Schoolreis-broodjes

Het is alweer juni en dus tijd voor schoolreisjes. En natuurlijk krijgen de kinderen dan een lunchpakketje mee. Niet met gewone boterhammen, maar met feestelijke bolletjes. En het makkelijkste is dan een bolletje met ingebouwd beleg. Dat is niet alleen makkelijk voor de kinderen, maar ook voor degene die de bolletjes moet smeren 's morgens (ik dus). Daarom bak ik voor zulke gelegenheden meestal iets van vruchtenbolletjes, en deze keer zijn het appel-rozijnenbroodjes geworden. Mét spijs of zonder.

Appel-rozijnenbolletjes
(12-14 stuks)
2 tl droge gist
330 ml lauw water
95 g gerstemeel
95 g volkoren tarwemeel
± 350 g broodbloem
1 tl kaneel
1/2 tl speculaaskruiden
3 el suiker
60 g gedroogde appeltjes, in stukjes
150 g rozijnen
30 g boter, kamertemperatuur

200 g amandelspijs (optioneel)
1 ei (voor het aanmaken van de spijs en bestrijken van de broodjes)
topping (optioneel) geschaafde amandelen en/of grove kaneelsuiker

In de broodbakmachine: Je kunt dit deeg prima maken met de bbm op het deeg/dough-programma. Alle ingrediënten (behalve spijs, ei en topping) in de bbm laten kneden, de rozijnen en stukjes appel toevoegen na het piepsignaal. Als het programma afgelopen is (incl 1e rijs dus) verder gaan met het vormen.

Met de hand of mixer: Kneed van alle ingredienten(behalve spijs, ei en topping) en glad deeg. Je kunt de rozijnen en appel er later doorkneden, maar ik vind het zelf makkelijker om dat meteen te doen. Als de rozijnen niet voorgeweekt zijn, houden ze vrij goed hun vorm en worden ze niet stukgekneed. Vorm een bol en leg dit in een ingevette kom die je afdekt met plastic. Laat dit ongeveer 1 uur rijzen tot het verdubbeld is.

Vormen: Verdeel het deeg nu in 12 tot 14 gelijke stukjes en vorm er bolletjes van. Als je er spijs in wil doen, maak de spijs dan aan met een half ei. Druk de bolletjes plat en leg er een kleine rolletje spijs is, vouw het deeg erom en knijp de naden goed dicht. Leg de bolletjes op een bakplaat met bakpapier en laat ze rijzen onder ingevet plastic, tot ze ongeveer 2x zo groot zijn.
Verwarm ondertussen de oven voor op 220ºC.
Meng de andere helft van het ei en 1 el koud water en bestrijk hiermee de bolletjes en/of puntjes. Bestrooi ze dan met geschaafde amandelen of grove kaneelsuiker.

Bakken in de oven ongeveer 15-18 minuten.
Laat ze broodjes daarna afkoelen op een rooster.

On-the-road Rolls

It's already june...times goes by so fast. This is the month where most schools have their annual school outings. Next week our kids will go. Always a very exciting day. And when they have to bring their own lunch with them, of course it has to be festive as well. So no normal sandwiches, but sweet rolls with everything in them. So there's no need to make them ready in the morning with melting butter in a hot bus. So this year I made some apple-raisin rolls.

Apple-raisin rolls
(yield 12-14 rolls)

2 tsp dry active yeast
1 1/3 cup tepid water
3/4 cup barley flour
3/4 cup whole wheat flour
± 2 1/2 cup bread flour
1 tsp cinnamon
1/2 tsp applespice
3 TBsp sugar
3/4 cup dried apple pieces
1 cup raisins
2 TBsp butter, room temp.

about 1 cup almondpaste (optional)
1 egg (1/2 for mixing with the almondpaste and 1/2 for topping the rolls)
topping (optional) almond shavings and/or course cinnamon sugar

In the breadmachine
: You can easily prepare the dough in the machine on the dough cycle. Put all the ingredients (except almondpaste, egg and topping) in the machine, add the raisins and applepieces when you hear the beep. When the cycle is ready the dough has had it's first rise, continue with shaping.

By hand or mixer: Knead all the ingredients (except almond paste, egg and toppings) tot a smooth dough. you can add the raisins and applepieces later, but i prefer to mix them in straight away. If you don't soak your raisins, they will hold their shape quite well. Shape into a ball and let it rise in a greased bowl covered with plastic for about 1 hour until doubled.

Shaping: Divide the dough in 12 to 14 equal pieces and form them into balls.
When you want to fill them with almond paste, mix your almong past with half of the egg. Flatten the balls and put a little roll of almond paste in the middle, form the dogh into a roll and press the seal. Without the almond paste just leave them round. Place the rolls on a baking sheet with baking parchment, cover with plastic and let them rise again until almost doubled.
Preheat the oven to 430ºF.

Baking: Mix the remaining half of the egg with 1 Tbsp of cold water and brush the rolls just before baking, sprinkle with almondshavings or cinnamon sugar. Bake in the oven for about 15-18 minutes, or until golden. Transfer them to a wire rack and leave to cool.

Ik zit nl. al maaaaanden met een zakje gedroogde appeltjes en wist maar niet wat ik er mee zou beginnen. Deze broodjes zijn de oplossing. Doe ik nog deze week!

Met recht feestelijke broodjes! Ik denk dat er hier wel iemand is die ze graag in zijn lunchtrommel zou willen hebben ;-)

Lien, het heeft even geduurd voordat ik ze heb gebakken, maar moet toch even schrijven dat ze verslavend lekker zijn. Binnen een dag was alles op! Ik heb alles zelfs alweer in huis om ze morgen nog een keer te maken!
