Bread Baking Day #34

Another month another Bread Baking Day, the bread baking event that still goes strong initiatied by Zorra. This time hosted by Swathi from "Zesty South Indian Kitchen". She choose "Bread with grain" as this months' theme. This got me confused at first, isn't bread always made with grain? I didn't find any restrictions in the types, amounts or ways to bake... so no rules really here, just yeast, bread baking and grain(s). Which is nice for a change, especially when in a tight time schedule.

Still even free of 'rules', I wanted to make a bread with more grains than just one. I made a loaf with oat, cornmeal, wheat flour and cooked wild rice. Wild rice isn't officially a grain, it's a (grass)seed, but I'm adding it to the grain-list anyway. The powers-that-named-it shouldn't have called it rice in the first place if it's not that right?! Anyway I digress... I loved this loaf, it has a slight sweetness from the maple syrup and the crust is nice and darkbrown from that too. Glad that I managed to bake this in the nick of time (nothing changed there really) and send in this entry to Swati.

Wild rice and oatmeal bread
(1 loaf)
(PRINT recipe)
2 ½ tsp dry instant yeast
pinch of sugar
60 g warm water
230 g warm (oat)milk
4 TBsp maple syrup
2 TBsp melted butter, unsalted
340-390 g bread flour
1 ½ tsp salt
± 70 g wild rice (cooked)
40 g cornmeal
80 g rolled oats (not instant)

for sprinkling: a little cornmeal, oats and/or flour

Place all the ingredients (keep some flour behind) in a (stand mixer) bowl and start mixing on 1st speed with a dough hook. When all the ingredients are combined, turn on speed 2 and keep mixing for about 7-8 minutes, until there is a elastic dough. Add extra flour if it’s too sticky, it can be a little tacky that’s alright. Form into a ball.
Place in a greased bowl, cover and let rise for about 1-2 hours until almost doubled. During the rising time it is best to give the dough a letter-fold halfway, to get it stronger.

Shape into a tight ball and push that into some cornmeal or oats for decoration, place on baking parchment -seamside down- or place in a floured banneton (seam up), cover with greased plastic and let rise until doubled.

In the meantime preheat your oven to 220ºC, preferably with an ovenstone.

If you’ve used a banneton, turn the dough out onto a piece of parchment. Slash the dough and place it on the hot stone, pour some hot water in a metal container on the bottom of the oven that you’ve preheated too to create steam. Bake for 15 minutes.

Turn the temperature down to 200ºC (400ºF) and bake for another 10-15 minutes until brown and done.
Let the bread cool completely on a wire rack before slicing.

Was ik toch bijna vergeten een brood te bakken voor de Bread Baking Day, gelukkig nog net op tijd allemaal voor elkaar gekregen. Deze editie werd verzorgd door Swathi van "Zesty South Indian kitchen" en zij koos als thema "brood van graan". Huh, brood van graan? Zijn er ook andere broden dan? Maar goed er stonden verder geen aanwijzingen bij dan dat het brood van graan moet zijn, dus vrije keus in feite. Zouden de thema's misschien stilletjes aan op raken??

Hoe dan ook ik heb gekozen voor een brood met verschillende granen: haver, mais, tarwe en wilde rijst. En hoewel deze laatste officieel geen rijst is, maar een graszaad, kiep ik hem gemakshalve er even bij. (Hadden ze het maar geen rijst moeten noemen toch!?)

Haverbrood met wilde rijst
(1 brood)
(recept PRINTEN)
2 ½ tl droge gist
snuf suiker
60 g lauwwarm water
230 g lauwwarm (haver)melk
4 el maple siroop
2 el gesmolten boter, ongezouten
340-390 g sterke bloem
1 ½ tl zout
± 70 g gekookte wilde rijst
40 g maismeel
80 g havervlokken (niet voor instant havemout)

voor strooien en decoratie: wat maismeel, havervlokken en/of bloem

Doe alle ingrediënten (houd wat bloem achter) in een kom (van de standmixer) en meng het met de kneedhaak op stand 1. Als alles gemengd is, kneed je het deeg verder op stand twee tot het elastisch is. Voeg eventueel wat extra bloem toe indien nodig. Het deeg is nog licht plakkerig. Vorm het tot een bal.

Doe het deeg in een ingevette kom, dek af en laat 1 à 2 uur rijzen tot het bijna verdubbeld is. Vouw halverwege de rijstijd het deeg twee keer dubbel om het zo extra sterkte te geven. Vorm het dan tot een bal en duw dat in wat maismeel en/of havervlokken ter decoratie. Leg het deeg met de ‘vouw’ naar beneden op bakpapier (of met de ‘vouw’ naar boven in een bebloemde banneton/rijsmandje), dek af met plastic en laat rijzen tot verdubbeld.

Verwarm ondertussen de oven voor op 220ºC, liefst met ovensteen.

Als je een rijsmandje gebruikt hebt, keer je het deeg op een stuk bakpapier. Snijd het brood (bijv. kruisgewijs) in en schuif het in de oven (op de steen). Giet wat water in een metalen bakje op de bodem van de oven, dat je mee voorverwarmd hebt, om stoom te maken.

Bak het brood 15 minuten.
Verlaag de temperatuur naar 200ºC en bak nog 10-15 minuten tot het bruin en gaar is. Laat het brood voor het aansnijden eerst helemaal afkoelen op een rooster.

Nice one!! Ik heb mijn overgebleven rijst weggekieperd ipv in mijn brood... (had ook al brood weggekieperd deze week, te droog en te hard... vogeltjes zijn er blij mee hoop ik, ze zijn althans nog niet komen protesteren :-D
