Baked fruit

vlag engels/amer klein For "Sinterklaas" last december I got a fantastic book by Tessa Kiros: "Falling Cloudberries". I already have her book "12" about Italian cuisine a year round and I like that a lot. And because I'm "Sinterklaas" in this household, though without the beard, I thought I would be very happy when this book -wrapped and with a poem of course- would be my present... and I wás very (surprise).

I think it's not only a very pretty book, beautiful photo's and very colourful, I love the recipes too. Not too complicated and from the different area's Tessa Kiros lived in during her life: Finland, Italy, Greece, Cyprus, South Africa... which gives a lovely versatile selection of recipes. Lovely stories about her childhood and family.

Normally when I get a new cookbook I take my time in looking at each and every recipe and think if I would consider making it for sure, maybe or not. If that's a "yes for sure" I stick a bookmarker on the page. Would you believe.... I ran out of bookmarkers! A few recipes I've already tried. Sometimes the simplest things are best and this recipe of baked quinces is an example of that. As the quinces I used were quite big, it was almost to much for dessert. So if you have real large quinces you could make this recipe for 6 instead of 4. And maybe.. you never know... Sinterklaas will make me happy again with another of her books next year.


Baked Quinces
(serves 4)
Baked Quinces with brown sugar, cinnmon and walnuts (p.139)
(PRINT recipe)
2 TBsp raisins
2 TBsp brandy
2 quinces
2 TBsp walnuts, chopped
50 g soft brown sugar
1/2 tsp cinnamon
20 g butter

Preheat the oven to 350ºF (180ºC).
Soak the raisins in the brandy for a while.

Cut the quinces in half lengthwise, and core them. This can be done with a large melonball scoop (if you have a stirdy one!) or a knife, be careful cause the quince is tough. Leave the skin on, but cut a tine slice of the base so it doesn't fall over. Place them in an ovenproof dish. Divide the raisins into the nests and drizzle any left over brandy on top. Mix the walnuts, sugar, butter and cinnamon in a bowl and fill the quinces with this.

Pour some water (about 1 cup)in the base of the dish and cover with aluminium foil. Place the quinces in the oven and bake for about 2 hours (if your wuinces are really big, add half an hour. The quinces should be soft, but still holding its shape, it's done.

Check if there is still enough water in it halfway through cooking time. It should be less, but not get dry totally. This makes a wonderful sauce if the juices, sugars and waters cook like this.

Serve with some cream, whipped or clotted or brandy butter. Enjoy!

Vlag nl klein Met de gebakken peren zitten

Maar deze keer is dat wel fijn..... Ik kreeg voor Sinterklaas afgelopen december een fantastisch boek van Tessa Kiros: "Falling Cloudberries". Ik had het boek "12" van haar al, wat ik een erg leuk boek vind, dat draait om een jaar lang (12 maanden dus) koken in de Italiaanse keuken. En aangezien ik in dit huis dé Sinterklaas ben -zij het zonder baard- had ik bedacht dat ik wel eens heel blij zou zijn als ik dit boek -ingepakt met gedicht- van Sinterklaas zou krijgen... en dat was ook zo! (verrassing :D )

Ik vind het niet alleen een erg mooi boek met prachtige kleurrijke foto's, maar ik ben ook erg gecharmeerd van de recepten. Ze zijn goed te overzien en komen uit de verschillende windstreken waar Tessa gewoond heeft in haar leven: Finland, Italië, Griekenland, Cyprus en Zuid-Afrika... wat er voor zorgt dat het een gemelleerde receptenverzameling is geworden. Ook leuke anekdotes uit haar kindertijd en over haar familie.

Gewoonlijk blader en kijk ik elk recept door als ik een nieuw kookboek krijgt (koop) en probeer bij elk recept te bedenken of het iets is dat ik zeker niet, misschien of zeker weten zal maken. Bij de recepten met "zeker weten" plak ik dan een boekmarker, in de hoop dat ik het dan weer terug zal vinden. Geloof het of niet.... ik had gewoon geen plakkertjes genoeg! Een aantal recepten heb ik al uitgeprobeerd en zijn zeer goed bevallen. Soms zijn de simpele dingen het beste en dat geldt ook voor dit recept voor gebakken kweeperen. Ik had nogal grote kweeperen, zodat een helft bijna te veel was voor één persoon, dan zou dit recept wel voor 6 personen kunnen (als je de peer in de lengte in 3en weet te splitsen tenminste. Misschien dat Sinterklaas volgend jaar nog een boek van haar in mijn schoen weet te krijgen ;-)

Gebakken Kweeperen
(4 pers.)
Baked Quince -close
(recept PRINTEN)
2 el rozijnen
2 el brandy
2 kweeperen
2 el gehakte walnoten
50 g bruine basterdsuiker
1/2 tl kaneel
20 g boter

Verwarm de oven voor op 180ºC.
Laat de rozijnen weken in de brandy.

Snijd de kweeperen in de lengte doormidden en verwijder het klokhuis. Je kunt dit doen met een meloenboller, maar alleen als hij goed stevig is. Anders gebruik je een mesje, maar wees voorzichtig want een kweepeer is vrij hard. De schil laat je gewoon zitten, maar snijd aan de de bolle zijkant van de peerhelft een klein plakje af, zodat de peer stevig staat.

Zet de peren naast elkaar in een ovenschaal. Verdeel de rozijnen in de holtes van de peren en sprenkel de brandy erover. Maak een mengsel van de walnoten, suiker, boter en kaneel en vul daarmee de kweeperen ruim mee. Giet een kopje water onderin de schaal, dek af met alufolie en zet op een rooster in de oven.

Bak de peren ongeveer twee uur. Het perenvlees moet dan zacht zijn, maar niet uit elkaar vallen. Als je hele grote peerhelften gebruikt, moet je de peren misschien wat langer in de oven laten.

Controleer halverwege of er nog wat water in zit, het mag niet helemaal opdrogen. Giet zo nodig wat water bij. Het meeste zal verdampen en het restje water maakt met de suiker en kweepeersap een heerlijke stroperige saus.

Serveer warm met wat slagroom of mascarpone.

I have never tried quinces before, I have always wanted to taste them. I get really excited about new cookbooks too.. which leads me to buying them far too often....

Wish I had quinces, maybe I can use some of these very big apple/pear things I have.

Never tasted quinces and I'm not sure if you can buy them in Holland? Is there any other fruit they can replaced by?

You could use a cooking apple too, but that wouldn't have to be in the oven for 2 hours!

@ Marjoke, you can use a cooking apple (cook shorter!). Quinces are hard to come by here, but sometimes you're in luck, and I'm always on the look out for them!

@ Sivie, ich hatte noch welche aus November leztes Jahres... und fröhe mich schön auf der nächste Quitten Ernte!

@ Aranka, ik kon ze eerst niet krijgen en liep toen eind november tegen ze aan... nou ja zo iets. En omdat het zo lekker koud was in de schuur/bijkeuken, bleven ze héél mooi en kwam ik er nu pas toe de laatsten te gebruiken. Ik moet toch echt eens zoeken hoe ik een boom in ons mini achtertuintje kan krijgen!! Heb jij er één in de tuin?

@ sara, just start with the cantuccini recipe... it's the best recipe for cantuccini I ever tried!

Nee, nog niks in de achtertuin, maar wel in de planning voor het komende jaar. Nu eerst maar even uitzoeken wat de beste planttijd is. Waarschijnlijk nu.... :-)

Hallo Lien, Lekker recepten met kweeperen zeg! Omdat er zo weinig goede informatie over de kweepeer te vinden is ben ik zelf een site over kweeperen begonnen. Ik zoek ook nog extra recepten dus mocht je er nog meer weten dan hoor ik het graag!
