A secret recipe (una ricetta segreta)

This is going to be a long story.... This recipe has been on the blog-about-list for a long long time, but due to circumstances I just never came to it. So I'd better start right away.

When we visited Italy as a family for the first time (in 2005), we rented a part of a house from an italian couple: Claudio and Donatella. We had the most marvelous holiday there, we felt so at home. In my poor italian (certainly at that point) we could communicate and Donatella was so kind to drop by once in a while to chat with me, so I could also practise my Italian. Op august 15th - Assumption of the holy Virgin, a very important holiday in Italy - their whole family visited them to celebrate together. For that occasion Donatella came and brought us a plate with a few pieces of delicious pie, that was a real Lucchese speciality. Her aunt brought it with her for the celebration from her very own Pasticceria (bakery) in Lucca. I of course took the opportunity to ask about the recipe. But no, no, it was a secret recipe from the baker and there was not much change to get hold of it. She would try though..in the end it didn't happen, we said very warm goodbyes and we headed back to Holland with great memories of a wonderful time.

A year later we changed our normal routine that says "never visit the same spot twice" (as there is so much else to see) and we wrote to Donatella and Claudio if they would have us as their guest for the second time. Again we had a wonderful time, such lovely people and again we were there during the 15th of august and I took a shot to ask about the recipe of this wonderful Lucchese delicacy: la ricetta segreta(the secret recipe). Earlier that year I mailed them my
photo site link, so they were aware I mean business when it's about baking. This time her aunt gave green light and the recipe would follow soon... Hooray! But when we left there it was not there yet and I didn't want to ask about it again. But then a few weeks later there it came... the mystery recipe by email; Grazie Mille tutti e due!

This recipe requires 'bietola' (Swiss chard), but I just couldn't get hold of it anywhere in my neighbourhood. The smallest supermarket in Italy has it for sale, but it's not a common thing to eat overhere in Holland, so there was no way for me to bake it at that point. So a long story and still no pie!!

Though the kids would have loved to stay at Claudio and Donatella's for yet another year, in 2007 we went to visit the Maremma. In the supermarkets I spotted the chard everywhere and the last day I decided to take some home with us, so I'd be finally able to bake this pie! In a special cooling bag with several bottles of frozen water and the chard wrapped in moist kitchen towels, they travelled with us, 2 days and 1 night on the road, but they -though a bit bruised- made it very well. While the washing machine was busy, washing line full of clothes already, we still a bit dazzled from the long trip, I started to make the pie... finally. It was just as good as we remembered, we really loved it.

That was 2007. I thought it would be great to post about it, but as it is a secret recipe I had to ask permission. I had no idea of the secretness of it all. So I asked Donatella if I could post about it. She said it us just fine and that it would be good promotion for Lucca. Even without this pie I can recommend all to visit there, it's a beautiful town.

Still counting with me? That was last year right?! So were did the post go? As usual things came up, and when I finally had the time the season for swiss chard was as it end, so I decided to save it till next year. And in the nick of time I may add, because we're leaving for Italy tomorrow morning very early!
This recipe is really worth your while, not only because it's a speciality of Lucca, but because it is really really good. Please try to get a hold of swiss chard (that may be easier in some places than others). Some say you could exchange it with spinach, but I disagree in this case, it's just not as subtle.
And are you going on holidays to Lucca or in the neighbourhood... you don't want to miss it. It's an enchanting town with lovely piazza's, little streets with lovely shops, beautiful city walls were you can walk or cycle in the cooling shade of large trees and take your espresso or cappuccino with a lovely piece of Lucca-made torta di verdura!




Torta di Verdura (PRINT recipe)
Pasta Frolla
10.5 oz/300 g AP flour
5.3 oz/150 g cold butter, in cubes
5.3 oz/¾ cup/150 g sugar
2 eggs
grated zest of 1 lemon

In a foodprocessor (with pulses) or by hand or fork work he cold butter in the flour, eggs, zest and sugar. When the dough starts to form a dough (don't overwork it) quickly form into a ball, wrap in plastic and plac in the fridge.Now make the filling

Filling
14.1 oz/400 g swiss chard
2.8 oz/80 g butter
2.8 oz/80 g dry (white) breadcrumbs
some milk
5.3 oz/150 g (in salted water) cooked white rice
2 eggs
2.8 oz/80 g sugar
1.8 oz/50 g pinekernels
1.8 oz/50 g raisins
50 cc cognac
50 cc liquor like Strega or Sassolino
1 tsp mixed spice

Preheat the oven to 300ºF.

Take the leaves of the storks of the swiss chard, cut it in stripes and let it sautee in the melted butter with the lid on. When is has wilted take the lid off so some moisture can evaporate. It shouldn't be too wet. Soak the breadcrumbs in a little milk and squeeze out the excess.
Place the chard in a larg bowl, add the breadcrumbs, cookes rice, eggs, sugar, raisins, pinekernels, liqours and spices.

Roll out the dough (Pasta Frolla)and place it in a pie dish (± 8-9" Ø). Scoop the filling on the dough and spread out evenly. Is the filling too stiff, you could add another egg yolk or part of it.

Form the top rim of the dough in some sort of triangle shape* or roll out a thin strip of dough cut into points and place along the border, points facing to the centre.

Bake the pie in the centre of the oven for about 40 minutes firm and until golden. tester should come out clean. Let it cool before cutting into wedges.

* INFO: The pie is also called "Torta co' becchi" in and around Lucca. This means 'pie with beaks', it refers to the shape of the dough around the border. I couldn't remember how it looked exactly, so I made a modern version of it and cut traingle shaped formes to place around the border.
In and around Pisa a pie like this is baked -it's near by Lucca- but then called (if I remember correctly) "Torta co' bischeri". Bischeri are the pegs on a stringed instrument and also refers to the border shape. They are also available in a chocolate version, but I like this one best!

Een geheim recept

Ga er maar even voor zitten, want dit wordt een lang verhaal.....
Dit recept staat al héél lang op het programma, maar door omstandigheden kwam er het maar steeds niet van om het te plaatsen. Dus laat ik maar eens beginnen.

Toen wij voor de allereerste keer als gezin naar Italië gingen (dat was in 2005) hadden we een stuk van een huis gehuurd in de buurt van Lucca van een Italiaans echtpaar: Claudio en Donatella. We hadden er meteen een prettig gevoel en we hebben er een heerlijke tijd gehad. In mijn gebrekkige (zeker toen nog) Italiaans konden we ons verstaanbaar maken en Donatella kwam steeds even een praatje maken, zodat ik ook wat kon oefenen. Op 15 augustus, in Italië een belangrijke religieuze feestdag (Maria Hemelvaart), kwam bijna de hele familie bij hen op bezoek en daar werd natuurlijk ook gegeten. Donatella kwam ons toen een bord brengen met een paar stukken taart erop die een echte Lucchese specialiteit zijn; de "torta di verdura" in een chocolade variant en de gewone versie. Haar tante die ook kwam, had deze taarten uit haar eigen Pasticceria (banketbakkerij) in Lucca meegenomen. Je snapt dat ik meteen voorzichtig naar het recept informeerde. Maar aangezien het een geheim recept is van de bakker, achtte ze de kans niet groot dat ze het los wist te peuteren. Uiteindelijk kwam er het dat ook niet van en vertrokken we met een hartelijk afscheid.

Een jaar later weken we van ons principe af nooit twee keer naar dezelfde plek te gaan en schreven we naar Donatella en Claudio om daar onze vakantie te houden. Weer hadden een topvakantie, én viel 15 augustus tijdens ons verblijf, dus daar kwam alle familie langs en ik zag mijn kans schoon om nogmaals te informeren naar het recept van haar tante, naar la ricetta segreta. Ik had hen vanuit Nederland de link van mijn
foto-site gestuurd en ze waren dus wel overtuigd dat het serieus om bakkerszaken ging. Dit maal zei de tante toe het door te geven...hoera... Maar toen we vertrokken, had ik nog geen recept. Ik durfde er niet weer naar te vragen en liet het maar zo. Maar een paar weken later, kwam het recept via de mail binnen. Mille Grazie.

Voor het recept had ik snijbiet nodig, maar ik kon dat bij mij in de buurt nergens krijgen en kon ik het nog niet bakken. In Italië koop je dat gewoon in de supermarkt, maar hier heb je in het goede seizoen meer kans bij de biowinkels. Dus nu al een lang verhaal en nog geen taart!!

In 2007 gingen we naar een ander stuk van Toscane, hoewel de kinderen heel graag weer naar Claudio en Donatella zouden gaan, en ook dat was een fijne vakantie. Ik zag in de supermarkten natuurlijk wel die 'bietola' (snijbiet) liggen en besloot op de laatste dag 2 bossen mee te nemen naar Nederland. In een koeltas met bevroren waterflessen erin, de snijbiet in vochtig keukenpapier gewikkeld.... twee dagen en een nacht onderweg, maar ze kwamen goed aan, wel wat geknakt hier en daar maar toch... prima te gebruiken. Dus terwijl de wassen draaiden, de waslijn volhing en wij nog enigszins uit het ritme waren, ben ik aan het recept begonnen.... eindelijk dan.
Het smaakte net zo lekker als van de bakker in Lucca, wij vonden hem echt overheerlijk.

2007; september al ondertussen. Het leek me wel een leuk idee om het recept op mijn blog te zetten, maar moest daar natuurlijk wel toestemming voor hebben. Ik had geen idee hoe streng dat geheim bewaard moest blijven.
Dus mailde ik naar Donatella om dat te vragen. Ik kreeg groen licht, ze zei dat het een goede reclame voor Lucca was. Nou is dat al een stadje om te zoenen, maar met zo'n stukje taart op een terrasje met een cappuccino of espresso... misschien nog beter.

Goed dus dat was 2007, waarom kwam dat stukje er dan niet??? Zoals gewoonlijk komt er van alles tussen en voor ik wist was het al helemaal geen seizoen meer om nog ergens snijbiet te vinden. Ondertussen was het al bijna oktober en ik besloot het te bewaren voor het goede seizoen. Dus vandaar dat ik er nu mee kom. En net op tijd mag ik wel zeggen, want morgenochtend vroeg vertrekken we alweer naar Italië. Dit recept is echt de moeite waard (ook al zeg ik het zelf :)) om eens te maken. Probeer dan wel aan snijbiet te komen, bezoek de biowinkel, biokramen op de markt etc. Hoewel gezegd wordt dat je het goed kunt vervangen met spinazie, ben ik het daar niet mee eens; spinazie smaakt toch anders, en in dit gerecht minder delicaat. Ga je op vakantie naar Italië en kom je in de buurt van Lucca, probeer dan eens zo'n stukje taart
* te kopen en te proeven.


Torta di Verdura (
recept printen)
Pasta Frolla
300 g bloem
150 g koude boter, in blokjes
150 g suiker
2 eieren
geraspte schil van 1 citroen

Werk de blokjes boter door de bloem, eieren, citroenrasp en suiker (met de hand, keukenmachine of vork). Tot je een deeg krijgt, doe dit zo snel mogelijk, zonder te veel te kneden, dan wordt de bodem taai. Vorm een bal, verpak het in plastic en leg in de koelkast. Maak nu de vulling.

Vulling400 g snijbiet
80 g boter
80 g droge (witte) broodkruimels
een scheut melk
150 g (in gezouten water) gekookte witte rijst
2 eieren
80 g suiker
50 g pijnboompitten
50 g rozijnen
50 cc cognac
50 cc likeur zoals Strega of Sassolino
1 tl gemengde koekkruiden

Verwarm de oven voor op 150ºC.

Haal het blad van de snijbiet, snijd het fijn en laat het in 80 g gesmolten boter stoven met de deksel dicht. Als het geslonken is, laat je het nog doorgaren zonder deksel zodat het vocht kan verdampen, het mag niet te nat zijn. Week de broodkruimels in een scheutje lauwe melk en knijp het wat uit.

Doe de gestoofde snijbiet in een schaal en voeg het broodmengsel erbij, samen met de gekookte rijst, eieren, suiker, rozijnen, pijnboompitten, de likeuren en kruiden.

Rol het deeg (Pasta Frolla) voor de bodem uit en bekleed er een quiche of taartvorm mee (± 22 cm Ø). Verdeel de vulling over de bodem. Is de vulling te stijf, kan je nog een eidooier toevoegen.

Maak op de bovenste rand iets van punten*, hetzij met een losse reep deeg waar je punten in snijdt (zoals ik dat heb gedaan) of leg een rolletje deeg op de bovenste rand van de zijkanten en maak daar met je vingers punten van (met de punten naar het midden gericht).

Bak de taart in het midden van de oven ongeveer 40 minuten. De taart moet nu stevig zijn en een teststokje moet er droog uitkomen. Laat de taart afkoelen voor je hem in punten snijdt.

* INFO: De taart wordt naast "Torta di Verdura" (Taart van groente) ook wel "Torta co' becchi" genoemd in en rond Lucca. Wat 'taart met snavels' betekent en dat verwijst naar de vorm van de deegrand. Ik kon me niet precies herinneren hoe die rand eruit zag en heb daar een moderne versie van gemaakt en de punten in driehoekig gesneden.
In en rond Pisa wordt een soortgelijke taart gebakken -het ligt er tenslotte niet ver vanaf- maar dan wordt -als ik goed ben ingelicht- de taart "Torta co' bischeri" genoemd. Bischeri zijn een schroeven van een snaarinstrument (om de snaar aan te spannen) en verwijst ook naar de randvorm. Ze zijn er ook in een chocolade versie. Die was ook lekker maar ik vond deze nóg lekkerder.

De taart ziet er heerlijk uit, Lien!

Toevallig vandaag voor het eerst snijbiet klaargemaakt. Van mijn schoonvader kreeg ik vanmorgen bijna een kilo vers van de tuin en heb daar vanmiddag een simpele creme van gemaakt.

Snijbiet heeft veel weg van spinazie. Zou je voor deze taart ook spinazie kunnen gebruiken?

Wat een leuk verhaal! De taart ziet er ook lekker uit, ben benieuwd hoe het smaakt, heb nog nooit snijniet gegeten!

Lien as soon as there's a break here and I find swiss chard, I'm going to make this one. We have stayed in Lucca! And yes it is the most delightful place but staying with your friends would make it super special and this recipe and story would make it awesome.
We had one of our most memorable meals there ever!!

Een hele speciale taart, hij doet me een beetje denken aan een taart uit een plaatsje vlak bij Split (Kroatie). Die taart is gevuld met spinazie. Heb hem alleen van horen zeggen dus nooit geproefd.
Hij ziet er prachtig uit met die driehoekjes trouwens.

I brought Swiss Chard seeds back from the US to plant this year... but, no garden. Next year, though, I'll plant it and make this - sounds wonderful!

ik heb ook een snijbiettaart gemaakt, maar wel héél anders omdat ik de helft van de ingredienten miste en ze heb vervangen door totaal iets anders. Maar lekker was ie!

Here in Brasil we are also accostumed to do the "Torta dei becchi". It is delicious. And we do at St. Lazzaro´s - 15 days before Easter. This year March 29.

Italians are so weird about sharing recipes, not sure why. One of my best friends in Venice is adamant about sharing, no! is her answer. The father of a friend of mine works in a restaurant, and is famous for his zabaglione, but will never share the recipe, he'd rather make it for his daughter anytime she needs it but will not tell her how to make it.

I beg to differ.
