Koekje in je thee en thee in je koekje

Hoewel ik het niet op de Verkade site kon terugvinden, hebben deze koekenbakkers een poosje terug een koekje op de markt gebracht met de naam "Theemix". Omdat uit onderzoek kwam dat mensen graag hun koekjes in de thee dopen om te eten, dachten ze handig te zijn en de thee vast in het koekje te stoppen. In verschillende variaties, bijv. met groene thee en rooibos. Volgens mij gaat bij het soppen niet om de theesmaak, maar om het feit dat ze dan nat en zompig worden en Verkade slaat wat dat betreft de plank finaal mis. Ik heb zelf de variant rooibos geprobeerd, maar vond er niet veel anders van dan een redelijk lekker biscuitje.

Op internet vond ik een recept met thee in een koekje en ik kon het toch niet laten om het eens uit te proberen..en dat viel lang niet tegen. Je kunt de thee gebruiken die je het lekkerste vindt en ik heb een gearomatiseerde thee (Perzik Mango van Lipton) gebruikt die een heerlijk geurig koekje maakt. Ik zou er echter niet te wild mee soppen in de thee (liever helemaal niet), want het zijn brosse zandkoekjes die snel uit elkaar zouden vallen als je dat deed.

Zandkoekjes met thee
(± 34 koekjes)
230 g boter
135 g fijne kristalsuiker
ruim 1/2 tl vanille-extract
4 tl theeblaadjes (bijv. een fruitthee, earl grey of iets dergelijks)
280 g bloem
1/2 tl zout
1/2 ei (of alleen eiwit of eigeel)
35 g fijne kristalsuiker of rietsuiker

Roer de boter, suiker en vanille luchtig. Voeg de droge thee, bloem, zout toe en meng het tot het samenkomt. Vorm er snel 2 rollen van (ongeveer 5 cm in doorsnede) verpak ze in plastic folie en leg ze minstens 1 uur in de koelkast om op te stijven.

Verwarm de oven voor op 180ºC.

Haal dan het plastic eraf, smeer ze in met het ei, dat je licht klopt met 1 tl water en rol ze door de suiker. Snijd de rollen in plakjes van ongeveer 1 cm dik en leg ze op een bakplaat met bakpapier. Ze lopen niet veel uit, maar leg ze toch een paar centimeter uit elkaar.

Bak de koekjes tot ze goudbruin aan de randen worden, ongeveer 15-20 minuten. Laat ze op een rooster afkoelen.
TIP: je kunt het deeg ongeveer 1 maand bewaren in de vriezer. (wel eerst ondooien in de koelkast voor gebruik)

To dunk or not to dunk, that's the question

A famous cookie/chocolate manufacturer Verkade in Holland recently introduced a cookie named "Teamix". An inquiry made it clear that people like to dunk their cookies/biscuits in their teas over here. So they thought to be smart and saved us the trouble of dunking by putting the tealeaves in the cookies with different favours (green tea, rooibos). It seems to me that the dunking provides us with a wet cookie, that also gives a challenge to stick it in our mouths in time, and just tealeaves in a cookie just don't do that. I tried one version, but -though a normal nice nothing out of the ordinaire cookie- it never reminded me the least bit of a tea soaked cookie, which eventually ends on your lap. Still the idea was a good try.

Then I found this recipe on the Internet and I couldn't resist to try it. You can use whatever tea you like and I choose a flavoured tea (peach mango from Lipton) which made a very aromatic and good cookie. I just don't recommend dunking these in your tea or milk or whatever you're used to dunking in, cause these ar shortbread cookies and much to delicate to survive serious dunking.

Tea leaf shortbread cookies
(± 34 cookies)
1 cup (2 sticks) butter
2/3 cup very fine sugar
2/3 tsp vanilla-extract
4 tsp tea leaves (p.e. some kind of fruitthee, earl grey)
2 cups AP-flour
1/2 tsp salt
1/2 egg (or just an egg white or yolk)
4 TBsp fine (cane) sugar

Cream butter, sugar and vanilla together. Add dry tea, flour and salt, mix well. Roll in 2 loggs about 2 inches in diameter. Wrap the logs in plastci wrap and chill for at least one hour.

Preheat the oven to 350ºF.

Take of the plastic and brush with the egg, lightly beaten with 1 tsp of water. Now roll them in the sugar. Slice the dough in 1/3 inch thick cookies and place on baking sheets (with parchment paper). Bake for 15-20 minutes until the edges turn lightly golden. Cool on wire racks.

TIP: The dough will keep for about 1 month in the freezer.

Ik denk inderdaad niet dat Verkade een gat in de markt heeft gevonden. Heb ze nooit geproefd maar ja, ik koop eigenlijk nooit koekjes maar bak ze zelf. Met thee overigens nog nooit maar 't lijkt me wel lekker. Jouw thee koekjes zien er heerlijk uit!

How many times have you seen what somebody thought was a good idea and wondered why would they think that - you can just know some of their "good" ideas are good for nothing but trouble.
Your cookie on the other hand looks just excellent!

You know, it seems like a good idea, aromatic, depth of flavor but I keep imagining picking dry tealeaves from my lips...sputter.
They do look real nice and crumbly, love it that you can make the dough and freeze it.
