC.
Line a round cake tin (± 24 cm/10 inches) or a square one ( 20 x 20 cm/ 8 x8 inches) with edible paper.

Chop the dates and figs in a food processor until fine, place them in a heavy bottomed pan with about 3-5 TBsp water. Add honey, sugar and all the spice and let it simmer for about 10 minutes while stirring frequently (or it will burn). It should be soft and sticky, but not wet. Transfer to a bowl.

Stir in the candied fruits, nuts, flour and Vin Santo until well mixed. Place the mixture in the baking tin onto the edible paper. Press in the corners and smooth the top with a spatula. Bake for about 40-50 minutes.

Take it out of the oven, place on a rack and let it cool in the tin. When it’s cool, take it out and dust with icing sugar. Cut into small wedges.

A Italian treat that goes well with coffee or a little Vin Santo. Buon appetito!

Italiaans bakken voor Kerst

Panettone

Wat zal ik dit jaar voor Italiaanse traktatie bakken voor kerst? Ik heb er al verschillende gemaakt: Panettone, Pandoro, Pandolce Genovese ....dus wat deze keer? Ik heb gekozen voor dit heerlijke en traditionele recept: Panforte di Siena. Je kunt het tegenwoordig het jaar rond krijgen in Italië, maar nog steeds eten de mensen in Siena op kerstavond een stukje panforte en twee cavallucci (kerstkoeken met specerijen.... misschien komen die volgend jaar aan de beurt!). Het is zoet, vol specerijen, noten en energie. En het blijft vrij lang goed, dus bij uitstek geschikt om te maken voor cadeautjes voor de feestdagen.  Eerst heette het Panpepato, (= gepeperd brood) omdat er relatief veel peper in zit. Er zijn meerdere recepten in omloop om dit te maken, die in twee versies te verdelen zijn: Panforte Margherita (waar deze onder valt) en de Panforte Nero, waar chocolade in zit.

Er zijn verschillende verhalen over wanneer en hoe deze delicatesse ontstond. Het verhaal dat mij wel aansprak dateert rond 1200 en vertelt over een non in een klooster die in de voorraadkamer ontdekt dat ze zakjes met gaven (noten, specerijen, gekonfijt fruit) van de gelovigen zijn aangevreten door muizen en alles uit de zakken door elkaar is gelopen. Weggooien zou zondig zijn, aangezien de gaven voor God waren en de non vraagt zich af wat te doen. Dan komt er een zwarte kat de keuken in die haar aanmoedigd alles in een pan op het fornuis te zetten. Ze doet dit, voegt honing en suiker toe en het begint heerlijk te ruiken. Dan zegt de kat dat ze ervan moet proeven. Dan realiseer de non zich dat de kat de duivel is (normaal praten ze natuurlijk niet) en kiept het mengsel over de kat heen. De kat lost op in stinkende rook. Moeders overste komt op de heerlijke geur af de keuken in. Want de goddelijke geur van de panforte verdringt volledig de duivelse stank. Ze proeft wat er nog in de pan zit en verklaard dat dit wel van God moet zijn als het zo heerlijk ruikt en de duivel kan verdrijven. Leuk hè die oude verhalen!!
Hoe dan ook, dit recept vind ik echt een aanrader, snijd er kleine stukjes van en geniet ervan met een kop espresso, koffie of dessertwijn. Buon Natale a tutti!

Panforte (di Siena)
(± 16 personen)
(recept PRINTEN)
125 g dadels
125 g gedroogde vijgen
50 g honing
100 g bruine basterdsuiker
½ tl kaneel
½ tl gemalen kardemon
½ tl gemalen kruidnagel
½ tl gemalen nootmuskaat
½ tl zwarte peper
100 g gekonfijte sinaasappelschil (eventueel ook een deel andere gekonfijte citrusvruchten)
150 g gekonfijte vruchten (bijv. kersen, meloen, perzik, peer)
50 g blanke amandelen
50 g pijnboompitten
50 g blanke hazelnoten, geroosterd
4 el bloem
50 ml Vin Santo (eventueel te vervangen door grappa of sherry)
poedersuiker
wat ouwel/eetbaar papier

Verwarm de oven voor op 150ºC. Bekleed een vorm van ± 24 cm doorsnede (of vierkant van 20 x 20 cm) met ouwel/eetbaar papier.

Maal de dadels en vijgen in een keukenmachine, doe ze dan in een pan met een 3-5 eetlepels water. Doe de honing, basterdsuiker en alle specerijen erbij en laat het zachtjes ongeveer 10 minuten pruttelen. Blijf wel af en toe roeren, anders brandt het aan. Het moet zacht en kleverig zijn, maar niet nat. Doe dit in een schaal.

Meng dan de geconfijte vruchten, noten, bloem en Vin Santo erdoor zodat het goed vermengd is. Schep het in de bakvorm en druk het goed in alle hoeken. Strijk de bovenkant mooi glad.

Bak het ongeveer 40-50 minuten. Neem het dan uit de oven en laat het in de vorm afkoelen. Bestuif met poedersuiker en snijd het in dunne punten.
Heerlijk bij de koffie/thee of een glaasje Vin Santo. Buon appetito!

Dat ziet er geweldig lekker uit. Smaakt het ook goed met een stukje kaas net zoals birnenbrot? Als dat zo is, vind ik het perfect voor de kaasplank met het Oudejaar.

What a wonderful story! And a great bread/snack stuff. I really would like to try it. Do you think it will go well with a little blue cheese?

(Because to me it looks like the very dense date/almond/fig bread that I loooove but don't have a recipe for so I have to buy it.)

@ Baking and Marjoke: I think it is sweeter than fig/date bread, because of all the candied fruit, sugar and honey. It depends on your taste if you like that with cheeses.
