Een hele snelle plaatkoek

De laatste tijd kom ik wat minder toe aan bakken, wat eigenlijk slecht uitkomt aangezien ik een aantal leuke (hoop ik) nieuwe en/of nieuwe tweedehandse boeken heb binnengekregen waar ik graag eens mee aan de slag wil. Ook de tijd en puf om een verhaal op dit blog te typen lijkt een stuk minder, hoewel de foto's voor diverse onderwerpen al in de startblokken staan. Het zal wel met het lekkere weer te maken hebben en de drukte in deze periode met verjaardagen en andere activiteiten. Maar -daar kom ik weer met mijn plaatkoek- gelukkig zijn er ook nog snelle recepten zoals deze plaatkoek. Iets met appels is eigenlijk altijd lekker vind ik en deze is dan ook zeker geslaagd.

Appelmoes/citroen-kruimelkoek
(± 20 stukken)
Deeg:
500 g bloem
2 (afgestreken) tl bakpoeder
200 g fijne suiker
1,5 tl vanillesuiker
1 (afgestreken) tl kaneel
1 ei
250 g boter (of margarine), in stukjes
100 g geschaafde amandelen (voor de bovenlaag)

Vulling:
2 potjes appelmoes (± 720 g)
220 g citroenjam of lemoncurd
100 g rozijnen (optioneel)

Verwarm de oven voor op180ºC en bekleed een bakplaat met een kleine opstaande rand (± 30 x 40 cm)met bakpapier (of een hele grote ovenschaal).

Doe alle ingrediënten voor het deeg (behalve de geschaafde amandelen) in een kom en maak het tot een kruimeldeeg. dit kan in de mixer, keukenmachine of met de hand (maar dat is dan wel minder snel natuurlijk). Verdeel de helft van dit deeg gelijkmatig over de bodem van de bakplaat/ovenschaal en druk het stevig aan.

Meng de appelmoes, citroenjam en rozijnen en verdeel deze over de bodem.
Roer de geschaafde amandelen door de resterende helft van het kruimelmengsel en strooi dit over de appel-citroenvulling.


Bak de plaatkoek ongeveer 50 minuten in de oven, laat het daarna afkoelen op een rooster (wel op de plaat laten liggen) voor het aan te snijden.
Nou dat was toch snel niet?! Eet smakelijk.

TIP: Als je geen citroenjam of lemoncurd hebt of er niet van houdt, dan kan je die ook vervangen door appelmoes.
TIP: Vind je het nou wat veel...de stukken zijn ook prima in te vriezen. Verpakt ze in plastic diepvriesdozen met plastic of bakpapier ertussen.

A quick traybake

I don't know what it is; the nice weather, all the birthdays and busy schoolactivities or hanging around too much on other blogs, but I seem to have less time on my hands to blog as frequent as I once did. I have photo's stand by, but all those words don't seem to want to come out. Well here's a recipe that, although the typing aquires about the same time, it's very quick to make. Yes I know, there I go again with a traybake, but this one is really quick. With apples, but no peeling, with a bottomlayer and a toplayer, but only one dough. Maybe it's worth a try?! (of course it is!)
Apple-lemon crumble traybake
(about 20 pieces, depending on the size you cut them)
dough:
3 1/2 cup all-purpose flour
2 tsp baking powder
1 cup fine sugar

1 1/2 tsp vanilla sugar (or extract)
1 tsp cinnamonpowder
2 sticks + 1 tbsp butter (or margarine) , in small pieces
1 egg
1 heaped cup sliced almond (for the dough top layer)

Filling:
2 jars applesauce (sweetened or unsweetened)
1/2 jar lemonmarmelade or lemoncurd
1 cup raisins (optional, but very good)

Preheat the oven to 360ºF. Line a baking dish (± 12" x 15") with parchment paper.

Combine all the dough ingredients (except the almonds) and make them into a crumble. You can do this by hand (or with a pastry cutter), in your standmixer or processor.

Put half of this mixture in the lined dish, spread it out evenly and press down.

Mix the filling ingredients together and pour it on top of the bottom layer. Even out the surface.

Stir the almondsflakes in the left over crumble and sprinkle this over the top of the apple-lemon filling.

Bake in the oven on the middle shelf for about 50 minutes. Let it cool on a rack (leave the bake in the tray) and cut into pieces.
Well that was quick wasn't it! Enjoy!

TIP: if you don't have or like lemonmarmelade or curd, you can subsitute for all applesauce.
TIP: It freezes quite well; Cut in pieces and place in a freezercontainer with bakingparchment or plastic between the pieces.

bedoel je 2 potten van allebei 720 gram of twee die samen 720 gram zijn?Dus 1440 of 720 gram appelmoes?

Hallo 'anoniem' (met naam werkt wat leuker toch?), nee dat is het totaal. Gewone standaardpotjes appelmoes zijn 360 g per stuk.
Dus 720 g in totaal.

Bedankt voor dit recept,ik ben op zoek naar bakplaat recepten,voor het zorg tehuis waar ik werk,en deze ga ik zeker proberen!
