Appeldag

Het is vandaag appeldag. Tja dat wist ik ook nog maar net. Ik vind het altijd leuk om met een event mee te doen, maar kom er meestal te laat achter. Zo was ik vanmiddag aan het rondneuzen en kwam ik ineens deze appeldag tegen. Het wordt deze keer verzorgd door 1 x umrühren bitte. Het is altijd erg leuk om te zien welke creaties er gemaakt worden, de round-up is over ongeveer een week. Ik zou net een recept intikken van een (aard)appeltaartje, dus deze keer kwam dat goed uit.
Het is een klein appeltaartje, waar het deeg aardappels bevat. Lekker sappig en weer eens wat anders (en een smakelijke manier om van die aardappel af te komen die sinds gisteren in de koelkast staat te wachten).

Aard-Appeltaartje
(± 6 pers)
225 g aardappels, gekookt
115 g bloem
75 g suiker
1/2 tl bakpoeder
snufje zout
1/2 tl kaneelpoeder
1 - 2 grote appels
2 el citroensap
1 ei, geklutst
3 el geschaafde amandelen
2 el honing

Kook de aardappels, giet het water af en prak/stamp ze. Laat ze goed uitdampen (eventueel nog even op het fornuis, terwijl je blijft roeren) zodat ze mooi droog zijn.
Verwarm ondertussen de oven voor op 180ºC. Schil de appels, verwijder het klokhuis en snijd ze in dunne plakjes, besprenkel met wat citroensap tegen verkleuren.

Meng de aardappel met 50 gr suiker, bloem, bakpoeder en zout en vorm het tot een homogeen deeg. Deel het deeg in twee delen en rol die beide uit tussen twee lagen huishoudfolie tot 2 ronde schijven van resp. ongeveer 20 en 24 cm in doorsnede.

Leg 1 cirkel op bakpapier op een bakplaat en verdeel hierop de appelschijfjes. Laat van de buitenrand ongeveer 3 cm vrij en stapel de schijfjes een beetje op elkaar.
Strooi de resterende suiker (25 g) en de kaneel erover.
Bestrijk de rand met geklutst ei en leg de grootste cirkel deeg er boven op, druk aan bij de randen en vorm met de vingers een soort golfpatroon langs de rand...dat staat wat leuker. Bestrijk de bovenkant met geklutst ei en bestrooi met de geschaafde amandelen.

Bak in de oven ongeveer 30 minuten of tot goudbruin. Haal dan het taartje uit de oven en verdeel er 2 eetl. honing over. Eet het lauwwarm... een fijne appeldag!

Apple day

I really like to participate to blog-events, and there are so many nice ones. But I somehow always seem to discover too late that there is something happening. I know now about DMBLGiT, a food-photo event once a month (this month hosted by the lovely South African lady Jeanne from Cooksister). So I send a picture in every month and it's great to see all those fantastic pictures at the gallery. I've also learned to watch 'Is my blog burning' where events are announced. But I seem to miss them most of the times (or just doesn't come round to it). This afternoon I discovered that it's Apple day today! Did you know that?? The host is Zorra from "1x umrühren bitte". I was just about to blog about a little apple/potato pie that I made, so this was the clue to speed up my post and be able to participate....so here it is:

Potato Apple Pie
(6 pieces)

225 g potatoes, boiled
115 g all-purpose flour
1/2 tsp baking powder
1/2 tsp cinnamon, ground
1 - 2 large apples
2 TBsp lemonjuice
1 egg, beaten
3 TBsp almond shavings
2 TBsp clear honey

Boil the potatoes, pour off the water and mash them. Let them steam to get a little drier, you can also return them to the stove and (while stirring) let them steam on a low heat.
In the meantime preheat the oven to 360ºF. Peel, core and slice the apples thinly and sprinkle with a little lemon juice to prevent discolouring.

Mix the potato mash with 50 g sugar, flour, baking powder and salt and mix it to a (soft) dough. Divide in two and roll out -between 2 layers of clingfilm- into two disks, one about 8" and the other about 10" in
Cover a bakingsheet with baking parchment and place the smaller circle on it. Put the appleslices on it in a pile, leaving the edge free (about 1"), sprinkle the remaining sugar (25 g) and cinnamon over it. Brush with eggwash and place the other disk on top. Seal the edge and form into a waving form (just for the eye). Brush the top with eggwash and sprinkle with almonds.

Bake in the oven for about 30 minutes or until golden brown. take it out of the oven and drizzle with the honey. Enjoy it still warm.

Deeg gemaakt van aardappel ?!! Jammer dat ik net dat restje uit de koelkast aan de kippen heb gevoerd...;-(
