Italiaanse 'wrap'

Ook Italië heeft haar 'wrap', je weet wel zo'n tortilla-achtige platte koek waar je bijv. gekruid vlees e.d. in kan doen. Er zijn verschillende soorten, dikkere (Piadina Rustica) die je dubbelvouwt met vulling ertussen en ook wat dunnere die je beter kunt oprollen. Ik heb de Piadina Romagnola gemaakt. Traditioneel wordt dit gemaakt met reuzel, maar gebruik je dit liever niet, kan je het vervangen door shortening (of margarine). De vulling maak je naar eigen idee. Ik vind het ideaal om allerlei restjes op te maken en eet het liefst gekruid vlees (kalkoen of kip) met dungesneden komkommer, tomaat en wortel. Met een lekker knoflook-yoghurt sausje. Je kunt er ook shoarmavlees in doen of gewoon alleen gekruide en gebakken groente (courgettenblokjes, worteljulienne e.d.)


Piadina Romagnola
(± 8 stuks)
500 g bloem
150 g reuzel of shortening
1/2 tl zout
± 170 ml water

Kneed de ingrediënten tot een soepel deeg en verdeel het in 8 gelijke stukken. Rol de stukjes uit tot platte schijven (zo groot als de pan) en prik er met een vork wat gaatjes in. Verwarm ondertussen een zware koekenpan op het fornuis en bak de piadine aan beide kanten tot ze goudbruine vlekken hebben. Vul ze met een vulling naar keuze.

Als je de piadine van te voren wil bakken, dan kun je ze het beste opwarmen in de magnetron. Maak ze licht vochtig met water en dek af met magnetronfolie. Anders worden ze te droog en breken ze als je ze wilt oprollen.
Vul ze naar eigen smaak en eet smakelijk!

Italian 'wrap'
Yes in Italy they can wrap as well. There are various kinds of these 'wraps'. The one I've made is called Piadina Romagnola (from the region Emilia-Romagna). There is also a Piadina Rustica, a thicker version that is folded just once and can't be rolled up. Traditionally the piadina Romagnola is made with lard. If you'd rather not use that you can use shortening instead.
Fillings of course are very personal. I (we) love wraps/piadine because everyone can make it to their own liking. Especially with picky children (we have 2) it comes in handy. It's also a great way of using certain leftovers. And you can make vegetarian ones too,with grilled zucchini or eggplant.
Piadina Romagnola
(yield 8)
3,5 cups all-purpose flour
150 g lard (or shortening)
1/2 tsp zout
about 2/3 cup water
Knead all ingredients to a smooth and souple dough. Divide in 8 equal pieces and roll out the dough very thin in a round approximately as large as your (largest and heaviest) fryingpan and pierce the rolled out piadine with a fork.
Preheat the pan and bake the piadine one by one on both sides untill they have golden brown spots all over. Now you can fill them, roll them and eat them!!!
TIP: If you make the piadine in advance. You can reheat them in the microwave. Wet them lightly and cover with another plate upside down on top of them of some microwave clingfilm. If you reheat them in a pan or oven or don't wet them...they'll dry out quickly and you won't be able to roll them, they'll just break.

Wow! Those look exactly as Indian Chapati bread or Mexican Flour Tortilla, the process is the same especially for Mexiacn flour tortillas. even the same ingredients.

They look so yummy! You did a good job with them.

Ik heb hem gisteravond gemaakt maar als ik hem wil oprollen na het bakken dan barst hij open! Hij smaakt wel heerlijk!

Fijn dat hij lekker was, maar jammer natuurlijk dat hij openscheurde, dat eet zo lastig. Hij moet zo dun mogelijk worden uitgerold dat scheelt. Je kunt ook de piadina vochtig maken en dan in de magnetron opwarmen zoals in het stukje staat, ook als je ze meteen wil eten. Door het vocht worden ze dan weer wat soepeler en rollen ze makkelijker.
